THE WORLD'S BEST ALL-PURPOSE MEAT MARINADE

The World's Best All-Purpose Meat Marinade image

This versatile meat marinade adds so much flavor to your meat. It helps to tenderize and infuse your steak, pork chops, or chicken with taste plus making it tender.

Provided by Marisa Franca

Categories     Main Course Meat

Time 10m

Number Of Ingredients 10

2/3 cup olive oil
2/3 cup soy sauce
10 garlic cloves (minced)
6 tbsp light brown sugar
4 tbsp Worcestershire sauce
4 tbsp hot sauce
2 tbsp dijon mustard
2 tbsp apple cider vinegar (*** see notes)
2 tsp red pepper flakes
1 tsp black pepper

Steps:

  • Add all of the ingredients to a medium size glass bowl.
  • Using an immersion blender, blend all of the ingredients together.
  • Pour the marinade into a glass jar and screw on the lid. Let the flavors meld in refrigerator overnight.
  • When ready to use, place the meat in a zip lock bag. Pour enough of the marinade over the meat so that it is covered with the seasoning.
  • Marinate for at least 1 hour or up to 24 hours. The longer it marinates, the better the seasoning penetration.
  • If you're marinating chicken, marinate under 2 hours. The texture of the meat does not do well with long marinates in acidic liquids such as vinegars or citrus.

ALL PURPOSE TERIYAKI MARINADE

All Purpose Teriyaki Marinade image

My mother-in-law gave me a marinade recipe for chicken wings back in the days before teryaki was a common household word. Through the years, I have adjusted it to suit my family's taste. I mentioned the brand name because I feel it has the best flavor. Light soy is even more important for the even taste.

Provided by tpr3cats

Categories     Sauces

Time 30m

Yield 6 serving(s)

Number Of Ingredients 6

2/3 cup kikkoman light soy sauce
1/3 cup water
3 tablespoons sugar (I've been using Splenda)
1/4 teaspoon ground ginger
1 minced garlic clove (I use 1 1/2 t. of the jar stuff)
2 tablespoons vegetable oil

Steps:

  • Combine all ingredients in a covered container, and shake well.
  • Pour over meat or vegetables, and marinate, preferably overnight.
  • If marinating wings, cut several slits through the skin.
  • Boneless breasts are better if pounded with a meat mallet before marinating.
  • I like to use a gallon sized zipper bag for the marinating.
  • Throw away any unused marinade.
