APPLE CAESAR SALAD
I couldn't find a single Caesar salad recipe I liked, so I combined ingredients from a few recipes and came up with this one. The addition of fruit gives this salad such a wonderful flavor.

- For croutons, combine 1/4 cup oil, 2-3 garlic cloves and 1/4 teaspoon salt in a bowl; let stand for 1 hour. Strain oil and discard garlic. Toss bread cubes in the oil; place on a baking sheet. Bake at 400° for 7-9 minutes or until golden brown, stirring occasionally. Cool., In a small bowl, combine the lemon juice, mustard, Worcestershire sauce, pepper and remaining oil and salt. Mince remaining garlic; stir into dressing. , Place romaine in a salad bowl; drizzle with dressing. Add the croutons, Parmesan cheese and apple; toss to coat.

MUSTARD GLAZED PORK WITH APPLE CAESAR SALAD
A fresh and healthy twist on the Caesar salad with flavourful mustard glazed pork

- Brush the pork with 2 tsp of the mustard and set aside. In a large bowl, mix all the remaining ingredients, except the lettuce, with some seasoning. Top with the leaves but don't mix together yet.
- Griddle or grill the pork for 3-4 mins on each side, until cooked through and golden, then allow to rest for 1 min. Slice the pork then toss with the salad and dressing, combining everything well.

A 'worth-the-effort' salad!! Always a winner, if you love Caesar Salad! The secret is the dressing and the croutons.

Steps:
- Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
- In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
- Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
- Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
- To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!

- Preheat the oven to 210 °C / 410 °F. Arrange a rack in the middle of the oven. Line a baking sheet with parchment paper.
- Cut the baguette into 2cm or 1-inch cubes. Add the bread onto the prepared baking sheet. Drizzle with olive oil and toss to combine, then arrange in a single layer and place in the oven. Bake for 8 - 10 minutes at 210 °C / 410 °F. Stir and turn the baking sheet around once while baking.
- To a bowl, add the anchovy fillets, egg, garlic, lemon juice, vinegar, dijon mustard, parmesan. Using an immersion blender or a blender, mix into a smooth mixture. Gradually, in a thin stream, start adding both of the oils, while running the blender at low speed. Mix well to incorporate until the dressing is smooth and silky. Season to taste with salt and pepper. Optionally add the cayenne pepper too. Set aside until needed.
- Set a pan over medium heat. Add the bacon and cook for about 2 - 3 minutes or until golden-brown and crispy. Clean the romaine lettuce and tear into larger pieces. Clean and cut the apples into thin slices. Arrange the salad, croutons, and apples over a serving platter. Sprinkle over the crispy bacon. Using a speed peeler, shred some parmesan cheese over the salad and generously pour half of the dressing on top. Serve the other half of the dressing on aside.
