Adobo is a pork or chicken recipe, marinated in soy sauce and vinegar, its up to your preference if you are going to marinate it or let the sauce mix simmer with the pork and then fried...there are a lot of ways to cook adobo...but you will sure love this!

1/2 kg pork (with fat, any portion) or 1/2 kg chicken piece (with fat, any portion)
1/2 cup soy sauce
1/2 cup native vinegar (if not available any vinegar, will do)
1/4 cup water
1 teaspoon ground pepper
1/8 cup brown sugar
peppercorn
garlic clove
laurel leaf

Steps:

  • combine all ingredients in a pan, simmer until tender or the liquid will reduce to half.
  • then add cooking oil.

3 lbs chicken pieces, bone-in
1/2 cup soy sauce
2/3 cup vinegar
1 -2 garlic clove, crushed
2 bay leaves
1 teaspoon peppercorn
salt

Steps:

  • Bring to a boil the first 6 ingredients. Simmer for about 50 minutes until the chicken is tender and sauce is reduced by half. I simmered with the lid on for about 35 minutes and took the lid off the last 15 to let the sauce reduce.
  • Add salt to taste. Serve hot with rice.

This is a Filipino chicken dish flavored with ginger and coconut milk. Each family has their own version. This is my mother's version. It's a rich dish that makes your kitchen smell so wonderful! Once my family smells the ginger frying and coconut milk simmering, they can't wait for it to be done so they can dig in! I salt it liberally as the coconut milk tends to hide the salt flavor.

3 tablespoons canola oil
½ cup sliced fresh ginger
1 (5 pound) whole chicken, cut into pieces
salt and ground black pepper to taste
2 (14 ounce) cans coconut milk
1 (10 ounce) package frozen chopped spinach, thawed and drained

Steps:

  • Heat the canola oil in a large skillet over medium heat and stir in the ginger slices. Cook and stir until fragrant and lightly browned. Remove ginger and set aside. Season chicken with salt and pepper. Place chicken in the same skillet over medium-high heat without crowding. Cook until chicken is lightly brown on all sides. Return the ginger to the skillet and add coconut milk. Bring to a boil, then cover the skillet with the lid tilted to allow steam to escape. Reduce heat to medium-low and simmer until the chicken is no longer pink at the bone, stirring occasionally, about 30 minutes.
  • Stir in the spinach. Simmer uncovered until spinach is warmed through, 8 to 12 minutes. Season with salt and pepper, as necessary.

  • Place the chicken in a bowl, container, or pan. You will be placing the bowl, container, or pan in the refrigerator so ensure that it is both big enough to fit all the chicken and fit inside your fridge.
  • Add soy sauce, vinegar, sugar, garlic, onion, peppercorn, salt, and bay leaves into the pan. Then cover and toss the chicken until it is completely covered with the sauce.
  • Cover and place the dish in the refrigerator. Let it marinate overnight for the best results. If you need to make the adobo in the same day, you can let your chicken marinate for 2 to 3 hours instead.
  • Cook the marinated chicken on the stove. Transfer your marinated chicken to a pan or to the stove and cook on medium heat. Add water.
  • Bring the chicken to a boil. Once everything begins to boil, turn your stove to low heat. Add more water to the mixture if you think the dish is too dry.
  • Let the chicken simmer for 20 to 30 minutes. Cover the skillet and let the chicken simmer until it is tender. After 15 minutes, spoon the sauce over the chicken.
  • Serve and enjoy. You can serve the adobon manok on top of rice, with potatoes, or with bread. And pair it with a refreshing glass of cold soda or fresh juice.
