Make Ahead Stuffing image

This is my favorite (and wildly popular) bread stuffing recipe updated with make-ahead instructions. It's a great way to get a jump-start on the holiday!

1/2 cup butter (plus more for buttering baking dish (1 stick))
1 large yellow onion (chopped)
4 celery ribs (sliced lengthwise and chopped)
3 eggs
2 cups chicken broth ((see note 1))
Salt and freshly ground black pepper
1/2 cup fresh parsley (minced (see note 2))
1 teaspoon fresh sage (minced, or 1/2 teaspoon dried)
1 teaspoon fresh thyme (minced, or 1/2 teaspoon dried)
1 teaspoon fresh marjoram (minced, or 1/2 teaspoon dried)
1 large loaf French bread (about 1 pound, cut into 1/2" cubes and dried overnight on counter (see note 3))

Steps:

  • Coat a 9" by 13" baking dish with butter. In a large skillet over medium high heat, melt butter until foaming. Add onion and celery and sauté until translucent, about 7 to 8 minutes.
  • Meanwhile, whisk eggs in large bowl. Stir in broth, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • To skillet, add parsley, sage, thyme, and marjoram and stir until fragrant, about 30 seconds. Transfer to bowl with eggs and mix well.
  • Add bread cubes and toss to combine. Transfer to buttered baking dish and cover with foil. Refrigerate until ready to bake, or freeze if you're planning to bake it farther in advance than the next day.
  • When ready to bake, preheat oven to 400 degrees. Keep stuffing tightly covered with foil and bake until mostly heated through, about 25 minutes. Remove foil and bake until crispy edges form, about 10 to 20 minutes longer.

This is a recipe that I have used for years, but with my own little tweaks added to it. Loved by all every time we make it. We usually double this recipe.

1 cup butter
¾ cup chopped onion
1 ½ cups chopped celery with leaves
9 cups soft bread cubes
2 teaspoons salt
1 teaspoon dried sage leaves
1 teaspoon dried thyme leaves
1 teaspoon poultry seasoning, or to taste
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium-high heat until; saute onion and celery in hot butter until onion is soft, 5 to 10 minutes.
  • Put bread cubes in a large bowl. Season bread with salt, sage, thyme, poultry seasoning, and black pepper. Add onion mixture to bread cubes; stir. Pour bread mixture into a large casserole dish and cover the dish with aluminum foil.
  • Bake in the preheated oven until golden and hot, about 1 hour.

EASY SAUSAGE STUFFING (MAKE AHEAD)

It wouldn't be the holidays without it! My mom's recipe and an easy holiday tradition using packaged stuffing mix. The first steps can be done ahead of time and refrigerated.

4 celery ribs
1 white onion
1/2 cup butter
1 lb bulk pork sausage
1 (16 ounce) package crumb seasoned stuffing mix, like pepperidge farms
1/4 teaspoon sage, no more
1 cup chicken broth

Steps:

  • Prepare a small dice of celery and onion, and saute with butter until soft.
  • Remove from pan and reserve. Add crumbled sausage to pan and cook through.
  • Drain sausage on paper towels and combine with celery mixture. This can now be refrigerated until you are ready to stuff the turkey.
  • When you are ready to stuff the turkey combine celery mixture, sausage, stuffing mix and sage in a large bowl.
  • Add chicken broth a little at a time just until stuffing is moist, not mushy or runny.
  • Rinse turkey and empty the cavity. Place turkey in roasting pan.
  • Fill the body cavity with stuffing mixture. Also fill the cavity at the neck under the skin with stuffing. Pat any additional stuffing between the turkey legs. Prepare turkey as desired.
  • To cook in a casserole dish instead of stuffing the turkey, place stuffing mixture in a greased casserole dish and bake according to package directions. If stuffing is drying out dot with butter and add small amounts of broth to moisten.

The gravy and stuffing are infused with an intensely flavorful turkey stock made from the liquid in which the breast is poached." Sounds like a lot of work, but... oh... yum... what a recipe! 4 quarts water
1 cup carrot, slices (2 inch thick)
1/2 cup celery, slices (1 inch thick)
1 teaspoon dried thyme
1/4 teaspoon black pepper
3 garlic cloves
3 bay leaves
2 tomatoes, quartered
1 onion, quartered
1/2 lemon
1 whole turkey breast, skinned (6-pound)
1 teaspoon olive oil
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 cup butter (in a stick, not a tub) or 1/4 cup margarine (in a stick, not a tub)
1 cup diced onion
1 cup diced celery
16 cups cubed stale bread (about 1 1/2 pounds, cubes should be 1 inch)
2 teaspoons poultry seasoning
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried tarragon
1/2 teaspoon dried rubbed sage
1/4 teaspoon black pepper
1/4 cup butter (in a stick, not a tub) or 1/4 cup margarine (in a stick, not a tub)
1/3 cup all-purpose flour

Steps:

  • To prepare stock, combine first 10 ingredients in a large stockpot. Bring to a boil; add turkey breast. Return to a boil; reduce heat, and simmer for 1 1/2 hours or until turkey breast reaches 170° (use an instant-read thermometer).
  • Carefully remove the turkey breast from stock. Cover the turkey breast, and refrigerate. Strain stock through a colander into a large bowl; discard solids, and return stock to pot. Reduce heat, and continue to simmer stock until reduced to 2 quarts (about 1 1/2 hours). Cover and chill stock for 8 hours. Skim solidified fat from surface of stock, if necessary.
  • Preheat oven to 250°.
  • To prepare turkey, rub poached turkey breast with oil. Sprinkle with 1/2 teaspoon thyme, 1/4 teaspoon salt, 1/4 teaspoon garlic powder, and 1/4 teaspoon pepper. Wrap the turkey in heavy-duty plastic wrap and foil. (Double-wrapping in plastic and foil helps retain moisture when reheating.) Bake at 250° for 2 hours or until thoroughly heated.
  • To prepare the stuffing, melt 1/4 cup butter in a large Dutch oven over medium-high heat. Add the diced onion and diced celery; sauté 3 minutes. Stir in bread cubes and the next 7 ingredients (bread cubes through 1/4 teaspoon pepper). Stir in 2 1/2 cups turkey stock. Place in a 13 x 9-inch baking dish. Bake simultaneously with turkey at 250° for 1 hour and 55 minutes.
  • While the turkey and stuffing cook, prepare gravy. Melt 1/4 cup butter in a large saucepan over medium heat. Stir in flour; reduce heat, and cook 15 minutes or until lightly browned. Gradually add reserved 5 1/2 cups turkey stock, stirring with a whisk until blended. Bring to a boil; reduce heat, and simmer until reduced to 3 cups (about 2 hours).
  • Uncover turkey; remove turkey breast halves from bone. Slice turkey, and serve with stuffing and gravy.
