Steps:
- Warm tortillas in the microwave for about 8 seconds if already at room temp or up to 15 seconds if it was in the refrigerator.
- Brush or spray the warm tortillas with oil on both sides.
- Drape tortillas over store bought air fryer taco mold or homemade foil abs rack method.
- Air fry at 400°F / 204°C for 5 to 6 mins
- Let it cool completely before filling with all the taco goodies.

- In a medium sized skillet, add the turkey and brown.
- Drain if needed, add in the taco seasoning as instructed on the package.
- Build taco with the shell, cooked meat, lettuce, beans, and cheese.
- Add the tacos to the air fryer. It's best to foil line it and then spray with non-stick cooking spray. Note - Adding foil is optional if you do foil line the basket of the air fryer be sure not to fully cover it in order to allow the air to still flow.
- Cook on 355*F or 360*F for 4 Minutes until crispy. (Some Air Fryers have 355 degrees as an option and others only have 350 or 360 degrees)

I do not care for the premade taco shells sold at the supermarket. So I developed this recipe in my Cuisinart® Air Fryer Oven. These taco shells are crispy, golden brown, and ready to be stuffed with your favorite fillings. The best part is they are oil free and greaseless.

- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place a mini muffin tin pan upside down the air fryer basket. Position tortillas in the indents of the muffin tin. Place the basket on the lowest rack of the air fryer oven.
- Air fry until golden brown and crispy, about 3 minutes. Remove tortillas from mini muffin tin pan and place upside down in the basket. Air fry until bottom side is crispy and golden brown, 1 minute more.

Today, I made a version of my mother's Stuffed Shells, but I used the air fryer. Here is my recipe for Air Fryer Italian Baked Stuffed Shells.

- Make the shells are directed on the package.
- In a small mixing bowl, mix the ricotta cheese, 1/2 cup of the mozzarella cheese, parsley, Italian seasonings, and egg.
- Spread a layer of pasta sauce on the bottom of your pan.
- Fill the shells with the ricotta mixture, place them onto the baking pan.
- Cover the pasta shells with pasta sauce.
- Sprinkle 1/2 cup of the shredded mozzarella on top.
- Set into the air fryer at 300 degrees F for 10-15 minutes.
- Bake until the cheese starts melting, and the sauce is bubbly.
- Plate, serve, and enjoy!

- Sauté onions in olive oil, till soft and fragrant
- Add the ground beef, break up ground beef to small bits and cook till browned and no longer pink
- Drains some of the fat off the skillet if any. Then add the taco seasoning and tomato sauce. Turn heat down to a simmer and cook for up to 5 mins.
- Taste for seasoning and adjust accordingly. Turn off heat and set aside
- Scoop taco meat onto the Taco shells
- Scoop on some Pico de Gallo, then top it off with some shredded cheddar cheese.
- The warm taco meat should melt the cheese slightly. However if it doesn't, place the tacos in the air fryer basket and air fry at 330°F / 165°C for about a minute to melt the cheese

- In a large pot of boiling salted water, cook pasta shells according to package instructions. Shells should be fully cooked, not al dente. Drain pasta and rinse with cool water.
- Cupping a pasta shell in your palm, place about a tablespoon of the carnitas into the shell. Wedge a stick of cheese over the carnitas.
- Wrap a second shell over the open side of stuffed shell to form a "lid."
- Spray the bottom of the air fryer basket with nonstick cooking spray.
- Set the stuffed shells in the basket of the air fryer, leaving just a bit of space between each shell.
- Continue assembling the stuffed shells. Once the air fryer basket is filled, you can begin cooking the batch.
- Spray the tops and exposed sides of the stuffed shells in the basket. Cook at 400°F for 13 minutes until the shells are crispy and light golden brown.
- Remove shells from the basket and keep warm while cooking the remaining batches.

- In a large dish, bowl, or a ziplock bag, whisk together the orange juice, garlic, oil, vinegar, coriander, paprika, oregano, cumin, pepper, and salt. Add the chicken thighs and marinate covered in the fridge for 2 hours. Do not marinate for more than 4 hours otherwise the chicken will start to break down.
- Remove the chicken from the marinade, lightly brush the basket with oil, and place the chicken in a single layer in the air fryer basket and cook at 360°F for 12 minutes, flipping halfway through.
