GREAT GRANDMA PEARL'S ANGEL FOOD CAKE WITH PEACHES AND CREAM
My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

Steps:
- Preheat the oven to 325 degrees F.
- In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
- Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
- Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
- To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.
ANGEL CAKE SURPRISE
Surprise!! This is a no-bake dessert! Great for the warmer months and so good. Not sure how many this feeds. If you find out, please post, or let me know. Feel free to use your own recipe for the cake. Times are guesstimated.

- Break up the angel food cake into bite-size pieces. Place into 9X13inch pan.glass is better).Dissolve 1 package flavored gelatin in 1 cup water and pour over cake pieces, spreading to the edges of the pan.
- Drain the peaches and pour the juice over the gelatin over the gelatin in the pan.
- Slice bananas on top of the gelatin in the pan.
- Arrange peach slices on top of the bananas slices.
- If desired, add crushed pineapple.
- For the pudding: Beat the pudding mix into 3 cups cold milk with wire whisk about 2 minutes.
- Spread topping on top of the pudding. Try to keep the layers separate.
- Refrigerate at least 2 hours before serving.

- Use serrated knife to cut cake horizontally in half. Cut small tunnel around center of bottom half of cake, being careful to not cut through to bottom or sides of cake.
- Combine berries and 1/2 cup COOL WHIP; spoon into tunnel in cake. Cover with top half of cake.
- Frost top and side of cake with remaining COOL WHIP.

ANGEL FOOD SURPRISE CAKE
Steps:
- Bake angel food cake according to package directions then let completely cool as directed.
- While cake is cooling, slice 1-1/2 lb. of fresh strawberries into a bowl. The remaining berries slice in half vertically then put into another bowl. Store berries in refrigerator until ready to use.
- When cake is completely cool, carefully slice off top of cake about 1/25" thick, carefully remove then set aside. Make a tunnel in the cake leaving about 1 inch on bottom, 1/2 inch around tube center, 1/25" around outer edge by tearing cake into bite-size pieces then put into a large mixing bowl.
- To the cake pieces, add the sliced strawberries and one large tub of thawed whipped topping. Mix thoroughly then stuff into tunnel of cake, over-stuffing if necessary. Carefully put top of cake back onto the stuffed angel food cake. Completely frost the sides and then top of cake with the 2nd container of thawed whipped topping. Place strawberry halves on top to decorate cake. May add mint leaves, if desired.
- Place cake in refrigerator until ready to serve. If there is any leftover cake, keep stored in the refrigerator.
