AL ROKER'S CHEDDAR-CRUSTED SHEPHERD'S PIE



Al Roker's Cheddar-Crusted Shepherd's Pie image

Number Of Ingredients 16

5 cups mashed, boiled Yukon potatoes (shortcut: You could use instant potatoes)
1/2 cup sour cream
3 ounces cream cheese
1 egg yolk
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon olive oil
1 1/2 pounds ground lamb (or beef)
1 can diced tomatoes with juice (16-ounce can)
1 bag small bag of frozen vegetable medley (carrot, peas, onion, corn)
1 cup good stout beer
1 cube beef bouillon
1 tablespoon cornstarch, mixed with a enough water to make a paste
1 teaspoon smoked paprika
1 1/2 cups sharp cheddar cheese
1 tablespoons chives

Steps:

  • Start with bowl of mashed Yukon potatoes. Add sour cream, cream cheese, cheddar cheese, chives, egg yolk, teaspoon of salt, and teaspoon of black pepper and stir until smooth. Heat oil in skillet over medium-high heat.
  • Add lamb and cook until browned. Pour off any excess grease, and season with salt and pepper. Add tomatoes with liquid and vegetable medley and cook for 5 to 10 minutes
  • While that is cooking, in a small saucepan heat beer and add beef bouillon. Bring up to a simmer and add cornstarch mixture. Then add that to lamb mixture and simmer until thickened.
  • Grease a 9x13-inch baking dish. Pour in lamb mixture. Spoon mashed potatoes over and make sure the potatoes cover all meat mixture. Top with 1 cup cheese and sprinkle paprika over the casserole. Pre-heat oven to 350'F.
  • Cook covered with foil until hot. If the the ingredients are still hot when it goes in the oven, bake 25-30 minutes. If the casserole ingredients are cold, bake for about 45 minutes.
  • Uncover and place under broiler until cheese is bubbly and golden, about 2 minutes.

One 9-inch refrigerated pie crust
1 tablespoon butter
1 small yellow onion, diced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup gravy, plus 1/4 cup warmed for drizzling
1 cup whole milk, at room temperature
3 cups diced turkey
1 cup glazed carrots, chopped
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen peas
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1/2 teaspoon chopped fresh oregano
2 cups mashed potatoes
1/4 cup freshly grated Parmesan

Steps:

  • Place a rack on the top of the oven and preheat to 450 degrees F. Press the dough into a pie plate, prick the bottom of the crust with a fork and flute the edges. Bake the crust until golden, about 10 minutes.
  • Heat the butter in a large saucepan over medium heat. Cook the onions, stirring occasionally until they are softened, about 5 minutes. Add the garlic, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper, and cook until fragrant, about 1 minute. Stir in 1 cup of the gravy and the milk, and bring to a boil. Reduce the heat and simmer until thickened, about 5 minutes. Stir in the turkey, carrots, corn, peas, parsley, thyme, oregano, and the remaining 1/4 teaspoon salt and 1/8 teaspoon pepper, making sure all of the ingredients are evenly coated with the gravy. Simmer until the mixture is warmed through, about 5 minutes. Pour the mixture into the pie shell. Use a spatula or wooden spoon to spread the mashed potatoes evenly over the mixture, making sure the potato layer meets the edges of the crust. Cover the potatoes with the cheese. Bake the pie until the top is golden, 25 to 30 minutes.
  • To serve, cut into slices and drizzle with gravy.

2 pounds baking potatoes (about 4), peeled and thinly sliced
Coarse salt and ground pepper
1 tablespoon vegetable oil, such as safflower
6 medium carrots, halved lengthwise, quartered if large, and thinly sliced
6 celery stalks, thinly sliced
1 large onion, chopped
1/2 teaspoon dried thyme
1/4 cup all-purpose flour
1/4 cup tomato paste
2 pounds ground beef chuck
1 cup whole milk
1 1/2 cups shredded sharp white cheddar (6 ounces)

Steps:

