BOSC PEARS IN ROSé WINE WITH PERSIMMON ICE CREAM
A stunning dessert that lets two autumn fruits-pears and persimmons-shine.

Steps:
- Melt butter in heavy large skillet over medium-high heat. Add pears, cut side down. Tuck thyme sprigs around pears. Cook until cut sides are brown (do not turn pears over), about 3 minutes. Transfer pears to plate. Add rosé wine and wildflower honey to same skillet and boil until mixture is reduced to about 1 cup, scraping up any browned bits, about 4 minutes. Reduce heat to medium-low and add pears, cut side up. Spoon some of juices in skillet over pears, cover skillet, and simmer until pears are tender, about 10 minutes. DO AHEAD: Pears can be made 4 hours ahead. Uncover and let stand at room temperature. Rewarm pears before continuing, if desired.
- Place 1 warm or room-temperature pear half, cut side up, on each of 6 plates. Drizzle pears with sauce from skillet. Spoon scoop of Persimmon Ice Cream alongside pears and serve.
BOSC PEARS POACHED IN RED WINE CARAMEL

Steps:
- Peel pears, leaving stems intact, and cut a thin slice from bottom of each if necessary to enable pears to stand upright when served. Set aside.
- Put sugar in a 3-quart heavy saucepan and melt over moderate heat until it begins to caramelize. Continue to cook, keeping a close eye and the sugar constantly circulating. Cook until the sugar is a deep golden caramel. Stir in the butter carefully, as the mixture may bubble up. Simmer and stir until caramel sauce has developed, about 5 minutes. Pour in wine and scrape in the seeds from the vanilla bean.
- Carefully arrange pears in the poaching liquid. They should be completely covered by the liquid, add water if they are not. Simmer pears, turning them occasionally, until tender, about 20 minutes.
- Test by inserting a knife into the fattest part of the pear, it should come out with no resistance. Finish off with lemon juice to wake up the flavor. Gently remove the pears to a serving dish, cut side down. Pour the wine syrup over the pears. Serve with Gorgonzola and candied walnuts.

FIG-GLAZED BOSC PEARS
This is a recipe for beautiful, sweet, and slightly tangy roasted Bosc pears. They are delicious with just some whipped cream or ice cream and they are also perfect on tarts and cheesecakes.

- Preheat an oven to 375 degrees F (190 degrees C). Butter a baking sheet.
- Arrange the pear quarters on the prepared baking sheet. Drizzle all but 1 tablespoon of the honey over the pears; set the reserved honey aside.
- Stir the fig preserves, pomegranate molasses, and cinnamon together in a small saucepan over medium heat; bring to a boil, reduce heat to low, and keep at a simmer until ready to use.
- Bake the pears in the preheated oven until golden brown, 15 to 20 minutes. Reduce oven heat to 325 degrees F (165 degrees C). Brush the fig glaze over the baked pears. Continue baking until firm on the outside, but tender inside, 25 to 35 minutes more. Allow to cool 5 minutes.
- While the pears cool, whip the cream, almond extract, and reserved honey together with a hand mixer in a large glass or metal mixing bowl until thick. Dollop the whipped cream mixture over the pears to serve.

PEARS IN RED WINE WITH ICE CREAM AND CHOCOLATE SAUCE

- Using a swivel-bladed paring knife, peel away the thin outer skin of the orange. Do not use the pulp. Put the skin in a casserole. Put the remainder of the orange to another use.
- To the casserole, add the peppercorns, sugar and red wine. Bring the mixture to the boil.
- Meanwhile, peel the pears. Cut off and discard the stems. Cut the pears in half lengthwise. Using a melon ball scoop, cut away and discard the cores of each pear half. Put the pear halves, cut side down, in the red-wine mixture. Cover the pears with a clean linen cloth, letting it soak on top of the pears in the wine. Bring to the boil and cook 15 minutes. Remove from the heat and let cool. Refrigerate until ready to serve.
- Meanwhile, put the chocolate in a saucepan and place the saucepan in a slightly larger basin of water. Bring the water to the boil and let the chocolate melt. Add the cream and Grand Marnier and stir to blend.
- Spoon one scoop of ice cream onto each of 12 individual dessert dishes. Top each scoop with a pear half, cut side down. Spoon the hot chocolate sauce over all and serve immediately.
