2 tablespoons butter or margarine
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 lb butternut squash, peeled, seeded and cut into 1/2-inch cubes (about 5 cups)
2 to 3 large Granny Smith apples, cored, cut into 1/2-inch cubes (4 cups)
1/4 cup real maple or maple-flavored syrup
1 tablespoon balsamic vinegar
1/4 cup chopped pecans, toasted*

Steps:

  • Heat oven to 375°F. Place butter in 13x9-inch (3-quart) glass baking dish; heat in oven 5 to 7 minutes or until melted.
  • Stir cinnamon and nutmeg into melted butter. Add squash; toss to coat. Cover with foil; bake 20 minutes. Meanwhile, in large bowl, mix apples, syrup and vinegar.
  • Pour apple mixture over squash. Cover; bake 10 minutes. Stir; bake 5 to 10 minutes longer or until squash is tender. Stir before serving and sprinkle with pecans.

3 medium tart apples, peeled and thinly sliced

Apple sausage stuffed butternut squash is filled with flavorful fall ingredients. It's the perfect seasonal meal that's hearty, healthy and more delicious than you can imagine.

2 1/2 pound butternut squash
1 tablespoon avocado oil (or olive oil)
salt and pepper (to taste)
1/2 pound Italian sausage
1/2 onion (diced)
3 garlic cloves (minced)
2 cups (lightly packed) baby spinach
1 apple (diced)
1 tablespoon fresh sage (finely chopped)
1/2 tablespoon fresh rosemary (finely chopped)
1/3 cup dried cranberries (unsweetened)
1/4 cup pecans (chopped)

Steps:

  • Preheat your oven to 400 degrees fahrenheit (200 degrees celsius).
  • Slice the butternut squash in half with a very sharp knife. You can also cut the ends off and microwave for 2 minutes, to make it easier to slice in half lengthwise.
  • Scoop the seeds out of the butternut squash with a spoon.
  • Lightly oil the butternut squash and season with salt and pepper.
  • Lay the butternut squash, cut side down on a baking sheet and bake for 40-45 minutes.
  • While the butternut squash is cooking, add the sausage to a saute pan on medium heat. Use a spatula to break up the sausage and cook until it's just browned.
  • Add the onions, garlic and baby spinach to the pan and stir for 2-3 minutes, or until the spinach is wilted.
  • Add the apple, sage and rosemary and cook for another 2-3 minutes, or until the apple has softened slightly.
  • Turn off the heat and stir in the cranberries and pecans.
  • When the butternut squash halves are cooked through, remove them from the oven, flip them over and remove some of the flesh (but leave plenty to enjoy!) to make room for the filling. Save this removed flesh and turn it into mashed butternut squash to enjoy later!
  • Fill the butternut squash with the apple sausage filling.
  • Turn the top broiler on the oven and bake the filled butternut squash for 5 minutes, or until they're golden on top. Serve immediately.

1 medium onion, diced
1 butternut squash (about 2 pounds), peeled, seeded, and chopped
4 red or golden apples, peeled, cored, and chopped, plus 1 apple, finely diced and tossed in lemon juice, for garnish (optional)
2 teaspoons coarse salt
1 1/2 teaspoons ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
2 cups homemade or store-bought low-sodium chicken or vegetable stock
2 1/2 cups water, plus more if needed
1 jalapeno chile, thinly sliced, for garnish (optional)
Sour cream, for garnish (optional)

Steps:

  • Melt butter in a large saucepan over medium heat. Add onion; cook, stirring occasionally, until it begins to soften, about 4 minutes. Add squash, and cook, stirring occasionally, until soft, about 10 minutes.
  • Add apples, salt, cumin, coriander, ginger, cayenne, black pepper, stock, and the water (just enough to cover). Bring to a boil. Reduce to a simmer, and cook until vegetables are very soft, about 30 minutes.
  • Puree in batches in a food processor or blender until smooth, and return to saucepan. Heat over low, thinning with more water if necessary. To serve, ladle into shallow bowls; garnish with diced apples, jalapeno slices, and sour cream if desired.

  • 1. grease 2 loaf pans heat oven to 350 degree's. In a large bowl. On low speed mix eggs,oil,applesauce,squash, vanilla,and sugars together. Set aside.
  • 2. in another bowl sift the flour,spices, baking soda and baking powder together.
  • 3. slowly add the flour to the wet ingredients. Mix as you add ingredients on low speed. Mix in by hand the apples,Walnuts,and( raisins optional) until combined.
  • 4. divide batter in to 2 loaves pans. Mix with pastry blender all of the Streusel ingredients together except nuts until crumbly. Mix in the nuts. Sprinkle over the 2 loaves. Bake approximately one hour,or until pick comes out with just a few crumbs. Cool and serve.

