This is a new take on a pumpkin roll. Her spicy gingerbread cake might make you think back fondly to Christmas at Grandma's! -Debbie White, Williamson, West Virginia

3 large eggs
1 cup all-purpose flour, divided
2 tablespoons plus 1/2 cup sugar, divided
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cloves
1/4 teaspoon baking soda
1/4 cup butter, melted
1/4 cup molasses
2 tablespoons water
1 tablespoon confectioners' sugar
2 cups apple butter

Steps:

  • Preheat oven to 375°. Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper and grease the paper. Sprinkle with 1 tablespoon flour and 2 tablespoons sugar; set aside., In a large bowl, combine remaining flour and sugar; add the cinnamon, baking powder, ginger, cloves and baking soda. In another bowl, whisk the egg yolks, butter, molasses and water. Add to dry ingredients and beat until blended. Beat egg whites on medium speed until soft peaks form; fold into batter. Pour into prepared pan. , Bake for 12-14 minutes or until cake springs back when lightly touched. Cool for 5 minutes. Turn cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack. , Unroll cake; spread apple butter to within 1/2 in. of edges. Roll up again. Cover and chill for 1 hour before serving. Refrigerate leftovers.

3-1/4 cups all-purpose flour
1/4 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
3/4 cup 2% milk
1/4 cup apple cider or juice
1/4 cup plus 1/3 cup butter, softened, divided
1 large egg, room temperature
2 cups finely chopped peeled tart apples
1-1/4 cups packed brown sugar
3/4 cup finely chopped walnuts
3 teaspoons ground cinnamon
2 cups apple cider or juice
1 cinnamon stick (3 inches)
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 cup confectioners' sugar

Steps:

  • In a large bowl, combine 2-1/4 cups flour, sugar, yeast and salt. In a small saucepan, heat the milk, cider and 1/4 cup butter to 120°-130°. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes. Roll into a 15x10-in. rectangle. Spread remaining butter to within 1/2 in. of edges. Combine the apples, brown sugar, walnuts and cinnamon; sprinkle over butter., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 13x9-in. baking dish. Cover and let rise in a warm place for 30 minutes. Preheat oven to 325°., Bake until golden brown, 30-35 minutes. For frosting, place cider and cinnamon stick in a small saucepan. Bring to a boil; cook until liquid is reduced to 1/4 cup, about 20 minutes. Discard cinnamon stick; cool cider. , In a large bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and reduced cider; beat until smooth. Spread over warm rolls.

These are so easy to throw together and have such a great flavor. They're flaky and not too sweet. Great for a quick brunch or as a wonderful snack and the apple cider glaze is just the right touch for these.

1 frozen puff pastry (thawed per package directions)
1/3 c caramel apple butter (or regular apple butter)
1 large egg (optional)
APPLE CIDER GLAZE:
1 c powdered sugar
2 Tbsp + 1 tsp apple cider

Steps:

  • 1. Preheat oven to 400 degrees F. Line baking sheet with parchment paper or spray with nonstick spray.
  • 2. Unroll thawed pastry dough on a floured surface. Spread apple butter to edges of puff pastry. Starting at side closest to you, roll dough jelly roll style.
  • 3. If desired, add 1 tsp water to whisked egg to make an egg wash. Brush on rolled dough. Cut rolled dough into 1 inch slices (you should get about 10 slices) and place cut side down on prepared pan leaving about 2 inches between each slice.
  • 4. Bake in preheated oven for about 15-18 minutes or until dough is flaky and golden.
  • 5. Combine powdered sugar and apple cider in a small bowl; stirring until smooth. Drizzle on warm rolls.

Cut it into 9 slices (about 2 inches each) and place them into a 9x9 baking pan that has been sprayed with cooking spray.
  • Set the pan of cinnamon rolls in a warm place to rise for 20 minutes. After they are done rising, bake them at 400 degrees for 12-15 minutes until lightly browned.
  • While they are cooling, make the frosting. Beat the cream cheese and butter together until smooth. Add the powdered sugar and cinnamon. Beat until well blended.
