1 pound dried Great Northern beans
1 pound bacon, chopped
1 onion, chopped
2 jalapenos, chopped
1/4 cup tomato paste
1/4 cup dark brown sugar
1/4 cup molasses
Vegetable broth
1/4 teaspoon cayenne pepper
1 teaspoon black pepper
2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

1 extra large yellow onion, chopped fine
12 ounces dark brown sugar
1/2 cup yellow mustard
1 3/4 cups ketchup, plus more for garnish
Salt
Pepper
5 strips uncooked bacon

Steps:

  • Preheat oven to 360 degrees F.
  • Combine beans, onions, brown sugar, mustard, ketchup, salt, and pepper in a large baking dish. Lay bacon strips across top of beans. Squirt ketchup in a zig-zag pattern across the top of beans and bacon. Bake, uncovered, for 1 hour and 45 minutes.

These roasted green beans are so easy, yet definitely company-worthy...that is, if you're willing to share!

1 pound fresh green beans, trimmed
¼ cup extra-virgin olive oil
sea salt and freshly ground black pepper to taste
½ large lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss beans with olive oil in a medium mixing bowl until well coated. Spread beans out on a rimmed baking sheet, or in a roasting pan. Sprinkle lightly with salt and pepper.
  • Roast in the preheated oven until beans look shriveled and browned, about 20 minutes.
  • Remove beans from the oven, gather into a pile, and squeeze lemon juice over the top. Toss and serve.

Aaron's Amazing Simple Beans image

This recipe is incredibly simple to make, and it's fat-free, yet these are the most delicious beans I've had. The secret ingredient is the salt-preserved lemon, a flavor like no other. Serve hot in small bowls as a side dish or snack. Good with eggs, tortillas, or other Mexican food. Leftovers keep well in the refrigerator.

1 pound dried red kidney beans, rinsed
2 quarts water
1 Moroccan-style preserved lemon, or to taste
1 tablespoon white sugar
1 tablespoon freshly ground black pepper
1 small red chile pepper, halved lengthwise
1 bay leaf
1 teaspoon garlic powder
1 teaspoon anise seed

Steps:

  • Place kidney beans into a large container and cover with about 1 quart water; let stand 8 hours to overnight. Drain.
  • Combine beans, 1 quart water, preserved lemon, sugar, black pepper, red chile pepper, bay leaf, garlic powder, and anise seed in a stockpot; bring to a boil. Reduce heat to low, cover stockpot, and simmer for 1 hour.
  • Remove lemon, bay leaf, and red chile pepper from bean mixture. Mash about 10% of the beans against the sides of the stockpot using the back of a spoon. Cover stockpot and simmer for 45 minutes more.
  • Remove cover from stockpot and simmer beans until beans are thickened and water is evaporated, about 15 minutes more.

My mother (Ann Baughan) was famous within the family for the baked beans she would bring to picnics and covered dish suppers. Of course, she never used a recipe - this is how she did it when I watched her to try and document the recipe. It is a simple recipe, but we all love it. Use plain Campbells or Van de Kamps pork and beans, not the fancy smoked or BBQ flavor ones.

2 (15 ounce) cans pork and beans
1 medium onion, chopped
2 tablespoons brown sugar
2 teaspoons yellow mustard
1/4-1/3 cup catsup
1 teaspoon Worcestershire sauce

Steps:

  • Heat 2 Tablespoons lard or bacon fat in a large saucepan. Saute onions until translucent.
  • Add beans with liquid and all remaining ingredients. Stir well.
  • Simmer at 10 - 20 minutes until the sauce thickens and beans are hot through.
  • Serve hot, as a side dish with hamburgers and hotdogs, on a sunny summer day in a local park, surrounded by aunts, uncles and cousins.
