AIR FRYER CHICKEN STRIPS
Simple, basic air-fried chicken strips that are crunchy on the outside, tender on the inside, and packed full of flavor. Dip in ranch or your favorite dipping sauce.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Combine flour, paprika, parsley, seasoned salt, and pepper in a large bowl. Beat egg in a separate bowl.
- Dredge each chicken strip first in the seasoned flour, then in beaten egg, then back in the seasoned flour.
- Place as many strips in the basket as you can without overcrowding. Lightly mist the tops of the strips with cooking spray. Cook for 8 minutes. Flip strips over and lightly mist the tops with more cooking spray. Cook for 8 minutes more. Repeat with any remaining strips.

- Preheat air fryer to 375°. Flatten chicken to 1/2-in. thickness; cut each thigh in half. Place pecans in a shallow dish. In another shallow dish, whisk together egg, milk, salt, pepper and pepper sauce. Dip chicken in egg mixture, then coat with pecans. In batches, arrange chicken in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, turning once, 8-10 minutes. , Meanwhile, combine jam ingredients in a saucepan over medium-high heat. Bring to a boil, reduce heat and simmer until thick, 1-2 minutes. Remove from heat; crush berries to desired consistency. For slaw, in a large bowl, combine coleslaw mix, mayonnaise, sugar and lime juice. To assemble, spoon 1 heaping tablespoon jam onto bottom of each roll. Layer with hot chicken and slaw; replace tops.

- Stir together mayonnaise and mustard in a small bowl. Combine the pecans, panko bread crumbs and parmesan cheese in a shallow dish.
- Coat the chicken on both sides in the mayonnaise mixture and roll in the pecan mixture. Place chicken on a baking rack and refrigerate one hour.
- Place half of the chicken tenders in the basket of air fryer. Spray chicken lightly with cooking spray.
