HEARTY PASTA SOUP

Steps:
- Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
- Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

- In a half-pint glass container, layer the first 7 ingredients in the order listed; seal tightly. Place the pasta in a 1-pint resealable jar; seal. Yield: 1 batch (3 cups). , To prepare soup: Place water in a Dutch oven; stir in soup mix. Bring to a boil. Reduce heat; cover and simmer for 45 minutes. Add chicken, tomatoes and pasta. Cover and simmer until pasta, peas and lentils are tender, 15-20 minutes longer.

- Heat oil in a large stockpot over medium-high heat. Crumble ground beef into pot and cook, stirring frequently, until well browned. Remove meat, leaving excess oil in pot.
- Cook onion and garlic in oil over medium-high heat until translucent. Stir in tomatoes, kidney beans, vegetable soup mix, and water. Reduce heat, and simmer 40 minutes.
- Add pasta stars, cover, and simmer 20 minutes more, or until pasta is tender. You may add more water at any time to adjust consistency.

Steps:
- Combine all ingredients in a large airtight container.
- Stir to evenly distribute ingredients.
- Label as Hearty Soup Mix.
- Store in a cool, dry place and use within 6 months.
- Shake well before using.
- Makes about 12 1/2 cups of mix.
- Hearty Soup Stock: Put 6 cups of water and 1 1/3 cups of mix in a large kettle or Dutch oven.
- Add 1 1/2 T salt.
- Bring to a boil.
- Cover and simmer 1 to 1 1/2 hours.
- Add 2 carrots, sliced, 1 or 2 stalks celery, chopped, 1 1/2 cups cabbage, shredded, 2 (15 oz) cans of tomato sauce, 1 (24 oz) can vegetable juice cocktail, and if desired 1 lb lean cooked ground beef or leftover cooked beef.
- Simmer 20 more minutes, until vegetables are cooked.
HEARTY WINTER SOUP MIX IN A JAR
This recipe takes a little longer to cook but it is well worth it. A great cold winter treat. You can change the type of beans that you use if you want to.

- Note: Be sure to sort through all beans and discard unusable ones.
- DO NOT USE INSTANT RICE.
- **NOTE: For jar gifts: layer beans in the jar then put the plastic bags with the rice and spices on top of them.
- OR.
- **In a small plastic bag, mix red beans, lentils, split peas and navy beans, In another small plastic bag, mix bouillon granules, minced onion, basil leaves, pepper, cumin, garlic powder, ginger and bay leaf.
- In a third small plastic bag, place rice.
- Attach this to the Jar:.
- Hearty Winter Soup Preparation.
- To prepare, wash beans and place in a 3-quart saucepan with 6 cups water.
- Bring to a boil for 5 minutes.
- Remove from heat.
- Let stand 30 minutes.
- Drain beans and return to pan.
- Ham can be added for those meat eaters.
- Add package of seasonings with 8 cups water.
- Bring to a boil.
- Cover, reduce heat and simmer 45 minutes.
- Add rice and continue simmering until beans and rice are tender: brown rice, 45 minutes; parboiled rice, 25 minutes; long-grain rice, 20 minutes.

- Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar.
- Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar.
- Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more. Serve with your favorite bread or rolls and a tossed salad.
