Amys Potato Soup Crock Pot Or Stove Top Recipes
AMY'S POTATO SOUP (CROCK POT OR STOVE TOP)
I love potato soup, and this is the recipe I've come up with after trying several recipes and combining them. It's easy to put in the crock pot and forget about it, or, if you're in a hurry, it can be made in about twenty five minutes on the stove top.

Steps:
- Place everything but the milk and flour in the crock pot and cook on low all day.
- 30 minutes to one hour before serving, stir together the flour and evaporated milk until smooth, then add to soup.
- After the soup starts to thicken slightly, it is ready to serve.
- To make on stove top: boil potato and onion until tender, then simmer the rest of the ingredients on medium heat until thickened.
- I usually garnish bowls with shredded cheddar cheese at the table.

Steps:
- Place the potatoes, onion, butter, chicken bouillon cubes, parsley and water into a slow cooker. Set on low and let cook for 6 to 8 hours.
- At least half an hour before serving, stir together the milk and flour until no lumps remain, and mix into the soup. Cook for 30 minutes or until the soup is thickened.

Steps:
- saute onions and celery in butter until soft. Season with salt and pepper. Place celery and onions in a slow cooker. Add hashbrown potatoes, chicken broth and seasonings. Cover and cook on low for 6 - 8 hours. Add cream and continue to cook for another hour. If too thick, add a little milk or water. Garnish each soup bowl with chopped green onion, cheese and bacon.
SLOW COOKER CREAMY POTATO SOUP
This is a very rich and creamy soup. A great family favorite. It may be cooked on the stove or in a slow cooker. Garnish with chives, if desired.

Steps:
- Place bacon and onion in a large, deep skillet. Cook over medium-high heat until bacon is evenly brown and onions are soft. Drain off excess grease.
- Transfer the bacon and onion to a slow cooker, and stir in chicken broth, water, potatoes, salt, dill weed, and white pepper. Cover, and cook on Low 6 to 7 hours, stirring occasionally.
- In a small bowl, whisk together the flour and half-and-half. Stir into the soup along with the evaporated milk. Cover, and cook another 30 minutes before serving.
