AIR FRYER BLUEBERRY CHEESECAKE EGG ROLLS
These are some of the best things I have ever eaten. They are so easy to make but are they good. They might be my favorite new dessert. This is an entertaining dessert for the kids, but the entire family will gobble them up. Today, I am giving you my Air Fryer Blueberry Cheesecake Egg Rolls Recipe.

- SIMPLE DIRECTIONS, BLUEBERRY PIE FILLING: In a small saucepan, mix the blueberries, sugar, and lemon juice. Mix well. Simmer for about 8 minutes until everything is well combined. Once the blueberries have burst, remove them from heat. In a small bowl, mix the cornstarch and water to make the cornstarch slurry. Pour into the blueberry mixture. Mix until the blueberry filling has slightly thickened. Let cool. SIMPLE DIRECTIONS, CREAM CHEESE FILLING: In a large mixing bowl, mix the cream cheese, sugar, and vanilla extract. Mix until smooth. SIMPLE DIRECTIONS, EGG ROLLS: Spray your air fryer basket with olive oil spray. Layout an egg roll wrapper on a flat surface. Add two tablespoons of blueberry filling in the center, and then add 2 tablespoons of cream cheese filling on top. Use a pastry brush, and brush the water along the edges. Roll the egg roll, and then brush the top with water, so the egg roll is completely sealed and fold up the edges and brush with water. Once everything is sealed up., spray the egg roll wrapper with olive oil spray. Place the egg roll into the air fryer basket, and set the time for 8-10 minutes at 350 degrees F. Let cool slightly, and sprinkle with powdered sugar.

- Pour hot water over bean sprouts in a small bowl; let stand 5 minutes. Drain., Meanwhile, in a Dutch oven, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Add green onions, ginger and garlic. Cook 1 minute longer; drain. Stir in 1/2 cup Chinese-style sauce, fish sauce and soy sauce; transfer to a large bowl. Wipe pan clean., In the same pan, cook and stir coleslaw mix, spinach and drained bean sprouts until crisp-tender, 4-5 minutes. Stir into chicken mixture. Cool slightly., Preheat air fryer to 400°. With one corner of an egg roll wrapper facing you, place 1/3 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer in greased air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-12 minutes. Turn; spritz with additional cooking spray. Cook golden brown, 4-6 minutes longer. Serve with remaining Chinese-style sauce.

No need to heat up the whole kitchen just to make dessert. Your air fryer will have this crisp ready in no time! This makes two servings, perfect for smaller air fryers, but feel free to double the recipe.

- Preheat an air fryer to 360 degrees F (180 degrees C).
- Combine blueberries, flour, lemon juice, and salt in a small bowl. Toss to coat, then divide the mixture between two 1-cup ramekins.
- Combine oats, flour, brown sugar, and cinnamon for the topping in a small bowl. Mix in softened butter using a fork until mixture is crumbly. Sprinkle over the blueberries.
- Place the ramekins in the air fryer basket and cook until the blueberries are warmed throughout and topping is golden brown, 12 to 14 minutes.

- Combine blueberries, 1 tbsp honey, and lemon juice and zest in a small pot and bring to a boil. Reduce to a simmer and simmer for 8ish minutes until the blueberries are exploded and there's juice in the pot. Stir occasionally during the simmering.
- Mix 1 tbsp cornstarch and water into a slurry. Add slurry to the blueberries and mix until fully incorporated and thick. Remove the blueberries from heat and let cool. You should end up with about 1 1/4 cup blueberries. This can be done the day before.
- In a separate bowl, mix 2 oz. cream cheese, 2 oz. Greek yogurt, 1 tsp honey, and a splash of vanilla in a bowl. This will yield about 1/2 cup.
- Mix both bowls together, and let cool in the refrigerator for about 30 minutes to chill. You should also taste it because it's delicious.
