ALMOND BUTTER CAKE

- Preheat the oven to 325°F. Butter a 9-inch round baking dish.
- Use an electric mixer to combine the sugar and butter in a mixing bowl until creamy. Add the egg and beat until smooth. Mix in the almond paste until blended, and stir in the flour.
- Spread the batter (it will be thick) in the prepared baking dish. Sprinkle with almonds and lightly press them in. Bake for 30 to 35 minutes or until the cake tests done in the middle.
- Cool in pan for 10 minutes; remove to a wire rack to cool completely. Slice and garnish, if desired.

- For glaze:
- Generously butter 12-cup bundt or tube pan.
- Melt 1/3 cup butter in heavy small saucepan over medium heat.
- Add almonds and stir 1 minute.
- Add sugars, corn syrup and almond extract and stir until sugars dissolve and glaze bubbles, about 2 minutes.
- Pour into prepared pan, distributing evenly.
- Dust pan with breadcrumbs.
- For cake:
- Position rack in center of oven and preheat to 350 degrees.
- Sift together flour, baking powder and salt.
- Using electric mixer, beat butter until softened.
- Gradually add sugar and beat until light and fluffy.
- Beat in eggs, 1 at a time.
- Blend in vanilla and almond extract.
- Beat in dry ingredients and milk alternately, beginning and ending with dry ingredients; do not overmix.
- Pour batter into prepared pan.
- Bake until cake is golden brown and tester inserted in center comes out clean, about 1 hour, covering with foil if top browns too quickly.
- Invert onto rack and let cool to room temperature.

- Preheat your oven to 350 degrees F. Grease a 9-inch cake pan.
- In a large bowl, stir together sugar and butter until blended. Stir in eggs, one at a time, mixing well. Stir in almond extract, vanilla, and salt. Stir in flour until it is mixed in well.
- Pour the batter into cake pan. Smooth the top. Sprinkle sugar over the top. Sprinkle with almonds.
- Bake for 35 to 40 minutes or until top is golden. Using a toothpick won't work with this cake!
- Cut into wedges and serve warm, chilled, or at room temperature.

This is a hand me down recipe.this was handed down from one of my friends mom. She would make this once a week.

- preheat to 350°F.
- CRUST:.
- mix in a large bowl cake mix, melted butter, egg, and almonds.
- Blend with mixer on low speed for 2 minutes.
- The batter should form a ball.
- Place batter into an ungreased 13 x 9-inch baking pan. evenly over the bottom.
- Set the pan aside.
- FILLING:.
- Mix cream cheese until fluffy.
- Add the eggs, almond extract, and melted butter and beat on medium speed for 1 minute.
- Add the powered sugar.
- Beat on medium speed until the sugar is well blended in about 1 minute.
- Pour the filling onto the crust and spread so that the filling covers the entire surface and reaches the sides of the pan.
- Place in oven.
- Bake the cake for 45 minutes or until brown.
- The cake will not look done it's supposed to look that way.
- Remove the pan from the oven and place on wire rack to cool, then cut into squares and serve.

ALMOND CRUNCH CAKE
This is probably my favorite cake, frosted with whipped cream and almond brittle. The recipe is from Flavors, a San Antonio Junior League cookbook, and is served at their Bright Shawl Tearoom. I think Old San Francisco Steak House used to serve a similar crunch cake. Making the cake is not difficult but takes some time. In a pinch, you could use an angel food cake and put together as directed.

- CAKE: Sift together flour and 3/4 c sugar.
- Make a well in the center, add egg yolks, water, lemon juice, vanilla and beat until smooth.
- Beat egg whites, cream of tartar and salt just until soft peaks form.
- Add remaining sugar, 2 T at a time, continuing to beat until stiff.
- Fold flour mixture gently into egg whites.
- Pour batter into an ungreased 10-inch tube pan.
- Cut carefully through the batter, going around tube 5 or 6 times with a knife to break air bubbles.
- Bake at 350 for 50-55 minutes or until top springs back when lightly touched.
- Invert pan 1 hour or until cool.
- Remove cake and split into 4 equal layers.
- ALMOND BRITTLE TOPPING: Combine sugar, coffee, syrup, and water in a saucepan, stirring well.
- Cook to hard crack stage, 290 degrees, remove from heat and add soda.
- Stir vigorously until mixture blends and pulls away from sides of pan.
- Quickly pour into an ungreased shallow baking pan.
- Let stand until cool.
- Knock out of pan and crush candy with a rolling pin into small chunks.
- Whip cream and fold in sugar and vanilla.
- Spread half of cream between layers and remainder over top and sides.
- Cover top and sides with candy, lightly pressing into cream.
- Decorate with almonds.
- Do not press candy and almonds into cream more than 6 hours before serving.
- Refrigerate.

Steps:
- Preheat oven to 350-degrees.
- Melt the butter in a small saucepan over medium-low heat, stirring regularly.
- Pour the melted butter and 1 1/2 cups sugar into a large bowl and stir until smooth.
- Crack the eggs right into the same bowl and mix until the batter is creamy and all one color.
- Add the salt, almond extract, vanilla extract, and flour and stir briskly until the batter is smooth.
- Grease the bottom and sides of a 9-inch round cake pan with butter or nonstick cooking spray.
- Using a rubber spatula, scrape the batter from the bowl into the greased cake pan.
- Spread it evenly in the pan.
- Sprinkle the tablespoon of sugar, then the sliced almonds, over the top of the batter.
- Put the pan on the middle rack of the oven and set the timer for 35 minutes.
- When it rings, check to see if the cake is done.
- It should be light brown on top, and when you insert a toothpick in the center, it should have a few sticky crumbs adhering to it.
- If the cake is not browned enough and the toothpick comes out too wet, put the cake back in the oven and check it again in another 10 minutes.
- When the cake is done, remove it from the oven and let it cool on a heatproof counter for at least 30 minutes.
- Cut the cake into small wedges and serve with fresh fruit.
- This cake will stay fresh for about a week and will freeze indefinitely.
- Wrap it tightly in foil, or in a plastic bag you can seal with a zip or tie.
- Storing nuts: Whenever you have leftover nuts, freeze them in a plastic bag closed tightly.
- They will keep indefinitely in the freezer.