  • Preheat oven to 450 degrees. Place potatoes in a large saucepan, and cover by 1 inch with salted water. Bring to a boil; reduce to a simmer. Cook until potatoes are easily pierced with the tip of a paring knife, 15 to 20 minutes.
  • Meanwhile, heat oil in a 5-quart Dutch oven or heavy pot over medium-high. Add carrots, celery, onion, and thyme. Cook, stirring occasionally, until vegetables are tender, 8 to 10 minutes. Add flour and tomato paste; cook, stirring, 1 minute. Add beef; cook, stirring occasionally, until no longer pink, 6 to 8 minutes. Add 1 cup water; bring to a boil, and simmer 1 minute. Set beef filling aside.
  • Drain potatoes; return to pan. Cook over medium, stirring, until liquid has evaporated and a thin film covers bottom of pan, about 1 minute. Remove pan from heat; add milk and 1 cup cheese. Mash until smooth; season cheddar-potato topping with salt and pepper.
  • Pour beef filling into a 13-by-9-inch baking dish. Drop dollops of topping over filling; spread to edges with a spatula. Using a fork, make decorative peaks; sprinkle with remaining 1/2 cup cheese. Bake until topping is browned and filling is bubbling rapidly, about 20 minutes (if topping and filling were chilled, increase to 35 minutes). Let stand 5 minutes before serving.

This is a southern twist on the traditional shepherd's pie. With a deep-dish bottom crust, a rich hamburger and veggie filling, topped with browned cheddar mashed potatoes. This has become a family favorite!

2 lbs hamburger meat
2 pre-made deep dish pie shells
3 medium onions
1 tablespoon chopped garlic
5 -6 medium potatoes
1 (12 ounce) can beef consomme
1 (12 ounce) can whole kernel corn
1 (12 ounce) can sweet peas
1 (12 ounce) can carrots
1 1/2 cups cheddar cheese
1/2 cup milk
3 tablespoons all-purpose flour
2 tablespoons mayonnaise
4 tablespoons butter
1 tablespoon extra virgin olive oil
3 tablespoons ketchup
Worcestershire sauce
salt
pepper

Steps:

  • Pre-bake pie crusts according to instructions on crusts - or at 400 degrees until light brown, for about 15 minutes. Let cool.
  • Boil 5 or 6 medium peeled potatoes until tender. Drain and mash with 1/2 cup of milk, 2 tablespoons of butter, 2 tablespoons of mayonnaise, and 1 teaspoon of salt.
  • Mix with a mixer on high speed until fluffy. When cooled a little, fold in about 1 1/2 cups of grated cheddar cheese.
  • Dice up onions and saute over medium high heat in a little EVOO and butter with about a tsp of salt.
  • Add chopped garlic, and continue to cook until onions are tender.
  • Remove onion mixture.
  • Brown hamburger in the same pot with about a teaspoon of worcestershire sauce.
  • Add onion mixture back to pot with 2/3 can of beef consomme and 3 tablespoons of ketchup, a teaspoon of salt and pepper. Cover pot with a tight-fitting lid and cook over medium heat, stirring occasionally, for about 15 minutes.
  • Mix about 3 tablespoons of all-purpose flour in with the remaining consomme until all lumps are gone. Raise heat until the meat mixture begins to boil. Slowly add the consomme flour while stirring quickly, and continue to stir and boil for about 1 minute after all of the flour is added. Remove from heat.
  • Fold in the drained corn, peas, and carrots.
  • Spoon the mixture into the cooled pie crusts.
  • Pipe the cheddar mashed potatoes on top of the pies to form a decorative top crust.
  • Bake at 425 degrees for about 15 minutes, or until the potatoes brown on top.
  • Let cool for about 10 or 15 minutes before serving.

1 pound lean ground beef
1 large onion, diced
1 green bell pepper, chopped

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the potatoes into a saucepan and fill with enough water to cover. Bring to a boil, and cook for 15 minutes, or until tender. Drain and mash with margarine and milk until fairly smooth.
  • Meanwhile, crumble the ground beef into a large skillet over medium-high heat. Add onion and bell pepper. Cook and stir until beef is browned; drain excess fat.
  • Place the beef and onion mixture into the bottom of the pie shell, pour the cream-style corn over it. Spread mashed potatoes to cover the top of the pie.
  • Bake for 30 minutes in the preheated oven, or until the pie crust and potatoes are golden brown.
