1 medium potato
1 tablespoon olive oil
1/8 teaspoon pepper
1/8 teaspoon salt
FISH:
3 tablespoons all-purpose flour
1/8 teaspoon pepper
1 large egg
2 tablespoons water
1/3 cup crushed cornflakes
1-1/2 teaspoons grated Parmesan cheese
Dash cayenne pepper
1/8 teaspoon salt
1/2 pound haddock or cod fillets
Tartar sauce, optional

Steps:

  • Preheat air fryer to 400°. Peel and cut potato lengthwise into 1/2-in.-thick slices; cut slices into 1/2-in.-thick sticks., In a large bowl, toss potato with oil, pepper and salt. Place potato pieces in a single layer in air-fryer basket; cook until just tender, 5-10 minutes Toss potatoes in basket to redistribute; continue to cook until lightly browned and crisp, 5-10 minutes longer. , Meanwhile, in a shallow bowl, mix flour and pepper. In another shallow bowl, whisk egg with water. In a third bowl, toss cornflakes with cheese and cayenne. Sprinkle fish with salt; dip into flour mixture to coat both sides and shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere. , Remove fries from basket; keep warm. Place fish in a single layer in air-fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, turning halfway through cooking, 8-10 minutes. Do not overcook. Return fries to basket to heat through. Serve immediately. If desired, serve with tartar sauce.

1 russet potato
2 teaspoons vegetable oil
1 pinch salt and ground black pepper to taste
¾ cup all-purpose flour
2 tablespoons cornstarch
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon baking soda
¼ teaspoon baking powder
¾ cup malt beer
4 (3 ounce) fillets cod fillets

Steps:

  • Peel russet potato and cut into 12 wedges. Pour 3 cups water into a medium bowl and submerge potato wedges for 15 minutes. Drain off water and replace with fresh water. Soak wedges for 15 more minutes.
  • Meanwhile, mix together flour, cornstarch, salt, garlic powder, baking soda, and baking powder in a bowl. Pour in 1/2 cup malt beer and stir to combine. If batter seems too thick, add remaining beer 1 tablespoon at a time.
  • Place cod fillets on a rimmed baking sheet lined with a drip rack. Spoon 1/2 of the batter over the fillets. Place rack in freezer to allow batter to solidify, about 35 minutes. Flip fillets over and coat the remaining side with the batter. Return to freezer for an additional 35 minutes.
  • Preheat the air fryer to 400 degrees F (200 degrees C) for 8 minutes.
  • Cook frozen fish fillets for 15 minutes, flipping at the halfway point.
  • Meanwhile, drain off water from potato wedges and blot dry with a paper towel. Toss with oil, salt, and pepper. Air fry for 15 minutes.

nonstick cooking spray, for greasing
1 lb cod, cut into 2-inch strips
1 teaspoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1 cup all purpose flour
1 teaspoon paprika
2 large eggs
1 cup panko breadcrumbs
tartar sauce, for serving
lemon wedge, for serving

Steps:

  • Make the chips: Add the potatoes, olive oil, salt, and pepper to a large bowl and toss until the potatoes are well coated.
  • Preheat the air fryer to 400°F (200°C). Spray the basket with nonstick spray.
  • Arrange the fries in the basket in a single layer, making sure they aren't touching, and cook until tender and golden brown, 12 minutes. Transfer the fries to a paper towel-lined plate and season with salt. Repeat with the remaining potatoes.
  • Meanwhile, make the fish: Place the cod on a cutting board and pat dry with paper towels. Season with salt and pepper.
  • Add the flour, 1 teaspoon salt, 1 teaspoon pepper, and the paprika to a shallow bowl and whisk to combine. Beat the eggs in a separate shallow bowl. Add the panko to a third shallow bowl.
  • Coat the cod in the flour, shaking off any excess, then dip in the eggs, then the panko, making sure each piece is fully coated.
  • After the fries are done, place a few pieces of cod in the air fryer at a time, making sure they are not touching, and cook until golden brown and cooked through, 10 minutes. Transfer the cod to a serving platter and season with salt. Repeat with the remaining cod.

Kosher salt and freshly cracked black pepper
1 cup all-purpose flour
2 large eggs, lightly beaten
2 cups panko breadcrumbs
1 teaspoon paprika
1/2 teaspoon garlic powder
10 ounces frozen French fries
3/4 cup mayonnaise
1 tablespoon finely chopped dill
1 tablespoon finely chopped cornichons
1 tablespoon white wine vinegar
2 teaspoons chopped capers (rinsed and drained)
1 teaspoon Dijon mustard
Kosher salt and freshly cracked black pepper

Steps:

  • For the fish and fries: Cut the cod into strips 1 inch wide by 2 inches long. Season with 1/2 teaspoon salt and some pepper. Set up a breading station with three wide shallow bowls or baking dishes, one with the flour, one with the eggs whisked with a splash of water and one with the panko. Whisk the paprika, garlic powder, 1/2 teaspoon salt and 1/2 teaspoon pepper into the flour.
  • Working in small batches, toss the fish in the flour, then dip into the egg and, finally, coat with the panko. Arrange in a single layer in the basket of a 6-quart air fryer as they're done. Cook in the air fryer at 350 degrees F for 10 minutes, flipping the fish halfway through, until the fish is golden brown and crispy. Transfer to a dish and sprinkle with salt.
  • Add the fries to the air fryer and cook until golden brown and crispy, about 10 minutes. During the last minute of cooking, add the fish on top of the fries to reheat.
  • For the tartar sauce: While the fish is cooking, mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl.
  • Serve the fish and fries immediately with the tartar sauce.
