AIR-FRYER LEMON SLICE SUGAR COOKIES
Here's a refreshing variation of my grandmother's sugar cookie recipe. Lemon pudding mix and icing add a subtle tartness that tingles your taste buds. -Melissa Turkington, Camano Island, Washington

- In a large bowl, cream butter, pudding mix and sugar until light and fluffy, 5-7 minutes. Beat in egg and milk. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Divide dough in half. On a lightly floured surface, shape each into a 6-in.-long roll. Wrap and refrigerate 3 hours or until firm., Preheat air fryer to 325°. Unwrap and cut dough crosswise into 1/2-in. slices. In batches, place slices in a single layer on greased tray in air-fryer basket. Cook until edges are light brown, 8-12 minutes. Cool in basket 2 minutes. Remove to wire racks to cool completely., In a small bowl, mix confectioners' sugar and enough lemon juice to reach a drizzling consistency. Drizzle over cookies. Let stand until set., To Make Ahead: Dough can be made 2 days in advance. Wrap and place in a resealable container. Store in the refrigerator., Freeze option: Place wrapped logs in a resealable container and freeze. To use, unwrap frozen logs and cut into slices. Cook as directed, increasing time by 1-2 minutes.

These cookies are delicious on their own but I like the extra zing you get from icing them with a lemon-powdered sugar mixture. Prep and freeze the cookie dough (will keep in the freezer for up to 3 months!) and when you're having a craving, slice and pop them in your air fryer and they will be ready in less than 10 minutes.

Steps:
- Cream butter, sugar, and pudding mix together in a bowl. Beat in egg, lemon juice, and 1/2 of the lemon zest. Set aside remaining lemon zest for icing.
- Sift flour, baking powder, and salt together in another bowl. Add to butter-pudding mixture and beat until well combined. Roll dough into 2 logs, wrap in plastic wrap, and freeze until firm, about 4 hours.
- Preheat an air fryer to 325 degrees F (165 degrees C). Line the air fryer basket with parchment paper.
- Slice frozen dough into 1/4-inch slices and place in the prepared basket.
- Air fry cookies, working in batches, until edges start to brown, 6 to 10 minutes. Remove from the air fryer and leave in the basket until cool to the touch, then place on a wire rack to cool completely.
- While cookies are baking, combine powdered sugar, lemon juice, and reserved lemon zest in a bowl. Dip 1 side of each cookie in icing. Let icing set until hardened, about 2 minutes.

TWO-INGREDIENT AIR FRYER BAGELS
The base for these homemade bagels is a popular 2-ingredient pizza dough recipe. No yeast, no waiting for dough to rise, no boiling necessary. In and out of the air fryer in about 15 minutes. Optional toppings are everything bagel seasoning, poppy seeds, sesame seeds, or dried onion flakes.

- Using a fork, mix flour and Greek yogurt together in a medium bowl until a crumbly dough forms. If mixture is too thick, add a little more yogurt or if too sticky, add a bit more flour.
- Transfer dough to a lightly floured work surface, and knead until smooth, 5 to 7 minutes. Divide the dough evenly into 4 balls, rolling and stretching each into 3/4-inch thick ropes that are about 8- to 9-inches long. Connect both ends, pinching and sealing to form a bagel. Brush with egg white, and sprinkle with bagel seasoning.
- Preheat an air fryer to 280 degrees F (137 degrees C). Line the fryer basket with a parchment liner or spray lightly with cooking spray.
- Place the bagels in the basket, and cook until golden brown, 15 to 16 minutes. Do not crowd the basket, and cook in two batches if your air fryer is small.
- Remove to a rack, and cool for about 15 minutes before slicing.

- Preheat air fryer to 300°. Beat banana, peanut butter, honey and vanilla until blended. In another bowl, combine oats, flour, milk powder, cinnamon, salt and baking soda; gradually beat into banana mixture. Stir in dried cranberries., In batches, drop dough by 1/4 cupfuls 2 in. apart onto greased tray in air-fryer basket; flatten to 1/2-in. thickness., Cook until lightly browned, 6-8 minutes. Cool in basket 1 minute. Remove to wire racks., Serve warm or at room temperature. , Freeze option: Freeze cookies in freezer containers, separating layers with waxed paper. To use, thaw before serving or, if desired, reheat in a preheated 300° air fryer until warmed, about 1 minute.
