Cooking your pancakes in the air fryer is a great option for those mornings when you're in a hurry. These will be ready and on your table in less than 10 minutes and there's no need to preheat your air fryer oven! Top with butter and sugar-free maple syrup (such as Walden Farms®).

½ cup pumpkin puree
½ cup peanut butter
2 eggs
1 teaspoon vanilla extract
½ teaspoon pumpkin pie spice
½ teaspoon baking soda
2 packets stevia sweetener (such as Truvia®)
1 pinch salt

Steps:

  • Line the air fryer basket with parchment paper and spray with cooking spray.
  • Combine pumpkin puree, peanut butter, eggs, vanilla, pumpkin pie spice, baking soda, sweetener, and salt in a bowl. Stir until well combined.
  • Working in batches if necessary, place about 3 tablespoons batter for each pancake on the parchment paper in the air fryer basket, leaving about 1/2 inch space in between.
  • Place basket in the air fryer oven and cook at 300 degrees F (150 degrees C), without flipping, until the bottom side is fully cooked, 4 to 6 minutes. Repeat with remaining batter.

1 ½ cups self-rising flour, plus more for kneading
1 cup plain Greek yogurt
½ cup prepared pizza sauce
1 cup shredded mozzarella cheese
½ cup pepperoni

Steps:

  • Mix flour and Greek yogurt together in a bowl; transfer to a work surface floured with self-rising flour. Knead dough, adding more flour as needed to keep dough from being too sticky, 8 to 10 minutes.
  • Preheat an air fryer to 325 degrees F (165 degrees C) according to manufacturer's instructions. Spray the bottom of the basket with cooking spray.
  • Divide dough into 4 equal pieces. Roll each piece on a lightly floured work surface into a flat circle, about 1/8-inch thick. Spread 2 tablespoons of the pizza sauce over the bottom half of each dough circle. Top each with 1/4 cup of the mozzarella cheese and a quarter of the pepperoni. Fold dough over filling to form half circles and crimp edges to seal. Coat well with cooking spray.
  • Transfer calzones to the air fryer basket (you might need to work in batches). Cook for 4 minutes, then flip the calzone over and cook until golden brown, 4 to 5 minutes more.

1 cup plain Greek yogurt
1 ¼ cups self-rising flour, plus more for kneading
4 tablespoons unsalted butter, melted
2 teaspoons kosher salt

Steps:

  • Preheat an air fryer to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. Dust a cutting board with self-rising flour.
  • Place Greek yogurt in a bowl. Add 1 1/4 cups self-rising flour and stir until mixture forms a ball. Turn out ball onto the cutting board and knead until smooth.
  • Cut dough into 4 equal portions. Roll each portion into ropes. Cut one rope into 1-inch pieces and place pieces in the basket of the air fryer.
  • Cook for 3 minutes. Shake and cook 3 additional minutes. Brush each pretzel bite with melted butter and cook 3 minutes more.
  • Transfer pretzel bites to the prepared baking sheet using tongs. Brush with melted butter again and sprinkle with kosher salt. Repeat with remaining ropes.
