AIR FRYER BROCCOLI TOTS
Air fryer broccoli tots are a delicious way to add more vegetables into your diet.

Steps:
- Steam broccoli florets until very tender. Drain and smash with fork or pulse in food processor.
- In a large bowl, combine the smashed broccoli, bread crumbs, Parmesan, and egg yolk. Season with salt and pepper. Mix well.
- Line a baking sheet with parchment paper. Form broccoli mix into tots and freeze for 10 minutes.
- Lightly spray the basked of the air fryer and place broccoli tots inside. Cook at 370 degrees for 10-12 minutes or until lightly browned and crispy.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until it looks like grains of rice. Repeat with remaining broccoli florets.
- Fill a large, shallow saucepan with 1/2 inch water; add 1 teaspoon salt. Bring to a boil. Reduce heat to low and add broccoli rice. Cover and simmer until tender, about 5 minutes. Drain and let cool, about 10 minutes.
- Transfer broccoli rice to the center of a clean absorbent dish towel. Squeeze and twist the towel to remove as much of the moisture as possible.
- Mix Cheddar cheese, bread crumbs, onion, egg, parsley, garlic, cumin, and black pepper together in a large bowl. Mix in broccoli rice until mixture sticks together when pressed into a ball.
- Scoop 1 1/2 tablespoons of mixture with a small ice cream scoop; form into a ball and press into the shape of a tot using oiled hands. Place on the prepared baking sheet. Repeat with remaining mixture.
- Drizzle olive oil over broccoli tots. Sprinkle remaining 1 teaspoon salt on top.
- Bake in the preheated oven, turning halfway with tongs, until golden brown, about 24 minutes.

Steps:
- Defrost the broccoli in a bowl. Remove the liquid at the bottom after defrosting. Add to the food processor and mash up to a fine chop. Set aside.
- Add the gluten-free homestyle stuffing cup to the food processor. Pulverize it into crumbs. Set aside.
- In a large bowl, mix 2 beaten eggs, mashed broccoli, pulverized stuffing, minced garlic, grated Romano cheese, salt and pepper, and Frank's Red Hot.
- Spray the air fryer tray with nonstick spray. Grab a handful of the mixture and squeeze tight to form a tot. Remove excess liquid, if any. Then place it in the tray on a single layer. Separately evenly to allow for circulation in the air fryer tray. When the tray is filled, place it into the air fryer at 400 degrees for 15 minutes or until brown. Remove and let sit for a few minutes and serve.
