WONDERFUL APPLESAUCE SPICE CAKE



Wonderful Applesauce Spice Cake image

There are many different recipes for applesauce cake this one has remained a favorite, it's a really moist cake with tons of flavor, there is really no need for frosting just top with a couple of tablespoons of whipped cream or Cool Whip topping --- if you are using sweetened applesauce I suggest to maybe cut down the sugar slightly unless you prefer a sweeter cake --- I think you will really enjoy this cake!

2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon baking powder
1 1/2 teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon allspice
1/2 cup Crisco shortening (butter or plain)
1 cup packed brown sugar
1 cup white sugar
2 large eggs
1 1/2 cups unsweetened applesauce
1/2 cup water
1 cup raisins
1 cup walnuts, chopped
confectioners' sugar, for dusting

Steps:

  • Set oven to 350°F.
  • Grease a 13 x 9-inch baking pan.
  • In a medium bowl sift together flour, baking soda, baking powder, salt and spices.
  • In a large bowl cream together the shortening and brown sugar and white sugar together until light and fluffy (about 3-4 minutes).
  • Add in the eggs to the creamed mixture, beating well after each addition.
  • Add in the dry ingredients alternately with the applesauce and water.
  • Stir in raisins and nuts.
  • Pour into prepared baking pan.
  • Bake for 40-45 minutes, or until cake tests done.
  • Cool, dust with confectioners' sugar or serve topped with whipped cream.

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 13x9-inch pan.
  • Combine cake mix, eggs, applesauce and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Stir in nuts. Pour into bake pan.
  • Bake at 350 degrees F for 40 minutes or until toothpick inserted into center comes out clean. Cool in pan 15 minutes. Invert onto cooling rack. Turn right-side up. Cool completely.
  • For frosting, combine frosting and cinnamon; stir until blended. Spread over cooled cake.

6 pounds tart apples (about 18 medium), peeled and quartered
1 cup apple cider or juice
3/4 cup sugar
2 tablespoons lemon juice
1 cinnamon stick (3 inches)
1 teaspoon ground ginger
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon ground mace
1/4 to 1/2 teaspoon ground cardamom

Steps:

  • Place all ingredients in a Dutch oven. Cover and cook over medium-low heat for 30-40 minutes or until apples are tender, stirring occasionally. Remove from the heat; discard the cinnamon stick. Mash the apples to desired consistency. Serve warm or cold. Store in the refrigerator.

I made a batch of this mixture recently: Recipe #266688 and decided to try it in applesauce. Mmmm! Family-approved!

Number Of Ingredients 6

6 -8 apples, variety (I leave them unpeeled-your choice)
1 tablespoon sugar, to taste (honey, agave nectar, raw sugar, etc.)
3/4 teaspoon english mixed spice
1 pinch salt
1/2 tablespoon lemon juice (can sub orange, tangerine, etc.)
1 cup water or 1 cup white grape juice

Steps:

  • Notes: I added one half teaspoon of whole juniper berries to the spice blend. Slow cooker directions are also given below. If using store bought apples, scrub and rinse well to remove the wax coating. I don't usually peel the apples due to laziness. Add sugar only if you feel it is necessary and/or the apples are older.
  • In a pot large enough to accommodate, place cored and stemmed apples and the remaining ingredients.
  • Cover and bring to the boil.
  • Lower heat to simmer and cook until apples are soft enough to puree approximately 20-25 minutes. Set aside to cool slightly. Pour off and reserve about half of the cooking liquid.
  • Transfer the applesauce to a blender, (or use an immersion blender) and puree to desired consistency-adding the reserve cooking liquid to preferred thickness. Taste. Adjust spices if necessary.
  • Serve warm or cold.
  • ~Tasty~ likes her applesauce with a dollop of plain yogurt. Hubby and my servings are delicious served over cottage cheese.
  • Slow Cooker directions: add all ingredients to the slow cooker in order written above. Cover and cook on LOW for about 6 hours or HIGH about 4 hours or until apples are soft enough to puree.
  • Yield is estimated depending on the size of the apples.

  • In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

3 ½ cups unbleached all-purpose flour
3 tablespoons ground cinnamon
1 ½ tablespoons ground nutmeg
2 teaspoons ground cloves
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
2 cups dark brown sugar
1 cup white sugar
1 cup unsweetened applesauce
4 eggs, lightly beaten
1 (15 ounce) can solid-pack pumpkin
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with cooking spray.
  • Mix flour, cinnamon, nutmeg, cloves, ginger, baking soda, salt, and baking powder together in a large bowl.
  • Combine brown sugar, white sugar, applesauce, and eggs in a large bowl. Add pumpkin and mix well. Add flour mixture alternately with water, mixing well between additions. Divide between the prepared loaf pans.
  • Bake loaves in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 65 minutes. Cool in pans for 10 minutes. Invert onto a wire rack to cool completely.
