AMAZING BROWN RICE SALAD

Amazing Brown Rice Salad image

A delicious brown rice salad recipe I concocted myself. Everyone loves it. Great to take to parties as a side dish.

Ingredients

2 cups water
1 cup brown rice
¼ cup diced red onion
½ cup diced celery
¼ cup dried cranberries
½ cup balsamic vinaigrette salad dressing
1 tablespoon sugar

Steps:

In a saucepan, bring water to a boil. Stir in rice, cover, and reduce heat to low. Simmer for 45 to 60 minutes, or until done.
Transfer rice to a serving bowl, and stir in onion, celery, cranberries, salad dressing and sugar. Cover, refrigerate, and serve cold.

Here's an old Peg Bracken recipe, presented here with no changes....until you add pork chops (optional.) Obviously, this recipe is not for those on a sodium-restricted diet.

Ingredients

1 cup raw rice (not instant)
1 (11 ounce) can chicken gumbo soup (undiluted)
1 (10 1/2 ounce) can chicken broth (undiluted)
1/4 cup butter

Steps:

Mix the rice (I rely on plain old Uncle Ben's Converted Rice for things like this) and soups in a casserole that has a tight-fitting lid.
Put the butter or margarine in the middle - don't stir.
Cover and bake for 45 minutes at 350 degrees. Before you serve it, fluff it with a fork, stir it if you must.
Okay -- you can make some changes. I think reducing the butter to 1/4 stick doesn't hurt. To turn this into dinner, season and brown a few pork chops in a skillet, and place the chops on top of the rice/soup/butter before you put the casserole (or foil-topped baking pan) into the oven.

I have been making this recipe for since 2006, I got it out of a magazine and I wish I could remember the magazine because if all their recipes are this good, I would make them my all time recipes.

Ingredients

3/4 cup long grain rice
1 1/2 cups water
1/4 teaspoon salt
4 cups milk
1 cup sugar
1 teaspoon vanilla

Steps:

Boil rice, water, and salt over medium high heat, simmer covered until water is absorbed.
Stir in milk and sugar, uncovered over medium heat until it reaches porridge like consistency stirring frequently, especially near the end.
Do not over cook.
Remove from heat, add vanilla , stir, cool covered.
