PUFFED WHEAT TREATS
A delicious snack similar in preparation and style to Rice Krispie Squares, but tastes nothing like them. Although, they taste nothing like them.

Steps:
- Boil butter, brown sugar, molasses, and corn syrup for 5 minutes.
- Add vanilla.
- Prepare puffed wheat in a large bowl. Butter a 12x9 pan.
- Add boiling syrup to puffed wheat and stir well.
- Quickly press mix into baking dish and press down with the spoon.
- Cool, cut, and enjoy!
A WHEAT KRISPIES TREAT
Basically ooey-gooey Rice Krispies treats but using puffed wheat. Recipe has been adapted to be much lower in fat (you could probably do the same with Rice Krispies). Everything is done in the microwave. A great, quick dessert to make with the kids. It looks like there are a lot of steps, but that's just because I went into lots of details. Plan for at least 30 minutes of cooling time before serving.

Steps:
- Measure out cereal; set aside.
- Line a 9x9 baking dish with wax paper or with greased plastic wrap. Prepare a second sheet for the top. Grease a wooden spoon.
- In a LARGE* microwavable bowl, melt butter - about 30 seconds.
- Turn the bowl in order to coat sides with melted butter.
- Add milk and vanilla; return to the microwave. Heat until marshmallows are huge and puffed-up (watch that they don't overflow) - about 2 or 3 minutes.
- With your greased spoon, stir until marshmallows are well mixed with butter, milk, and vanilla - there should be no lumps (it looks like marshmallow cream).
- Incorporate puffed wheat, making sure to coat all the cereal.
- Pour into prepared pan; cover with second piece of wax paper. Press FIRMLY into pan.
- Refrigerate at least 30 minutes.
- With the help of the paper, lift out and place on a cutting board or counter top; remove top layer of paper. Using a sharp, wet knife, cut into squares. If knife starts sticking, just re-wet it.
- Serve, making sure to remove any paper from the bottom.
- Keep refrigerated.
- * If you don't have a large enough microwavable bowl, you can put the puffed wheat into a regular bowl and pour the melted marshmallow over top. You will need a bowl containing at least 2 quarts to prevent marshmallows from spilling over.

- In a microwave or in a large saucepan over low heat, melt marshmallows, oil and extract if using; stir until smooth. Remove from heat; remove half of the mixture to another saucepan over low heat. Stir in the green coloring; add 3 cups cereal and stir to combine. Stir the pink coloring and red coloring to remaining marshmallow mixture; add remaining 3 cups cereal and stir to combine. Press half of the green mixture around inside edge of 2 lightly-greased 9-in. round cake pans using wax paper or a lightly-greased spatula. Pack the center with half the pink mixture; press half the chocolate chips into the surface of the pink portion. In a second cake pan, repeat with remaining mixtures. Cool to room temperature. Cut each portion into 12 wedges.

- In a large bowl, add marshmallow fluff and melted butter. Stir to combine. Then add rice krispies cereal. Stir to incorporate and combine.
- Pour this mixture onto a half sheet pan covered with parchment paper and sprayed with cooking spray. Press it down into the pan evenly and let cool.
- Once cool, remove from the sheet pan and place on a cutting board. Cut into bite-sized pieces, then transfer the pieces to a cereal bowl.
- Pour milk over cereal treat bites and enjoy.

- Grease an 8x8x2-inch pan with cooking spray.
- Melt butter in a large pot over medium heat. Add sweetened condensed milk. Stir with a rubber spatula until butter and milk are uniformly combined and small bubbles are forming in the center of the mixture, about 2 minutes. (When you first begin stirring they will look separated.) Add the bag of marshmallows and stir until melted and smooth. Add vanilla extract and salt and stir again. Remove from heat.
- Stir rice cereal and remaining cup of marshmallows into the pot to combine. Transfer to the prepared pan and press down lightly with a sheet of plastic wrap; don't pack them down too hard or they will lose their inherently soft and gooey texture. Sprinkle with flaky sea salt.
- Let set up on the counter for at least 1 hour. Cut into 16 squares.

- Put oil in a large pot and heat.
- Add rice syrup and nut butter. Stir and heat until bubbles form.
- Turn off heat and add vanilla extract.
- Add cereal and mix well. Stir in any optional items and mix lightly.
- Put mixture into a 9 x 13 pan. With slightly wet hands, press mixture flat.
- Let set to room temperature. Slice and serve. Lasts a week in an airtight container.
