Clean Eating - Refried Beans image

This is a healthy alternative for the typical saturated fatty refried beans. Don't let the time scare you off. I soak them while I sleep and cook them during the day, so by dinner it is only 10 minutes from stove top to table. Not much longer than preparing a processed can product.

3 cups dried pinto beans
16 ½ cups water, divided
3 tablespoons olive oil
½ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Place beans in a slow cooker and cover with 8 cups water; soak for 8 to 10 hours.
  • Drain and rinse beans and return to slow cooker; top with 8 cups fresh water.
  • Cook beans on Low for 8 to 10 hours. Drain.
  • Combine 1/2 cup water, beans, olive oil, salt, and pepper in a skillet over medium heat; mash beans to desired consistency.

Healthier Refried Beans image

These were so easy, fast and tasted wonderful. Makes a very small amount, which is nice if you have a smaller family. From Eillie Krieger's Healthy Appetite show. If you like it smoother, you can use a potato masher or a stick blender to mush the beans.

1 tablespoon olive oil
1/2 medium onion, diced
2 -4 garlic cloves, minced
1 teaspoon dried ancho chile powder (or other chili powder)
1 (15 ounce) can pinto beans, drained and rinsed
2/3 cup low sodium chicken broth, plus more if needed
salt and pepper
2 tablespoons fresh cilantro leaves, chopped

Steps:

  • Heat the oil in a large skillet over medium heat.
  • Add the onion and cook until tender, about 3 minutes.
  • Stir in the garlic and chili powder and cook for 1 minute more.
  • Stir in the beans and chicken broth and cook until the beans are warmed through, about 5 minutes.
  • Mash the beans coarsely with the back of a wooden spoon, adding more chicken broth to moisten, if needed.
  • Season with salt and pepper, to taste.
  • Stir in the cilantro.

  • I cook my beans in a slow cooker because I ALWAYS burn them in a regular pot. So combine the 2 cups beans and 6 cups water in a crock pot and turn on the crock pot. Cook until beans are soft. About 6-8 hours. (You can do it in a pot if you want. Just know I'll be jealous if you can do it without burning the beans.)
  • In a large pan, place all other ingredients and warm over medium heat, while smashing the beans with a potato smasher.
