SUNNY'S ITALIAN SAUSAGE-STUFFED ACORN SQUASH



Sunny's Italian Sausage-Stuffed Acorn Squash image

2 acorn squash, halved through the stem to the base and seeds removed
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 links (8 ounces) spicy Italian sausage, casings removed
1/2 cup chopped red onions
1/4 teaspoon hot Hungarian paprika
1/4 teaspoon pumpkin pie spice
6 fresh sage leaves, finely chopped
1 stalk celery, finely chopped
1 red bell pepper, seeded and finely chopped
Kosher salt and freshly ground black pepper
1/2 cup shredded Cheddar-Monterey Jack cheese blend
1/2 cup chopped walnuts
1/4 cup dried cranberries, finely chopped
Chopped fresh parsley, for garnish

Steps:

  • For the squash: Preheat the oven to 400 degrees F.
  • Place the squash on a baking sheet flesh-side up and rub with the olive oil. Season liberally with salt and pepper. Roast until the edges begin to ripple and a poke with a fork reveals tender flesh, about 40 minutes. Allow to cool until easy to handle.
  • Lower the oven temperature to 350 degrees F.
  • Use a spoon to scoop out the flesh into a large bowl, leaving about 1/4 inch of flesh within the skin of each squash half to help it maintain its shape.
  • For the filling: In a large pan on medium-high heat, add the olive oil and sausage. While cooking, break the sausage into bits like ground meat with a wooden spoon. Once some of the fat is rendered from the sausage, add the onions, paprika, pumpkin pie spice, sage, celery, bell peppers and a pinch of salt. Cook until the sausage is done and the vegetables are tender.
  • Add the mixture to the bowl of squash along with the cheese, walnuts and cranberries and stir to combine. Taste and season with salt and pepper if needed. Fill the hollowed squash halves with the mixture and place back in the oven to melt the cheese and make the tops golden brown, 15 more minutes. Sprinkle with parsley and serve warm.

One 12-ounce bag stuffing mix, such as Pepperidge Farm
1/4 cup loosely packed chopped fresh parsley
4 tablespoons unsalted butter
1 cup chopped celery
1 cup chopped onions
1 tablespoon chopped fresh thyme
5 to 6 fresh sage leaves, chopped
4 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
2 1/2 cups turkey or chicken stock
8 ounces sausage, sauteed
1 green bell pepper, chopped and sauteed
1 red bell pepper, chopped and sauteed
1 yellow bell pepper, chopped and sauteed
8 large oysters (about 1 cup)
2 hard-boiled eggs, coarsely chopped
1 cup dried apricots, diced
1 bulb fennel, sliced and sauteed
1 cup walnuts, toasted and chopped
2 apples, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the stuffing mix with the parsley and set aside.
  • In a large pan on medium heat, add the butter, celery, onions, thyme, sage and garlic. Season with a pinch of salt and a nice grind of pepper. Cook until the onions and celery are tender but the garlic is not browned. Remove to the bowl of bread cubes. Pour the stock over the bread and veggie mixture and stir to combine (this is a wet dressing, so it should be very moist). If using one of the add-in combinations, mix in the ingredients carefully.
  • Pour the mixture into a 13-by-9-inch baking dish. Press down to make it compact, and then cover tightly with aluminum foil. Bake for 45 minutes, then raise the oven temperature to 400 degrees F and bake, uncovered, until golden brown on top, about 15 minutes more.

7 cups 1-inch cubes white country bread (from about a 1-pound loaf)
1 tablespoon vegetable oil
3 stalks celery, medium-diced
1 medium yellow onion, medium-diced
Kosher salt and freshly ground black pepper
2 tablespoons fresh sage, chopped
1 tablespoon fresh thyme, chopped
2 cloves garlic, minced
3 scallions, sliced, whites and greens separated
1 cup peeled roasted whole chestnuts, roughly chopped
1 sleeve saltine crackers, crushed (about 3 cups)
One 10.5-ounce can condensed cream of mushroom soup
2 cups turkey stock
Fried Sage, optional, recipe follows
1 cup vegetable oil
16 fresh sage leaves
Kosher salt

Steps:

  • Preheat a countertop oven to 300 degrees F.
  • Place the bread cubes in a single layer on two quarter sheet trays (9-by-13-inch baking sheets) or countertop oven baking sheets and bake until dried out and crisp, about 15 minutes. Remove the bread cubes to a very large bowl.
  • Increase the oven temperature to 400 degrees F.
  • Meanwhile, heat the oil in a large saute pan over medium-high heat. Add the celery, onions and a pinch of salt and cook, stirring occasionally, until the vegetables are softened, 5 to 7 minutes. Add the sage, thyme, garlic and scallion whites and continue to cook until the vegetables and herbs meld together, 3 to 4 minutes. Transfer the vegetable mixture to the bowl with the bread cubes. Add the chestnuts and saltines and mix to combine well.
  • Whisk together the cream of mushroom soup and turkey stock in a medium bowl or large measuring cup. Pour over the bread cubes and vegetables. Season with salt and pepper and mix to combine well.
  • Transfer the bread mixture to a 9-by-9-by-2 1/2-inch broiler-safe baking dish. Using a wooden spoon, press down to compact the stuffing. Cover tightly with foil and bake for 30 minutes.
  • Remove the foil and switch the countertop oven to broil. Broil the stuffing until the top is golden brown and crispy, 2 minutes on high. Garnish with the scallion greens and Fried Sage, if using.
  • Heat the vegetable oil in a small saucepan over medium-high heat to 375 degrees F. To test if the oil is ready for frying, drop in a small sage leaf. If it begins to sizzle, the oil is ready. Add the sage leaves to the oil and fry until crisp, 20 to 25 seconds. Using a slotted spoon, remove the leaves to a paper towel-lined plate and sprinkle with salt.

