AMANDA'S "ALMOST FAMOUS" LASAGNA

I call this recipe "almost famous" because my family requests this lasagna almost as much as my famous Skirt Steak with Chimichurri Sauce! I'm a huge fan of keeping recipes classic when they're perfect as is, and lasagna is no exception. It's all about the meat/red sauce/cheese ratio. (We go heavy on the meat and cheese.) And the noodles? I love the no-boil version, whether they are made with flour or Gluten Free. (For gf, I like the Jovial brand.) If this becomes a hit in your house, you can always double the recipe and freeze one for a busy weeknight!

Number Of Ingredients 10

2 tsp olive oil
1 1/2 lbs bulk Italian sausage
2 25-oz. jars tomato-basil pasta sauce (or marinara)
Kosher salt
4 cups shredded mozzarella, divided
15 oz. whole milk ricotta, drained
3/4 cup grated, Parmesan, divided
Freshly ground pepper
1 egg, whisked
1 package lasagna noodles (12 noodles)

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute or sauce pan, warm the oil over medium heat. Add the sausage and spread it around the bottom of the, allowing it to brown before turning with a spoon. If it's easier, break up the sausage with a potato masher while it is in the pan to form bit-sized pieces. Continue to cook and stir until it is just cooked through, about 5-8 minutes.
  • Add all of the tomato sauce except a few tablespoons. (The reserved sauce will coat the bottom of the lasagna pan.) Stir to combine the sausage with the tomato sauce, then simmer for 10-15 minutes until the flavors meld. Taste, adding salt if necessary. (Many times the sausage has plenty of seasoning already.)
  • While the sauce simmers, make the cheese filling. In a medium mixing bowl, combine three cups of the mozzarella with the ricotta and 1/2 cup of the grated parmesan. Stir to combine. Taste, adding a pinch of salt and freshly ground pepper if needed.
  • Add the egg to the mixture and stir to incorporate.
  • Place the remaining cup of mozzarella and the remaining 1/4 cup of parmesan in a small bowl and toss to combine. Set aside.
  • To build the lasagna, spread the reserved tablespoons of tomato sauce across the bottom of a 8 X 12 or 9 X 13 baking dish. Place 4 of the lasagna noodles crosswise, allowing them to overlap a bit if necessary. (If the noodles you are using cover the length of the pan, place 3 of the noodles lengthwise to create the first layer.)
  • Drop ½ of the ricotta cheese mixture in spoonfuls across the noodles. Spread it out evenly with a spatula or even use your hands if necessary to create a fairly even layer. Pour 1/3 of the meat sauce over the cheese and spread with a spatula to cover.
  • Repeat with another layer of noodles, the remaining ricotta mixture, and ⅓ of the meat sauce.
  • Add the final layer of noodles, then the remaining sauce, ensuring the noodles are totally covered with the sauce.
  • Sprinkle the remaining mozzarella and parmesan over the entire lasagna.
  • Cover the pan tightly with a piece of aluminum foil. Place it on a baking sheet and bake for 45 minutes. Lift a corner of the foil and insert a knife in the lasagna. If it easily punctures the noodles, remove the foil and bake another 5 minutes until bubbly. If not, cover it again and cook for another 5-10 minutes.
  • Allow the lasagna to cool for 10-15 minutes before slicing. Serve immediately.

There are only two things you need for great lasagna: a thick, rich, super-meaty meat sauce and lots of it, and a ricotta filling where only the finest cheeses are welcomed. For the sauce, I love a combination of half Italian sausage and half lean ground beef. I also like lots of sauce.

1 ½ pounds lean ground beef
1 (8 ounce) package fresh mushrooms, coarsely chopped

¼ teaspoon red pepper flakes
6 cups prepared marinara sauce
2 tablespoons water, plus more as needed
2 eggs
2 pounds whole-milk ricotta cheese
1 (8 ounce) container fresh mozzarella cheese, diced
⅔ cup freshly shredded Parmigiano-Reggiano cheese
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
¼ cup chopped fresh parsley
1 (16 ounce) package lasagna noodles
1 (8 ounce) container fresh mozzarella cheese, diced
½ cup freshly shredded Parmigiano-Reggiano cheese

Steps:

