3 eggs
2 1/2 Tablespoon milk or almond milk
1/4 cup shredded cheddar cheese
1/4 teaspoon salt
1/4 cup cherry tomatoes (diced)
3 Tablespoon chopped green onions
1 Tablespoon chopped fresh basil

Steps:

  • Beat the eggs, milk, and salt together. Add in the remaining ingredients and stir.
  • Scoop the egg mixture into lightly greased muffin tins and air fry at 300F (150C) for about 8-10 minutes until the eggs are cooked through.
  • Top the egg muffins with some avocado to serve (optional).

They are perfect grab-and-go breakfast for hectic mornings as well as a delicious side for lunch. You can also have egg muffins as a healthy snack to satisfy food cravings.The egg muffins recipe below has three different fillings to suit everyone's palate at breakfast. It is a very easy and healthy egg muffin recipe to be made in the air fryer. Try and enjoy!

Olive oil spray
12 large eggs
Salt and black pepper to taste
½ cup shredded leftover rotisserie chicken
1/3 cup chopped mushrooms, cooked
½ teaspoon garlic powder
1/3 cup chopped chives
½ cup grated Parmesan cheese
2 jalapeño peppers, deseeded and chopped
4 ounces cream cheese (at room temperature)
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated cheddar cheese
½ cup chopped tomatoes
½ cup chopped baby kale
¾ teaspoon Italian seasoning
½ teaspoon garlic powder
½ cup grated plant-based cheese

Steps:

  • Preheat the air fryer by setting the temperature to 325°F and timer to 3 minutes. Once you press the "Start/Pause" button, it will start warming up.
  • Lightly grease the muffin tray with olive oil spray.
  • Crack eggs into a bowl, add salt and black pepper and whisk them very well.
  • Divide the whisked eggs into 3 bowls.
  • Add each filling to a separate bowl with eggs and whisk them well.
  • Fill the muffin tray holes about two-thirds with the egg mixtures.
  • Open the air fryer, place the muffin tray in and close it.
  • Adjust the timer to 12 minutes and press the "Start/Pause" button to start baking.
  • Cook the egg muffins until set at the center.
  • Open the air fryer and remove the muffin tray.
  • Let the egg muffins cool down in the muffin tray for 5 to 10 minutes.
  • Remove the muffins from the tray and serve them warm.
  • Enjoy!

In fact, next time I think that I will add a slice of tomato. And, as the weather gets colder... a bit of cayenne. The air fryer...

3 slice bacon, diced
6 Tbsp cheese, freshly grated, your choice
1 english muffin, cut in half
2 large farm fresh eggs
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. To make these, you will need an air fryer, or they could be baked in an oven set to convection mode for similar results.
  • 3. Gather your ingredients (mise en place).
  • 4. Add the diced bacon to a pan and cook until it has reached your level of doneness.
  • 5. Drain on paper towels and reserve.
  • 6. Chef's Note: Whatever you choose, bacon, sausage, ham, etc., make sure that it is precooked.
  • 7. Set your air fryer to 375f (190c), and let it preheat for about 5 minutes.
  • 8. Chef's Tip: Most air fryer recipes do not talk about preheating; however, I find that I get more consistent results if I preheat. In most cases, 5 or 6 minutes does the trick.
  • 9. Cut the English muffin in half, lightly toast, and then dig a small indentation out of the middle of each one.
  • 10. Chef's Tip: If you are using bacon, then lightly brush some of the bacon grease over the cut tops. If you are using something else, melt a bit of butter, and brush over the cut tops. It makes a world of difference to the final product.
  • 11. Chef's Tip: I used a biscuit cutter to define the indentation, and then used a spoon to scrape it out.
  • 12. Add two tablespoons of the cheese, to each half, and then add the bacon.
  • 13. Add the eggs.
  • 14. Divide the rest of the cheese over the tops. If you want to use more cheese... I am not stopping you :-)
  • 15. Chef's Tip: I like to crack the egg in a bowl... That way I can check for any pieces of shell, and make sure the yolk stays whole.
  • 16. Chef's Note: Sprinkle with a bit of salt and pepper, to taste.
  • 17. Place into the air fryer and cook for about 4 - 5 minutes.
  • 18. PLATE/PRESENT
  • 19. Remove from the air fryer and serve while nice and hot. Enjoy.
  • 20. Keep the faith, and keep cooking.
