SLOW-ROASTED SPICED PORK

1 (7- to 9-pound) bone-in pork butt with a layer of fat on top
6 garlic cloves
1 large yellow onion, chopped
1 jalapeno pepper, ribs removed, seeded, and chopped
1/4 cup chopped fresh oregano leaves
1 1/2 tablespoons ground cumin
1 1/2 teaspoons chipotle chile powder
Kosher salt and freshly ground black pepper
1 1/2 tablespoons apple cider vinegar
1/4 cup good olive oil
1 (750 ml) bottle dry white wine, such as Pinot Grigio
Lime wedges, for serving

Steps:

  • Preheat the oven to 300 degrees F. Test your oven with an oven thermometer to be sure it's accurate!
  • Score the fat on the pork diagonally with a sharp knife in a crosshatch pattern. With a small paring knife, make a dozen 1/2-inch-deep cuts in the top and sides of the pork to allow the seasonings to permeate the meat.
  • Place the garlic, onion, jalapeno, and oregano in a food processor and process until the ingredients are finely chopped. Add the cumin, chile powder, 1 tablespoon salt, and 1 1/2 teaspoons pepper and process for 30 seconds to make a paste. Add the vinegar and olive oil and process to incorporate. Rub the mixture all over the pork, including the sides and the bottom, and place the pork in a large roasting pan, fat side up. Pour 2 cups of the wine into the pan and cover the whole roasting pan tightly with aluminum foil. Roast for 2 1/2 hours, remove the foil, and roast for another 4 to 4 1/2 hours, until the meat is very, very tender when tested with a carving fork. Every 2 hours, add another cup of wine to keep some liquid in the pan.
  • Remove the pan from the oven, cover it tightly with aluminum foil, and allow the meat to rest for 15 to 30 minutes. Slice, sprinkle with salt, and serve with lime wedges on the side.

4 pork chops, double cut, center cut, bone in
1/4 cup apple cider vinegar
2 tablespoons extra-virgin olive oil
2 teaspoons minced ginger
1 teaspoon minced garlic
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon pepper
1/4 cup white wine
1 cup sliced (1/4-inch) yellow onions
2 cups cored and sliced (1/4-inch) Granny Smith apples
1/2 cup raisins
2 tablespoons butter

Steps:

  • In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
  • Preheat oven to 350 degrees F.
  • In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
  • In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
  • Remove chops from oven and add to the apple mixture. Serve hot.

1 shoulder of pork weighing approximately 4kg/8lb 2oz skin scored
4 garlic cloves, peeled and roughly chopped
4cm/1½inch piece fresh root ginger, peeled and roughly chopped
3 tbsp olive oil
4 tbsp white wine vinegar.
Spiced apple sauce
500g/1lb 2oz cooking apples, peeled, cored and chopped
30g/1oz butter
2 tbsp water
2 tbsp white wine vinegar
¼ tsp ground nutmeg
¼ tsp ground cinnamon
freshly ground black pepper
30g/1oz soft dark brown sugar

Steps:

  • 1. Preheat the oven to 220C/425F/Gas mark 7. 2. Place the pork skin-side up on a rack over a roasting tin. Place the garlic and ginger in a pestle and mortar or food processor and pound or process until you get a rough paste then mix in the oil and vinegar. Rub the paste all over the scored skin of the pork. Place in the preheated oven and cook for 30 minutes. 3. Remove the pork from the oven, reduce the temperature to 150C/300F/Gas 2. Turn the pork over with the skin side down on the rack and return to the oven and cook for 4-5 hours. 4. Remove from the oven and turn up to the highest setting 220C/425F/Gas 7. Turn the pork over to the crackling side on the rack and roast in the hot oven for the final 20 minutes to crisp up the crackling. Leave to stand for 10-15 minutes before carving. 5. To serve, cut away the crackling with a sharp knife and break it up into pieces then carve the meat. It should be very tender and succulent. 6. For the sauce, put the apples in a pan with the butter, water, vinegar and spices. Cover and cook until softened but chunky. Add sugar to taste.

2 teaspoons cornstarch

Steps:

  • Place the pork and ginger into a slow cooker, and sprinkle the seasoning packets from the ramen noodles over them. Pour in the water. Cover, and cook on Low for 6 to 8 hours.
  • About 10 minutes before you are ready to eat, turn the slow cooker up to High. 3 1/4 kg pork belly (bones removed and scored)
1 cup table salt
1 tablespoon fennel seed (ground)
1 teaspoon five-spice powder
1 teaspoon cinnamon
grapeseed oil (for rubbing)
sea salt
6 granny smith apples (peeled cored and sliced)
100 g caster sugar
75 g rice wine vinegar
1/2 lemon (juice of)

Steps:

  • Mix the salt and spices together and rub it all over the pork and let is cure for 3 to 4 hours and then wash the pork belly well and dry with paper towels and place in the fridge uncovered for at least 6 to 8 hours or overnight.
  • Preheat the oven to 250°C.
  • rub the skin of the pork with some oil and salt and then place the pork on a roasting tray skin side up and cook for 15 minutes.
  • Lower the temperature of the oven to 150C and cook for 45 to 50 minutes to get great crackling pork belly can be finished under the grill/broiler.
  • Remove the pork belly and rest for 15 minutes and then slice pork belly thinly and serve with apple sauce.
  • APPLE SAUCE - Place the sugar and vinegar in a medium size saucepan and bring to the boil and then add the apples and cook until tender and then puree and add the lemon juice and set aside to cool.

A Nigella Lawson recipe printed in the December 2001 issue of Good Food magazine. I'll be making this for Easter Sunday lunch. It takes 24 hours to cook, but that's almost entirely passive cooking time, so this is really a simple recipe!

9 1/2 kg pork shoulder, skin scored
6 garlic cloves
1 cm length fresh ginger
2 fresh red chili peppers (or 1 teaspoon dried red chili pepper flakes)
3 tablespoons olive oil
4 tablespoons rice vinegar

Steps:

  • The day before you plan to serve the pork, preheat your oven (make sure it's clean) to the highest heat possible.
  • Sit pork skinside up on rack in a roasting tin.
  • Chop garlic and ginger, and then pound to a paste in a pestle and mortar, add chilli or chilli flake and 1 tbsp of oil and 2 tbsp vinegar until spreadable.
  • Rub this paste all over scored skin, pushing it into the cut lines of the rind. Place pork in oven and cook 30 minutes.
  • In bowl that paste was in, pour the rest of the oil and vinegar. When pork has been in oven half an hour remove it from the oven, switch heat down to 120 degrees Celsius
  • Turn pork over (best to use oven gloves for this, though they will get dirty). Pour oil and vinegar over the underside (now the top of the pork)and put back in the low-heated oven for 23 hours.
  • About half an hour before you're ready to eat, turn oven back to the highest it will go, remove pork and turn it back crackling side up. Put it back in the oven for 30 minutes to get it hot and crisp. It may need another 10 minutes to get it really crisp.
  • Remove pork from oven, slice off the crackling and break it into pieces. Carve meat into slices and serve with crackling.
