3/4 cup Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour
1/2 cup quick-cooking oats
3 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups vanilla soymilk
2 tablespoons canola or vegetable oil
1/4 cup fat-free egg product
1 cup Cascadian Farm® frozen organic blueberries, thawed, drained
Syrup or fresh fruit, if desired

Steps:

  • Lightly spray waffle maker with cooking spray; heat waffle maker. In large bowl, mix all-purpose flour, whole wheat flour, oats, baking powder and salt. In small bowl, mix soymilk, oil and egg product until well blended. Add soymilk mixture to flour mixture all at once; stir just until large lumps disappear. Gently stir in blueberries.
  • Pour slightly less than 1 cup batter onto center of hot waffle maker, spreading batter to edges. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker.
  • Bake 3 to 5 minutes or until waffle is golden brown and steaming stops. Carefully remove waffle. Serve immediately. Repeat with remaining batter. Serve with syrup or fruit.

Number Of Ingredients 9

1 1/3 cups whole spelt flour or 1 1/3 cups whole wheat flour
1 cup unprocessed natural bran or 1 cup spelt natural bran
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs, separated
1/3 cup sucanat or 1/3 cup brown sugar
1 1/2 cups almond milk or 1 1/2 cups milk
1/2 cup vegetable oil or 1/2 cup melted butter
1 1/2 cups blueberries (fresh or frozen)

Steps:

  • In a large bowl, stir together the flour, bran, baking powder and salt.
  • In a small bowl, with an electric mixer, beat the egg whites just until stiff.
  • In a medium bowl, lightly beat the egg yolks and sucanat with the mixer. With a spoon, stir in the milk and oil. Stir the egg yolk mixture into the flour mixture until just moistened; don't beat.
  • With a rubber spatula, gently fold the egg whites and blueberries into the batter. Bake according to your waffle iron instructions.

Number Of Ingredients 13

4 cups whole wheat flour
2 cups all-purpose flour
1 cup toasted wheat germ
1 cup toasted oat bran
1 cup buttermilk blend powder
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
ADDITIONAL INGREDIENTS:
2 eggs
1 cup water
2 tablespoons canola oil
2 tablespoons honey

Steps:

  • In a large bowl, combine the first eight ingredients. Store in an airtight container in the refrigerator for up to 6 months. Yield: 8-1/2 cups mix (about 4 batches)., To prepare waffles: Place 2 cups waffle mix in a bowl. Combine the eggs, water, oil and honey; stir into waffle mix just until moistened. Bake in a preheated waffle iron according to manufacturer's directions until golden brown.

This is an attempt at eating healthier, while still preserving good taste! These waffles cook up nice and fluffy, while the oat bran and whole wheat flour make them healthier. Serve with your favorite fruit or syrup.

3/4 cup oat bran
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups skim milk
3 tablespoons vegetable oil
1 egg yolk, beaten
2 egg whites

Steps:

  • Combine the oat bran, whole wheat flour, all-purpose flour baking powder and salt.
  • Combine the milk, oil, and egg yolk; add to the dry ingredients, stirring just until moistened.
  • Beat egg whites at high speed with an electric mixer until stiff peaks form; gently fold into the batter.
  • Coat a waffle iron with cooking spray, and allow waffle iron to preheat. Spoon 1 1/3 cups batter onto hot waffle iron, spreading batter to edges. Bake until lightly browned. Repeat with remaining batter.
  • Serve immediately with desired toppings.

I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

2 eggs, beaten
1 ¾ cups skim milk
¼ cup canola oil
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
½ cup flax seed meal
¼ cup wheat germ
¼ cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt

Steps:

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

2 cups milk
2 eggs
⅓ cup vegetable oil

1 tablespoon lemon juice

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Prepare the cooking surface with cooking spray.
  • Beat flour, milk, eggs, vegetable oil, baking powder, and salt together in a bowl using an electric mixer until batter is thoroughly mixed.
  • Pour about 1/4 cup batter per waffle into the preheated waffle iron and cook according to manufacturers' instructions.
  • Stir blackberries together in a saucepan over high heat until heated through, 3 to 4 minutes. Decrease heat to medium and add sugar, cornstarch, and lemon juice to blackberries; cook and stir until sauce is thickened, about 5 minutes.
