FRENCH ONION SOUP

5 sweet onions (like Vidalias) or a combination of sweet and red onions (about 4 pounds)
3 tablespoons butter
1 teaspoon salt
2 cups white wine
10 ounces canned beef consomme
10 ounces chicken broth
10 ounces apple cider (unfiltered is best)
Bouquet garni; thyme sprigs, bay leaf and parsley tied together with kitchen string
1 loaf country style bread
Kosher salt
Ground black pepper
Splash of Cognac (optional)
1 cup Fontina or Gruyere cheese, grated

Steps:

  • Trim the ends off each onion then halve lengthwise. Remove peel and finely slice into half-moon shapes. Set electric skillet to 300 degrees and add butter. Once butter has melted add a layer of onions and sprinkle with a little salt. Repeat layering onions and salt until all onions are in the skillet. Do not try stirring until onions have sweated down for 15 to 20 minutes. After that, stir occasionally until onions are dark mahogany and reduced to approximately 2 cups. This should take 45 minutes to 1 hour. Do not worry about burning.
  • Add enough wine to cover the onions and turn heat to high, reducing the wine to a syrup consistency. Add consomme, chicken broth, apple cider and bouquet garni. Reduce heat and simmer 15 to 20 minutes.
  • Place oven rack in top 1/3 of oven and heat broiler.
  • Cut country bread in rounds large enough to fit mouth of oven safe soup crocks. Place the slices on a baking sheet and place under broiler for 1 minute.
  • Season soup mixture with salt, pepper and cognac. Remove bouquet garni and ladle soup into crocks leaving one inch to the lip. Place bread round, toasted side down, on top of soup and top with grated cheese. Broil until cheese is bubbly and golden, 1 to 2 minutes.

3 tablespoons unsalted butter
3 teaspoons kosher salt
16 fluid ounces white wine, such as Pinot Grigio or Sauvignon Blanc
24 fluid ounces canned beef consomme (clarified beef broth) or good-quality beef broth
16 fluid ounces chicken broth
1 bouquet garni, 2 sprigs each thyme and parsley and 2 bay leaves tied together with kitchen string
1 loaf country-style bread
Freshly ground black pepper, to taste
splash Cognac, optional
4 ounces Fontina or Gruyere cheese, grated

Steps:

  • Set a 12-inch electric skillet to 250ºF, or set a 4-quart saucepan over low heat.
  • Peel the onions. Halve the onions end to end, then slice into thin half-moons.
  • Melt the butter in the skillet. Add the onions to the skillet in 3 layers, adding about 1 teaspoon of salt to the top of each addition. Let the onions sweat for 15 to 20 minutes without stirring; do not let the onions sizzle or brown. Continue to cook, stirring occasionally, until the onions are dark mahogany and reduced to approximately 2 cups, 45 minutes to 1 hour.
  • Add just enough wine to cover the onions (you might not use all the wine, and that's OK), then turn the heat to 375ºF (or high). Cook until the wine is reduced to a syrup consistency, 5 to 10 minutes. Add the beef consommé, chicken broth, and the bouquet garni. Reduce the heat and simmer for 15 to 20 more minutes.
  • Meanwhile, set an oven rack in the top third of the oven and set the broiler to high. Cut the bread into rounds that will fit into the tops of the crocks. (You can do this with the crocks by inverting them over the bread and pressing down, like a cookie cutter.) Place the bread slices on a half-sheet pan and broil until they just start to brown, about 1 minute.
  • Season the soup with pepper and Cognac, if using. Place 8 oven-safe crocks on a half-sheet pan and ladle in the soup, leaving about 1 inch of space at the top. Place the toast rounds, toasted side down, on top of the soup and top with the cheese. Broil until the cheese is bubbly and golden, 1 to 2 minutes.

We just polished off a couple of bowls of this treasure inspired by the insane Alton Brown and are laying here all slothful and stuff. Ok, it wasn't exactly "inspired" by him...it's his recipe with a couple of molestations by me. I've omitted his inclusion of apple cider as I didn't like what it did to the flavor (way too sweet) and increased the broths. The combination of gruyere and Emmenthaler cheeses works far better, in my estimation, than the commonly seen solo gruyere. And no optional splash of cognac for us -- though if you were to add it, I'm relatively sure you'd be safe from my wrath. But I think the secret here lies in the way the onions are cooked...until they submit and obey.

  • Trim the ends off each onion then halve lengthwise. Remove peel and finely slice into half moon shapes.
  • Set electric skillet to 300 degrees (or large stock pot to medium-high) and add butter. Once butter has melted add a layer of onions and sprinkle with a little salt. Repeat layering onions and salt until all onions are in the skillet. Do not stir until onions have sweated down for about 15 minutes.
  • After that, stir occasionally until onions are dark mahogany and reduced to approximately 2 cups. This should take roughly 30 minutes. Do not worry about burning and keep yer darn hands out of the onions! I kept eating them when they'd get all dark and tempting.
  • Add enough wine to cover the onions and turn heat to high, reducing the wine to a syrup consistency. Add chicken and beef broths, garlic powder and bouquet garni. Reduce heat and simmer 15 to 20 minutes.
  • Place oven rack in top 1/3 of oven and heat broiler.
  • Cut country bread in rounds large enough to fit mouth of oven safe soup crocks. Put a thin layer of butter on each slice. Place the slices on a baking sheet and place under broiler for 1 minute. Turn over and toast unbuttered side for an additional minute or until browned.
  • Season soup mixture with salt and pepper to taste. Remove bouquet garni and ladle soup into crocks leaving one inch to the lip. Place bread round on top of soup and top with blended Emmenthaler and gruyere grated cheeses. Broil until cheese is bubbly and golden, 1 to 4 minutes depending on your preference. I like mine REALLY dark and partially crispy!

Our French onion soup is deliciously rich and easy to make at home. This savoury soup is perfect for using up a garden glut and great for dinner parties

50g butter
1 tbsp olive oil
1kg onions, halved and thinly sliced
1 tsp sugar
4 garlic cloves, thinly sliced
2 tbsp plain flour
250ml dry white wine
1.3l hot strongly-flavoured beef stock
4-8 slices baguette (depending on size)
140g gruyère, finely grated

Steps:

  • Melt the butter with the olive oil in a large heavy-based pan. Add the onions and fry with the lid on for 10 mins until soft.
  • Sprinkle in the sugar and cook for 20 mins more, stirring frequently, until caramelised. The onions should be really golden, full of flavour and soft when pinched between your fingers. Take care towards the end to ensure that they don't burn.
  • Add the garlic cloves for the final few minutes of the onions' cooking time, then sprinkle in the plain flour and stir well.
  • Increase the heat and keep stirring as you gradually add the wine, followed by the beef stock. Cover and simmer for 15-20 mins.
  • To serve, turn on the grill, and toast the bread. Ladle the soup into heatproof bowls.
  • Put a slice or two of toast on top of the bowls of soup, and pile on the gruyère. Grill until melted. Alternatively, you can cook the toasts under the grill, then add them to the soup to serve.
