3 extra large sweet potatoes, peeled and cut into 1-inch cubes
4 tablespoons extra virgin olive oil
4 tablespoons light agave nectar
2 teaspoons fresh lemon juice
1 teaspoon salt, plus extra

Steps:

  • Preheat oven to 350 degrees.
  • Place the potatoes in a 9 x 13 inch baking dish. In a bowl, whisk together the oil, agave nectar, and lemon juice. Pour the mixture over the potatoes and toss until potatoes are coated. Sprinkle with salt, toss again.
  • Bake, stirring occasionally, for one hour or until potatoes are tender and carmelized.
  • Season, to taste, with more salt.

6 sweet potatoes, peeled and cubed
¾ cup milk
½ cup butter
¾ cup maple syrup

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
  • With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup to taste. Blend until smooth. Serve warm.

2 Ibs. sweet potatoes (about 5 small)
3 tablespoons butter or margarine
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup cream or milk
1/4 cup Domino® Organic Amber Agave Nectar
salt and pepper to taste
fresh chives, chopped

Steps:

  • Peel and chop sweet potatoes into uniform cubes, about l-inch. Steam or boil until tender. Strain from water, if boiled. Place cooked sweet potatoes and butter into a large bowl. Using an electric mixer on medium speed, beat for approximately 2 minutes. With a spatula, scrape down sides of bowl, add cinnamon and nutmeg. Continue beating for 1 minute. Slowly pour in cream, continue beating until combined. Add Amber Agave Nectar; mix until well incorporated. Add salt and pepper to taste. Garnish with chives. Makes 3 1/2 cups.

  • Add the sweet potatoes to a large stockpot then cover them with water. Add 2 teaspoons salt then place the stockpot over medium-high heat. Bring the water to a boil then reduce it to a simmer and cook the sweet potatoes until fork-tender, 15 to 20 minutes.
  • Drain the sweet potatoes then add them to the bowl of a stand mixer fitted with the paddle attachment.
  • Immediately add the cream cheese, chives, cinnamon, honey, 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix on low speed until the potatoes reach your desired texture.
