EASY FRENCH DIP SANDWICHES

- Preheat oven to 350 degrees F (175 degrees C). Open the hoagie rolls and lay out on a baking sheet.
- Heat beef consomme and water in a medium saucepan over medium-high heat to make a rich beef broth. Place the roast beef in the broth and warm for 3 minutes. Arrange the meat on the hoagie rolls and top each roll with 2 slices of provolone.
- Bake the sandwiches in the preheated oven for 5 minutes, or until the cheese just begins to melt. Serve the sandwiches with small bowls of the warm broth for dipping.

AMY'S ROAST BEEF FOR FRENCH DIPS
Super easy delicious Roast Beef. We use this as sandwich meat for French dips. I cook it early in the day and put it in the fridge. I pull it out and slice for dinner. You could also use it for a traditional roast beef dinner. The use of eye of round is a must for consistency through the roast.

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Place roast on a cutting board.
- Rub Worcestershire sauce, garlic, brown sugar, salt and pepper on the entire roast.
- Cover bottom of pan with 1/8 inch of water.
- Place roast on a rack in a roasting pan.
- Bake 15 minutes per pound.

EASY BEEF FRENCH DIP WITH QUICK AU JUS

Steps:
- Preheat the oven to 450 degrees F.
- Heat the olive oil in a medium Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring, until softened, about 4 minutes. Add 2 tablespoons butter; when the butter has melted, add the mushrooms and thyme. Cook, stirring occasionally, until the mushrooms soften and start to caramelize, 4 to 5 minutes.
- Meanwhile, in a small skillet over medium heat, melt the remaining 4 tablespoons butter. Add the garlic and cook, stirring occasionally, until the garlic is fragrant, about 3 minutes. Place the rolls cut-side up on a rimmed baking sheet. Liberally brush the rolls with the garlic butter and sprinkle with salt and pepper. Toast in the oven until golden brown, 4 to 5 minutes. Set aside for assembling.
- To the pot with the mushrooms, add the beef broth and bring to a simmer. Taste and adjust the seasoning as necessary. Bring the heat down to medium-low and simmer an additional minute. Turn the heat off, then add the roast beef to the pot, quickly removing when just warmed through, about 30 seconds.
- To assemble the sandwiches, spread a layer of creamy horseradish, to taste, on both sides of the rolls. Add a layer of beef on the bottom halves of each roll, then top with a spoonful of mushrooms along with some of the jus. Top with giardiniera to taste. Transfer the remaining jus to dipping bowls and serve on the side.
EASY ROAST BEEF FRENCH DIPS
This is my take on a french dip and it is so yummy.... my husband LOVES this and so do the kiddies. It is kinda like a panini also.

Steps:
- Put the roast beef and beef broth in a big enough pot on medium heat.
- While that cooks up, slice the bread in half and then open them up length wise. Toast the insides for a few seconds on a griddle.
- When the meat is good and warm, pile on the bread and top with cheese and then the top half of bread.
- Then butter the griddle and put the sandwiches on and squish with a skillet for 30 seconds, flip and squish the other side for 30 seconds.
- Serve with the beef broth as Au Jus and enjoy -- .

- Season roast with salt and pepper. Heat oil in a large skillet or pot over medium-high heat. When pan is hot, add seasoned rump roast and cook, turning, until browned on all sides, about 1 1/2 minutes per side. Transfer roast to slow cooker.
- Pour red wine into skillet and, using a wooden spoon, scrape bottom of pan to incorporate all browned bits of meat. Cook for 2 minutes to reduce liquid. Pour liquid over meat.
- Add onion, broth and onion soup mix to pot; stir to mix. Cover and cook on low heat for 5 hours. Remove roast and slice.
- Arrange meat on a platter and pour onion sauce over meat. Cut 4-inch lengths from bread, split lengthwise and toast for sandwiches. Have everyone layer meat on bread, pouring sauce on top to moisten.
