GLAZED ALMOND COOKIES
Elegant little tea cookies with an almond pressed into the top. I like to cut the whole almonds in half to put on top of the cookies.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream the butter and sugar until light. Beat in the almond and vanilla extracts and the egg yolks. Next, stir in the chopped almonds, flour and salt. Roll the dough into 1 inch balls, dip the balls into the egg whites. Place cookies 2 inches apart on the prepared cookie sheet. Press a whole almond into the top of the ball, flattening the cookie a little bit.
- Bake for 8 to 10 minutes in the preheated oven, until edges start to brown.

- Preheat oven to 375°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in milk and vanilla. Gradually beat in flour., Cut almond paste into 12 slices (about 1/4 in. thick); cut each into quarters. Shape into balls. Wrap tablespoons of cookie dough around almond paste to cover completely. Place 2 in. apart on ungreased baking sheets., Bake 10-12 minutes or until golden brown. Remove to wire racks to cool completely., In a small bowl, mix vanilla icing ingredients until smooth. For chocolate icing, mix confectioners' sugar, cooled chocolate, milk and vanilla until smooth. Dip cookies in icings as desired; allow excess to drip off. Decorate with sprinkles. Place on waxed paper; let stand until set. Store in airtight containers.

ROSEWATER-ALMOND BONBON COOKIES

Steps:
- Line 2 baking sheets with parchment paper.
- In a medium mixing bowl, combine confectioners' sugar, butter, brown sugar, cream, and rose water, beating at medium speed with a mixer until smooth.
- In a small bowl, combine flour and salt, whisking well. Add to butter mixture, beating until a dough forms. (If mixture seems dry, add more cream, 1 teaspoon at time.)
- Using a levered 1-tablespoon scoop, divide dough into 18 portions, pressing an almond into each dough portion while still in scoop. Place portions 2 inches apart, rounded side up, on prepared baking sheets.
- Bake until cookies are set but not brown, 11 to 12 minutes. Remove cookies from baking sheets, and let cool completely on wire racks.
- Dip tops of cookies into Rose Water Glaze, and return to cooling racks. Let glaze dry completely.
- Store cookies in an airtight container until serving time.
- If desired, place in treat cups, such as Wilton, to serve.
CHERRY BONBON COOKIES

STAMIE'S ALMOND COOKIES

- Preheat oven to 350 degrees.
- Combine almonds and 1/2 cup sugar and set aside.
- Melt the butter and the shortening mixture together. Combine the shortening mixture with 1 1/2 cups sugar in a mixing bowl and mix well. Add the 3 eggs and continue mixing until creamy. Add the brandy, almond extract, butter flavoring, and the baking powder. Mix well. Slowly begin adding the flour, and beat until the mixture leaves the side of the bowl. Set aside.
- Spray the cookie sheets with cooking spray and then wipe them off.
- Using a small ice-cream scoop, begin cutting the balls out of the dough. Press a ball of cookie dough down, using a clear plastic lid from the baking powder can, so they will all be the same size.
- Pick up 1 cookie at a time, and brush with the egg white mixture, and press into the topping mixture. Press the cookie down, pick it up to shape it in your hand, and press your finger in the middle to make a dent.
- Bake in the oven for 20 to 25 minutes until golden. When serving, put a 1/2 teaspoon of the apricot preserve in the middle of the cookie.

- Heat oven to 400°.
- Combine butter, sugar and almond extract in large bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Reduce speed to low; add all remaining cookie ingredients.
- Beat until well mixed.
- Roll dough into 1 inch balls; place 2 inches apart on ungreased cookie sheet.

- In medium bowl with hand, knead first 6 ingredients until mixed.
- Preheat oven to 350. Reserve 3 tablespoons semi-sweet chocolate pieces for later garnish. With hands shape about 2 rounded teaspoons cookie dough around about 6 semi-sweet chocolate pieces; roll into a ball. Place cookie on ungreased cookie sheet, pressing gently to flatten bottom of cookie and shaping dough with fingers into rounded peaks. Repeat with remaining dough and chocolate pieces, placing cookies 1 inch apart on cookie sheet. Bake 15 minutes or until cookies are set, but not brown. (Cookies become firm when cool.)Remove cookies to wire rack to cool, about 1 hour.
- When cookies are cool, prepare Almond Glaze. Dip cookies into glaze; let dry on wire rack over waxed paper, about 30 minutes.
- In heavy small saucepan over low heat, heat corn syrup and reserved chocolate pieces until melted. With Spoon drizzle mixture over glaze on cookies; allow to dry, about 15 minutes. Store cookies in tightly covered container.
- Almond Glaze: In small bowl with spoon, stir 2 1/4 cups confectioner's sugar, 3 tablespoons water, 2 tablespoons light corn syrup, 1 1/2 teaspoons vegetable oil, 3/4 teaspoon almond extract and 3 to 4 drops red food coloring until smooth.
