SLOW-ROASTED SPICED PORK

Steps:
- Preheat the oven to 300 degrees F. Test your oven with an oven thermometer to be sure it's accurate!
- Score the fat on the pork diagonally with a sharp knife in a crosshatch pattern. With a small paring knife, make a dozen 1/2-inch-deep cuts in the top and sides of the pork to allow the seasonings to permeate the meat.
- Place the garlic, onion, jalapeno, and oregano in a food processor and process until the ingredients are finely chopped. Add the cumin, chile powder, 1 tablespoon salt, and 1 1/2 teaspoons pepper and process for 30 seconds to make a paste. Add the vinegar and olive oil and process to incorporate. Rub the mixture all over the pork, including the sides and the bottom, and place the pork in a large roasting pan, fat side up. Pour 2 cups of the wine into the pan and cover the whole roasting pan tightly with aluminum foil. Roast for 2 1/2 hours, remove the foil, and roast for another 4 to 4 1/2 hours, until the meat is very, very tender when tested with a carving fork. Every 2 hours, add another cup of wine to keep some liquid in the pan.
- Remove the pan from the oven, cover it tightly with aluminum foil, and allow the meat to rest for 15 to 30 minutes. Slice, sprinkle with salt, and serve with lime wedges on the side.
APPLE GINGER PORK CHOPS
Steps:
- In a resealable plastic bag, add the chops, apple cider vinegar, 1 tablespoon extra-virgin olive oil, ginger, garlic, lemon juice, salt and pepper. Marinate for 30 minutes
- Preheat oven to 350 degrees F.
- In a large saute pan heat 1 tablespoon extra-virgin olive oil to almost smoking, then add pork chops, shaking off excess marinade. Brown on both sides, then place on a sheet pan and put in the oven for 20 minutes or until internal temperature reaches 135 degrees F.
- In the same saute pan deglaze with wine then add onions, apples and raisins and cook until apples are soft and onions are translucent. Add butter salt and pepper, to taste, and keep warm.
- Remove chops from oven and add to the apple mixture. Serve hot.
SPICED APPLE PORK ROAST

- Cut slits in top of roast; insert garlic strips. Combine the flour, mustard, salt, sugar and pepper; rub over roast. Place fat side up on a rack in a roasting pan. , Bake, uncovered, at 325° for 2 to 2-1/2 hours or until a thermometer reads 160°. Combine the applesauce, brown sugar, vinegar and cloves; generously brush over roast during the last 30 minutes of baking. Let stand for 10 minutes before slicing.

- Whisk together the hoisin sauce, brown sugar, soy sauce, and applesauce in a small bowl; set aside.
- Combine the pork and cornstarch in a bowl. Mix until the cornstarch evenly coats the pork; set aside.
- Heat the peanut oil and sesame oil in a large skillet or wok over medium-high heat. Cook the pork in three separate batches in the hot oil until no longer pink in the middle, 2 to 3 minutes per batch. Remove pork to a plate lined with paper towels to drain, reserving the oil. Add the ginger to the skillet; cook and stir for 30 seconds. Stir in the broccoli and cook until tender. Return the pork to the skillet and pour in the sauce; toss to coat. Cook until all ingredients are hot.

ANGELA'S SLOW ROASTED GINGER PORK + SPICED APPLE SAUCE
Steps:
- 1. Preheat the oven to 220C/425F/Gas mark 7. 2. Place the pork skin-side up on a rack over a roasting tin. Place the garlic and ginger in a pestle and mortar or food processor and pound or process until you get a rough paste then mix in the oil and vinegar. Rub the paste all over the scored skin of the pork. Place in the preheated oven and cook for 30 minutes. 3. Remove the pork from the oven, reduce the temperature to 150C/300F/Gas 2. Turn the pork over with the skin side down on the rack and return to the oven and cook for 4-5 hours. 4. Remove from the oven and turn up to the highest setting 220C/425F/Gas 7. Turn the pork over to the crackling side on the rack and roast in the hot oven for the final 20 minutes to crisp up the crackling. Leave to stand for 10-15 minutes before carving. 5. To serve, cut away the crackling with a sharp knife and break it up into pieces then carve the meat. It should be very tender and succulent. 6. For the sauce, put the apples in a pan with the butter, water, vinegar and spices. Cover and cook until softened but chunky. Add sugar to taste.
SLOW COOKER GINGER PORK

- Place the pork and ginger into a slow cooker, and sprinkle the seasoning packets from the ramen noodles over them. Pour in the water. Cover, and cook on Low for 6 to 8 hours.

- Mix the salt and spices together and rub it all over the pork and let is cure for 3 to 4 hours and then wash the pork belly well and dry with paper towels and place in the fridge uncovered for at least 6 to 8 hours or overnight.
- Preheat the oven to 250°C.
- rub the skin of the pork with some oil and salt and then place the pork on a roasting tray skin side up and cook for 15 minutes.

NIGELLA LAWSON SLOW ROASTED AROMATIC SHOULDER OF PORK
A Nigella Lawson recipe printed in the December 2001 issue of Good Food magazine. I'll be making this for Easter Sunday lunch. It takes 24 hours to cook, but that's almost entirely passive cooking time, so this is really a simple recipe!

- The day before you plan to serve the pork, preheat your oven (make sure it's clean) to the highest heat possible.
- Sit pork skinside up on rack in a roasting tin.
- Chop garlic and ginger, and then pound to a paste in a pestle and mortar, add chilli or chilli flake and 1 tbsp of oil and 2 tbsp vinegar until spreadable.
- Rub this paste all over scored skin, pushing it into the cut lines of the rind. Place pork in oven and cook 30 minutes.
- In bowl that paste was in, pour the rest of the oil and vinegar. When pork has been in oven half an hour remove it from the oven, switch heat down to 120 degrees Celsius
- Turn pork over (best to use oven gloves for this, though they will get dirty). Pour oil and vinegar over the underside (now the top of the pork)and put back in the low-heated oven for 23 hours.
- About half an hour before you're ready to eat, turn oven back to the highest it will go, remove pork and turn it back crackling side up. Put it back in the oven for 30 minutes to get it hot and crisp. It may need another 10 minutes to get it really crisp.
- Remove pork from oven, slice off the crackling and break it into pieces. Carve meat into slices and serve with crackling.
