CORNED BEEF AND CABBAGE

Steps:
- Place the corned beef, pepper, allspice, bay leaves and salt into a large 8-quart pot along with 3-quarts of water. Cover and set over high heat. Bring to a boil, decrease the heat to low and cook, at a low simmer for 2 1/2 hours.
- After 2 1/2 hours add the carrots, onions, potatoes and celery. Return to a simmer and cook uncovered for 15 minutes. After 15 minutes, add the cabbage and cook for an additional 15 to 20 minutes until the potatoes and cabbage are tender. Remove the bay leaves and serve immediately.
- Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
- After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

I saw this on AB's Facebook page & wanted to give it a try. He says, "This St. Patrick's day, serve this side with corned beef or you can do what I do - eat it straight out of the pan and wash it down with more whiskey."

Steps:
- Melt the butter in a 12-inch high-sided sauté pan over medium-high heat. Cook for 2 to 4 minutes or until the butter browns.
- Add the cabbage, kosher salt, and the pepper to the pan with the brown butter. Sauté for 7 to 10 minutes, stirring occasionally, until the cabbage is tender and lightly browned. Turn off the heat and deglaze the pan with the whiskey, scraping the brown bits from the bottom of the pan. Serve warm.

GLAZED BABY BEETS

- In a large saute pan, add the beets and the apricot juice. Cover and cook on medium high for 10 minutes. Add the vinegar and honey and cook for another 10 minutes. Pull off of the heat and keep covered for an additional 5 minutes.
SHRED, HEAD, BUTTER AND BREAD

- Fill your largest pot 3/4 full with water and bring to a boil on high heat. Melt the butter and croutons in a skillet. Add the mustard and caraway seeds and stir over medium heat until the butter browns and smells nutty. Remove the skillet from the heat, but leave dressing in the pan. Add the salt and sugar to the boiling water and cook until dissolved. Place the cabbage in the boiling water and cook for 2 minutes exactly. Drain the cabbage in the bowl of the salad spinner or colander. Spin the cabbage to remove any excess water. Add the cabbage to the butter-crumb dressing and toss to coat thoroughly.;

- Heat the oil in a 10-inch straight-sided sauté pan over medium heat. Add the apple to the pan and cook until lightly browned, approximately 1 minute.
- Increase the heat to high and add the apple juice, caraway seeds, salt, pepper, and cabbage to the pan. Cover the pan and shake to toss the cabbage to coat.