  • Place sausage and ground beef into a large saucepan over medium heat; cook and stir until meat is browned and crumbly, about 10 minutes. Break the meat apart as it cooks. Stir in mushrooms, 1 teaspoon salt, 1/2 teaspoon black pepper, Italian herb seasoning, and red pepper flakes. Turn heat to medium-high and cook until mushrooms have given off their juices and bottom of pan is almost dry.
  • Pour prepared marinara sauce into meat mixture. Pour water into marinara sauce jar and shake to get all the sauce out of the jar; add to mixture. Reduce heat to low and simmer until meat is extremely tender, about 2 hours. Add a little more water if sauce becomes too thick. Skim excess fat from surface of the sauce and season with more salt and black pepper, if needed. Turn off heat.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs in a large bowl and stir in ricotta cheese, 8 ounces diced mozzarella cheese, and 2/3 cup Parmigiano-Reggiano cheese. Season cheese mixture with 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper; mix in parsley.
  • Bring a large pot of salted water to a boil. Cook lasagna in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse noodles and set aside in a bowl of cold water.
  • Spread 1/4 the sauce into the bottom of a 10x15-inch baking pan. Top with 1/3 the noodles and spread 1/2 the ricotta cheese mixture over noodles. Spread 1/4 the meat sauce over the cheese, top with 1/3 the noodles, and spread remaining 1/2 the ricotta mixture over the noodles. Spread 1/4 the meat sauce over the cheese filling. Tap the casserole dish lightly on a sturdy work surface to settle the layers. Arrange last 1/3 the noodles over sauce and spread remaining 1/4 the sauce over the noodles. Dot top of the casserole with 4 ounces diced fresh mozzarella cheese and sprinkle with 1/2 cup Parmigiano-Reggiano cheese.
  • Cover casserole with aluminum foil, being sure not to touch the top of the casserole with the foil. Place casserole onto a baking sheet to catch spills.
  • Bake in the preheated oven for 30 minutes. Remove foil and cook until lasagna is golden brown and bubbling, 30 to 35 more minutes. Let set for 20 minutes before cutting into squares.

28 oz. can crushed tomatoes
4 cloves garlic - chopped
1 onion - sliced
2 bay leaves
1/2 tsp. salt
1/2 tsp. black pepper

1 cup chicken broth
2 tablespoons olive oil
For Lasagna:
2 large zucchini's - sliced lengthwise with the skin
2 1/2 lbs. ground beef
6 medium to large potatoes
Olive oil for drizzling
1/2 cup milk
1 cup plain yogurt - plus 1/2 tsp. salt, 1/2 tsp. black pepper, 1/2 tsp. cinnamon, juice of 1/2 lemon

Steps:

  • For the Sauce: Heat a sauce pot with the olive oil. Add the onions and garlic and sauté on medium low until the onion is transparent. Add the crushed tomatoes and the chicken broth and continue to simmer on low. Add all of the seasonings and simmer on low; partially covered. For Lasagna: Preheat Oven 325 degrees: Sauté the ground beef in a frying pan and then drain any fat and set the ground beef aside. Boil the potatoes with the skin until fork tender; then let cool; slice and set aside.. Heat a large frying pan with two tablespoons of olive oil and sauté the zucchini slices until slightly golden; then set aside. Combine the yogurt, milk and all the seasoning and lemon juice. Briskly stir with a fork. Add the yogurt combination to the sautéed ground beef and toss. Drizzle two tablespoons of olive oil at the bottom of a baking pan and lay out a layer of potato slices. Spoon the ground beef mixture on top of the potatoes and then spoon the tomato sauce and grate cheese on top. Next, layer the zucchini and repeat with the potatoes and continue until everything is used up. Finish with the sauce and grated cheese. Bake 35-40 minutes.

This is a recipe from Rachael Ray. I have not tried it but it looks great! Easier than lasagna, because it's not, this pasta, meat sauce and ricotta toss-up is just as hearty and comforting as the layered Italian fave, but it's ready in a fraction of the time and with much less effort.

1 lb curly short cut pasta (recommended campanelle by Barilla, fusilli or cavatappi)
coarse salt
2 tablespoons extra virgin olive oil, 2 turns of the pan
1 lb ground sirloin
4 garlic cloves, chopped
1 medium onion, finely chopped
1/2 teaspoon crushed red pepper flakes, eyeball it in your palm
black pepper
1/2 teaspoon allspice, eyeball it in your palm
1 teaspoon Worcestershire sauce
1/2 cup dry red wine, a couple of glugs
1/2 cup beef stock
1 (28 ounce) can crushed tomatoes
1 1/2 cups part-skim ricotta cheese
1 cup fresh basil, about 20 leaves
1/2 cup grated parmigiano-reggiano cheese, a couple of handfuls, plus some to pass at table

Steps:

