Skip the deep-fryer and forget soggy oven chicken wings. The air fryer offers the best of both worlds for crispy wings without extra fat!

Nonstick cooking spray, for the basket
2 pounds chicken wings, split at the joint and tips removed
Kosher salt
4 tablespoons unsalted butter
1/2 cup hot sauce, such as Frank's RedHot
Ranch or blue cheese dressing, for serving

Steps:

  • Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the chicken wings dry and sprinkle generously with salt. Place the wings in the fryer basket so they are not touching (if necessary to fit, line up the drumettes standing upright along the sides). Set the air fryer to 360 degrees F and cook for 12 minutes, then flip the wings with tongs and cook for 12 minutes more. Flip the wings again, increase the heat to 390 degrees F and cook until the outsides are extra-crispy, about 6 minutes more.
  • Meanwhile, warm the butter in a microwave-safe bowl in the microwave until melted, about 1 minute. Whisk in the hot sauce.
  • Toss the wings with the butter mixture to coat in a large bowl and serve with dressing on the side.

1 tablespoon olive oil
⅔ cup cayenne pepper sauce
½ cup butter
2 tablespoons vinegar
1 teaspoon garlic powder
¼ teaspoon cayenne pepper

Steps:

  • Preheat an air fryer to 360 degrees F (182 degrees C).
  • Place wings in a large bowl. Drizzle oil over wings and massage until chicken is evenly coated.
  • Place 1/2 the wings in the air fryer basket and cook for 25 minutes. Use tongs to flip wings and cook 5 minutes more. Transfer cooked wings to a large bowl. Repeat with remaining wings.
  • While second batch is cooking, combine hot pepper sauce, butter, vinegar, garlic powder, and cayenne pepper in a small saucepan over medium heat. Stir and keep warm until wings are done.
  • Pour sauce over cooked wings and toss to coat.

1 1/2 pounds chicken breast ((cut into 1 inch cubes))
2 large eggs, whisked
3/4 cup almond flour
1/4 cup plus 2 tablespoons tapioca flour
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
salt and pepper, to taste
avocado oil
serve with: ranch or blue cheese, carrot sticks, celery, hot sauce...
2 tablespoons ghee
1/2 cup hot sauce
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
salt, to taste

Steps:

  • In a small bowl mix together the almond flour, tapioca flour, chili powder, paprika, cayenne, and salt and pepper. In another small bowl, add the whisked eggs. Set up an assembly line with cubed chicken, eggs, and flour mixture.
  • Bread the chicken by dipping it in the egg mixture, making sure it is fully coated. Roll in the flour mixture, fully coating and shaking off any excess. Place on a plate and repeat with remaining chicken.
  • Place chicken in your air fryer basket, evenly spreading out and leaving room in between pieces so the air can easily flow through. If using, spray chicken with a light coating of avocado oil. Close drawer, set air fryer on manual at 375°F for 15 minutes, pausing halfway through to stir them up, making sure they are still evenly spread out after stirring. Depending on the size of your air fryer, you will probably have to cook the chicken in two batches to make sure they are not overcrowded.
  • When the chicken is almost done, make the buffalo sauce. Add hot sauce, ghee, lemon juice, garlic powder, paprika, cayenne, and salt to a small saucepan over medium-low heat. Cook until warmed through and combined, about 3 minutes.
  • Once chicken is done, add to a large bowl and pour buffalo sauce over chicken. Carefully mix to coat the chicken. Make sure to mix carefully as you don't want the breading to come off. Serve with ranch or blue cheese, carrots, celery, and more hot sauce!

  • Preheat the oven to 380 degrees F (190 degrees C).
  • Rinse chicken wings and pat dry.
  • Combine sea salt, garlic powder, mustard powder, coriander, smoked paprika, cayenne pepper, and black pepper in a shallow bowl. Dredge each chicken wing in the spice mixture and set into the air fryer basket in one layer.
