Steps:
- Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
- Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
- Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
- Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

ANISSA'S GARLIC SAUCE
Steps:
- Chop the garlic cloves coarsely, then combine them with the salt in a small bowl or a mortar. Using the pestle or, in the case of a small bowl, the back of a spoon, crush the garlic and salt together until you have a smooth paste. The garlic should be thoroughly crushed, almost to a cream.
- Slowly beat in the olive oil, stirring constantly, as if you were making a mayonnaise. Add at least 1/3 cup of oil but if you can do so without the sauce breaking, add as much as 1/2 cup. At the end, gently stir in the yogurt, incorporating it fully into the sauce.

- Combine the warm water, sugar, and yeast in a bowl and stir until the yeast and sugar are dissolved. Let them sit for about 5 minutes, or until the mixture develops a layer of foam on top.
- While the yeast is proofing, combine 1 cup of the flour and the salt in a large bowl. Stir to combine.
- Pour the yeast mixture and olive oil into the bowl with the flour and salt. Stir until the slurry is smooth and free of lumps. Begin adding more flour, about 1/3 cup at a time, until the mixture turns into a ball of dough (about 2 cups total flour).
- Turn the dough out onto a clean surface that is lightly dusted with flour. Knead the dough until it is smooth and no longer sticky, adding only small amounts of flour as you go (about 5 minutes total). Return the ball of dough to the mixing bowl, cover with plastic, and let sit for one hour or until double in size.