1 cup heavy whipping cream
2 large eggs
¾ cup firmly packed light brown sugar
½ cup vegetable oil
¼ cup granulated sugar
1 cup chopped peeled Gala apples
Crumble Topping (recipe follows)
½ cup all-purpose flour
¼ cup old-fashioned oats
¼ cup sugar
¼ teaspoon kosher salt
⅛ teaspoon baking powder
⅛ teaspoon apple pie spice
3 tablespoons cold unsalted butter, cubed
4 pounds butternut squash
¼ cup canola oil
1 teaspoon kosher salt
⅔ cup firmly packed dark brown sugar
2 teaspoons pumpkin pie spice
1 tablespoon fresh lime juice
1 cup apple cider
¼ cup bourbon (optional)

Steps:

  • Preheat oven to 350°. Line an 8x4-inch loaf pan with parchment paper.
  • In a large bowl, whisk together flour, baking powder, baking soda, apple pie spice, and salt. In a medium bowl, stir together squash, cream, eggs, brown sugar, oil, and granulated sugar. Add squash mixture to flour mixture, stirring to combine. Fold in apples. Transfer batter to prepared pan. Top with Crumble Topping.
  • Bake until a wooden pick inserted in center comes out clean, about 1 hour and 20 minutes. Let cool in pan for 20 minutes. Remove from pan, and let cool completely on a wire rack. Wrap tightly in plastic wrap, and refrigerate for up to 4 days. To freeze, wrap tightly in plastic wrap, and store in a heavy-duty resealable plastic bag. Freeze for up to 2 months.
  • In a large bowl, whisk together flour, oats, sugar, salt, baking powder, and apple pie spice. Using a pastry blender, cut in cold butter until mixture is crumbly. To create larger crumbs, squeeze mixture together by handfuls. Chill until ready to use, or up to 2 days.
  • Preheat oven to 400°. Line a rimmed baking sheet with parchment paper.
  • Cut squash in half, and remove seeds and pulp. Place squash, cut side down, on prepared pan. Brush with oil, and sprinkle salt on both sides.
  • Roast until tender, about 45 minutes. Let cool on a wire rack.
  • Scoop roasted squash flesh from skin; discard skin. Place flesh in the work bowl of a food processor with brown sugar, pumpkin pie spice, and lime juice; purée until smooth.
  • Transfer to a large saucepan, and stir in cider. Bring mixture to a simmer over medium heat, stirring frequently. Cook until thickened, about 10 minutes. Remove from heat; stir in bourbon, if using.

5 chicken breasts, boneless, skin-on
2 tablespoons olive oil, divided
2 tablespoons paprika
1 tablespoon salt
1/2 tablespoon ground black pepper
1 cup apple cider (NOT apple cider vinegar)
2 tablespoons butter, softened
1 tablespoon mustard
1 tablespoon brown sugar
1 tablespoon soy sauce
2 cups butternut squash, diced into 1/4-inch cubes (fresh or thawed from frozen)
1 apple, sliced
1 tablespoon fresh thyme, chopped

Steps:

  • Preheat oven to 420F.
  • . Pat dry each chicken breast with a paper towel completely before adding seasoning. This helps create extra crispy skin when searing and roasting.
  • Season the chicken. In a small bowl, combine olive oil, paprika, salt and pepper in a small bowl and mix well with a spoon to combine. Generously smear the seasoning mixture over the chicken breasts and let it rest on a clean plate for at least 15 minutes.
  • Sear the chicken. Heat an oven-safe or cast-iron skillet on the stove for 5 minutes over medium high heat. Once the skillet is sizzling hot, sear the chicken breasts by placing them skin side down until the skin turns brown, about 4-5 minutes. Transfer the chicken breasts on a plate to rest.
  • Prepare apple cider sauce. On the same skillet, turn down the heat to medium and add apple cider, butter, mustard, brown sugar, and soy sauce. Stir to combine. Bring the sauce mixture to a simmer and stir until it forms a smooth texture. Remove from heat and transfer the chicken breasts back to the skillet with the skin side up.
  • Prepare butternut squash. In a large mixing bowl, add butternut squash, sliced apples, thyme, and remaining tablespoon of olive oil. Toss to combine. If using frozen butternut squash, make sure to defrost first and pat dry to remove excess water. Transfer the butternut squash and apple mixture to the skillet and spread it around the chicken.
  • Bake. Transfer the entire skillet into the preheated oven and bake for 20 minutes until the skin is crispy and golden brown and the internal temperature for the chicken reaches 165F on a meat thermometer.
  • Serve. Serve the chicken and butternut squash on a plate and drizzle some apple cider sauce from the skillet on top.

2 tablespoons light brown sugar
Pinch kosher salt
1/4 cup (4 tablespoons) unsalted butter, cut into cubes and kept cold

1 pound butternut squash, cut into 3/4-inch chunks
2 apples, cut into 1-inch chunks
1/4 cup dried cranberries

3/4 cup butternut squash puree
1/3 cup almond milk
1/4 cup melted coconut oil
1 teaspoon vanilla extract
1 large egg, whisked
1/2 cup brown sugar

1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped apple
1 cup white whole wheat pastry flour
1/2 cup oat flour

Steps:

  • To make butternut squash puree, preheat oven to 400, peel squash and discard seeds. Chop into even and relatively small pieces and bake for 30 minutes, or until cooked throughout.
  • Reduce oven temperature to 350 degrees F and grease and sugar a bread pan.
  • In a large bowl, stir together butternut squash puree, almond milk, melted coconut oil and vanilla extract. Add in the egg and brown sugar and mix. Add in the salt, spices, baking soda and baking powder. Peel and finely chop the apple and add to the mixture.
  • Add the white whole wheat flour, oat flour, and pecans into the wet mixture and mix until just combined (don't overmix). Pour into the prepared pan.
  • Bake for 55-60 minutes or until a toothpick comes out clean when inserted into the center.