  • Heat a large pot of water to boil for pasta. Salt water and cook pasta to al dente. Heads up: you will need a ladle of the starchy cooking water to help form sauce before draining.
  • Heat a deep nonstick skillet over medium-high heat. Add extra-virgin olive oil, 2 turns of the pan. Add the meat and break it up into small bits as it caramelizes. Once meat has good color to it, 4 to 5 minutes, add garlic, onions and red pepper flakes and season with salt, pepper, allspice and Worcestershire sauce. Cook another 5 minutes, deglaze the meat and onions with red wine, cook off a minute, then combine about 1/2 cup of stock into the meat. Stir in the tomatoes and bring to a bubble. Reduce heat to medium low and simmer 5 minutes.
  • Place ricotta cheese in the bottom of a shallow bowl. Add a ladleful of boiling, starchy pasta water to the ricotta and stir to combine. Add a couple of handfuls of grated Parmesan to the ricotta and mix it inches.
  • Drain pasta. Toss hot pasta with cheeses. Add half the thick meat sauce to the pasta bowl and combine. Tear or shred the basil and add to the meat and pasta, toss again. Taste to adjust salt and pepper. Serve bowlfuls of Not-sagna with extra sauce on top and more grated Parmesan to pass at the table.

We make a version of lasagna that I call "Almost Lasagna" that is very versatile and easy to make ahead and heat later. Add crusty bread and bagged salad, and dinner is complete! To make the dish even cheaper, buy cheeses, pasta and sauce in bulk at your local warehouse store. Double or even triple the recipe and store in the freezer to bake off later.

1 lb ground turkey
1 (26 ounce) jar pasta sauce
freshly grated parmesan cheese
2 eggs

Steps:

  • Brown meat and drain well, if necessary.
  • While meat is cooking, stir together eggs, ricotta, grated Parmesan and salt and pepper.

Add the remaining macaroni mixture and top with another cup of mozzarella and another sprinkle of Parmesan. Cover with foil.
  • Heat your oven to 350°F and bake the casserole for 20 minutes. Uncover and bake for another 10 to 20 minutes until the cheese on top is lightly browned and bubbly.

½ cup flour
8 cups milk
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon nutmeg
½ cup olive oil
2 cups onion, finely chopped
2 cups carrot, finely chopped
2 cups celery, finely chopped
6 lb ground beef, 80% lean 20% fat
115 oz tomato sauce, 4 cans
½ cup tomato paste
4 cups chicken stock
1 tablespoon salt
½ tablespoon black pepper
110 no-boil flat lasagna noodles
2 cups grated parmesan cheese
1 cup fresh chives, finely chopped

Steps:

  • Lay down about 6 feet (1.8 meters) of tinfoil on a flat surface. Place place 4 clusters of 2 lasagna noodles towards the left half of the foil sheet, leaving about a ½-inch (1 cm) gap in between each cluster.
  • Fold the right half of foil over the noodles, pressing flat. To help you see where the noodles are, run your finger along the edges of the noodles to create a rough outline in the foil.
  • Fold the top and bottom flaps of foil over, creasing and pressing flat.
  • Flip the foil sheet onto the table so that it's now standing, then arrange into a square box, using the 4 groups of noodles as a visual guide. Fold and crease over any excess foil to join the ends together, then set aside.
  • In a large pot, melt the butter over medium heat.
  • Whisk in the flour, cooking until the mixture reaches a light golden color.
  • Slowly drizzle in the milk and bring to a boil, whisking constantly until smooth. Mix in salt, pepper, and nutmeg. Bring to a boil.
  • Transfer the béchamel to a large bowl and press plastic wrap onto the surface of the sauce to prevent a skin from forming. Set aside.
  • Heat oil in a very large pot over high heat. Once the oil begins to shimmer, add the onions, carrots, and celery and cook until the vegetables have started to sweat but aren't browning.
  • Add in the ground beef and use a wooden spoon or spatula to break up the meat into small pieces.
  • Cook the beef, stirring occasionally, until half of the liquid has evaporated.
  • Add in the tomato sauce, tomato paste, chicken stock, salt, and pepper, stirring to combine evenly and breaking up any last lumps.
  • Turn down the heat to low, and simmer, covered, for about 2 hours.
  • Preheat oven to 350°F (180°C).
  • To assemble, line a greased 9x9-inch (23x23-cm) square baking pan with 2 sheets of foil that extend over the sides.
  • Spread a thin layer of béchamel on the lined baking pan and top with 2 lasagna noodles. Spread a thin layer of meat sauce evenly across the noodles, followed by a thin layer of béchamel. Repeat the layering process, following the order of: 2 noodles, meat sauce, and béchamel. Alternate the direction of the lasagna sheets after every layer.
  • After 50 layers, place the foil box over the lasagna, helping it stay upright and stable.
  • Continue with the layering process until the 99th layer.
  • Sprinkle Parmesan on top, then cover the whole lasagna with foil.
  • Bake for about 1½ hours, uncovering the foil halfway, until the top is a deep golden brown.
  • Cool for at least 2 hours, then carefully lift out the lasagna with the foil sleeves onto a large cutting board.
  • Peel away the foil walls, then sprinkle the top of the lasagna generously with chives.
  • Cut and serve.