12 slices or 1 1/2 packages of New York Brand Texas Garlic Toast
1/2 cup butter
2 medium onions, chopped
2 cups celery, chopped
1 cup green pepper,chopped
1 teaspoon rubbed sage
2 eggs, lightly beaten
2 cups chicken broth
salt and black pepper to taste

Steps:

  • Bake New York Brand Texas Garlic Toast in a 25 oven for 10 minutes; cool and cut into 1.5-inch pieces, Transfer pieces to a bowl; lower oven to 325°F. In a large skillet, brown and cook crumbled Sausage until no longer pink. Drain. Remove from skillet; set aside. In the same skillet, melt butter and saute onion, celery and green pepper until tender. In a large mixing bowl, combine sausage, vegetable mixture, New York Brand Texas Garlic Toast and sage. Add eggs and broth; toss gently. Salt and pepper to taste. Spoon into a buttered 3 to 4 quart baking dish. Cover with foil and bake at 325°F for 60 minutes. Uncover and bake 10 minutes longer or until lightly browned. Check internal temperature with a meat thermometer,it should read 165°F when done.

This is my Mom's family recipe for sausage stuffing made during the holidays. It's my favorite stuffing recipe and I continue to make it every year. It's a little work but well worth it!!!!

2 lbs ground sausage
3 loaves stuffing bread (day-old)
3 onions, chopped
3 stalks celery, chopped
3 eggs
milk, enough to soak the bread
8 ounces mushrooms
1 tablespoon bells seasoning
1 tablespoon celery seed
salt and pepper

Steps:

  • Cut bread into 1" cubes and place in a very large bowl.
  • Cover with enough milk to make soggy and mix well, then add eggs and mix well. Set aside to soak.
  • In a large pot, crumble sausage and saute.
  • Chop onions and celery in a food processor.
  • When there is enough fat cooked out of the sausage to cover the bottom of the pan add onions and celery.
  • Cook until sausage is cooked through and veggies are par cooked.
  • Add mushrooms with the liquid to the pot.
  • Add bread mixture and stir well to blend together.
  • Add Bells seasoning, salt, pepper and celery seed.
  • Continue stirring as it cooks to prevent sticking to pot and ensure it's all heated through to cook the eggs.
  • Adjust seasoning to taste.
  • At this point my family stuffs the mixture into the bird. You can opt to do this or serve unstuffed.

2 tablespoons extra virgin olive oil
1 large onion, chopped
2 medium celery ribs, with leaves chopped
2 medium red bell peppers, cored, seeded, chopped
2 garlic cloves, minced
2 lbs sausage meat (casings removed)
1 teaspoon dried basil
1 teaspoon oregano
1/2 teaspoon crushed red pepper flakes
12 ounces about 2 loaves day old crusty Italian bread, cut into cubes
1 cup parmesan cheese
8 tablespoons unsalted butter, melted (1 stick)
1/2 cup dry white wine
1 1/2-2 cups chicken broth

Steps:

  • In a large skillet, heat olive oil over medium heat. add onion, celery, bell peppers and garlic. Cook, stirring often, until softened, about 5 minutes. Add the sausage and cook, breaking up the meat with a spoon,, until it loses its pink color, about 8-10 minutes. Stir in the basil, oregano, salt and the crushed red pepper. Transfer to a large bowl. Add the bread and cheese and mix well. Stir in the butter, wine and enough of the broth to moisten stuffing, about one cup. Use to stuff the turkey, or place in a buttered baking dish, drizzle with additional 1/2 cup broth, cover, and bake as a side dish, along side the turkey. . Makes about 10 cups. Serves 10-12.

