Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

4 cups melon, papaya or pineapple (cut into 3/4 inch cubes)
2 crisp apples (cored & diced)
6 seedless tangerines (separated into segments)
1 banana (halved lengthwise and sliced crosswise)
2 tablespoons cream sherry
1/2 cup pecans (chopped & toasted)
1/2 cup unsweetened flaked coconut (toasted)

Steps:

  • In a large bowl, combine pineapple, apples, oranges and sherry. (Ambrosia can be made to this point, 4 hours ahead and chilled, covered.)
  • Divide ambrosia between eight chilled serving dishes. Sprinkle pecans and coconut on top just before serving. Garnish with fresh mint. Keeps refrigerated for one day.

1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) can crushed pineapple, drained
3 ½ cups frozen whipped topping, thawed
2 cups shredded coconut
2 cups miniature marshmallows
½ cup milk
1 cup maraschino cherries

Steps:

  • In a large bowl, combine the oranges, pineapple, whipped topping, coconut, marshmallows and milk.
  • Mix together well and chill 1 hour before serving. Garnish with cherries.

3 large eggs
3/4 cup light corn syrup
1/2 cup sugar
3 tablespoons brown sugar
3 tablespoons orange juice
2 tablespoons butter, melted
1 teaspoon grated orange zest
1/8 teaspoon salt
1-1/2 cups chopped pecans
2/3 cup sweetened shredded coconut
1 unbaked pastry shell (9 inches)

Steps:

  • In a large bowl, beat the eggs, corn syrup, sugars, orange juice, butter, orange zest and salt until well blended. Stir in pecans and coconut. , Pour into pastry shell. Bake at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.