1 ½ pounds bulk Italian sausage
2 tablespoons olive oil
6 ounces pancetta bacon, diced
2 onions, chopped
7 large stalks celery, chopped
4 cloves garlic, minced
6 cups day-old French bread, cut into 1/2 inch cubes
3 cups crumbled cornbread
1 ½ tablespoons rubbed dried sage
1 ½ tablespoons poultry seasoning
1 teaspoon salt
1 cup toasted pine nuts
4 cups chicken broth
2 cups shredded mozzarella cheese
½ cup butter
2 tablespoons chopped fresh sage
1 ounce shaved Parmesan cheese

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a deep 9x13 inch baking dish or roasting pan.
  • Heat a large skillet over medium-high heat and stir in the sausage. Cook and stir until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Place the browned sausage into a large mixing bowl.
  • Meanwhile, heat the olive oil and pancetta in a large skillet over medium heat. Once the pancetta begins to brown, stir in the onions and celery, and cook until the onion softens and turns translucent, about 8 minutes. Stir in the garlic, and cook another 3 minutes until the aroma of the garlic mellows.
  • Scrape the onion mixture into the bowl with the crumbled sausage. Add the French bread, cornbread, dried sage, poultry seasoning, salt, and pine nuts; stir well. Pour in the chicken broth and mozzarella cheese; stir until the chicken stock has been absorbed by the bread and the stuffing is evenly mixed. Pack the stuffing into the prepared baking dish, and dot the butter overtop. Cover with aluminum foil.
  • Bake in the preheated oven for 45 minutes, then remove the foil, and continue baking until the top has turned golden brown, about 15 minutes more. Sprinkle with the fresh sage and shaved Parmesan cheese to serve.

Mother-in-law made this for our Thanksgiving weekend wedding rehearsal, back in 1978. It has been a part of our holiday menu every year since then---with a few additions, substitutions and tweaking over the years. Try some of the optional ingredients, too!

1 lb ground beef (combine with mild-spicy pork sausage)
1 loaf bread
1/2 lb butter, divided
1/2 lb fresh mushrooms, sliced
2 -3 large onions, finely chopped
4 -5 stalks celery, finely chopped
sage
parsley
thyme

Steps:

  • Saute meats in large frying pan. While that is cooking, cube the bread (leave the crusts on).
  • Dump bread cubes into a large bowl. When meat is cooked through, dump into a colander to rinse and drain; then add to the bread cubes, toss lightly.
  • In same frying pan, add a dab of butter and saute the mushrooms. When they begin to get limp and juicy, dump into bowl with meat-bread mixture. Toss lightly.
  • In frying pan, with another dab of butter, saute onion and celery. When onion is transparent either dump into bowl and toss OR dump into blender jar along with 1/4-1/2 cup melted butter and swirl into fine-ness. (This is for the kids who don't like to see chunks of "yukkies" as my son complains!), THEN pour over bread cube mixture and mix inches.
  • Sprinkle herbs over the top, and toss again.
  • Depending on how "juicy" you like your stuffing/dressing, melt another 1/2 cup of butter and drizzle over and stir.
  • This is used for stuffing turkey, goose or chicken.
  • Dressing can be baked in a greased, covered casserole dish at 325-350°F for 30-40 minutes.
  • OPTIONAL ADD-INs: Try one or two of the following suggestions: 1-2 small cans sliced (minced) water chestnuts, 1/2 - 1 cup green olives, 1 cup chopped toasted nuts (walnuts are great!). Try a 1/4-1/2 cup cornmeal for an entirely different flavor.
  • SUBSTITUTE: 1-2 small cans of drained mushroom stems and pieces instead of the fresh ones. Other herbs and LOTS of pepper are great too. Try a combination of wholewheat and white bread.
  • LEFTOVERS: Reheat in the oven or microwave; keep pan covered unless you like it a bit drier. Use as a bread-like crust for Turkey Divan (with broccoli spears, turkey pieces, grated cheese and cream-of-mushroom soup over the top--baked).

1 ½ teaspoons dried parsley
1 teaspoon dried summer savory
¾ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
½ teaspoon dried marjoram

¼ teaspoon ground nutmeg
1 cup chicken broth, or more to taste

Steps:

  • Place bread cubes in a large bowl.
  • Heat oil in a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onions, celery, 1/2 cup butter, and garlic. Saute until onions appear translucent, about 5 minutes.
  • Add sage, parsley, savory, salt, pepper, Italian seasoning, marjoram, thyme, and nutmeg; mix well. Stir in 1 cup broth.
  • Slowly pour broth and sausage mixture over bread cubes, stirring continuously as you pour. Add additional broth and butter as desired.
  • Stuffing is ready to bake in the oven or stuff in the bird.

2 scallions, finely chopped

2 (1 ounce) packets Hidden Valley® Farmhouse Originals Homestyle Italian Dressing & Seasoning Mix
4 cups plain stuffing cubes
4 cups low sodium chicken broth, plus more for texture

Steps:

  • Preheat oven to 350 degrees F. Sauté the sausage. In a large pan on medium-high heat, add olive oil and sausage. Cook until heated through and browned. Remove to a large bowl along with any remaining fat from the pan.
  • Sauté the vegetables and fruit. In the same pan add butter and melt on medium heat. Add scallions, celery, onion, cranberries and Hidden Valley® Homestyle Italian Dressing & Seasoning Mix. Cook while stirring until the vegetables are tender and cranberries become a bit plump, about 6-8 minutes. Remove all to the bowl with the sausage.

  • Bake stuffing. Coat the bottom and sides of an 8" x 8" baking dish with cooking spray. Pour in stuffing and press down, leveling off the top with a rubber spatula or back of a spoon. Bake until top is golden, about 35-40 minutes.
