Nana Dot's Irish Soda Bread image

This was my mom's mothers recipe (my Nana Dot) and has been passed down for generations, direct from Ireland. If you like soda bread, this is awesome!

2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
1 tablespoon baking powder
½ teaspoon salt
3 tablespoons white sugar
½ cup butter, cut into pieces
1 cup raisins
½ cup currants
2 teaspoons caraway seed
¾ cup milk
3 tablespoons apple cider vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Stir together the flour, baking soda, baking powder, salt, and sugar in a large bowl until evenly blended. Cut in the butter using a pastry blender or your hands until the mixture resembles coarse cornmeal. Stir in the raisins, currants, and caraway seeds, then make a well in the center and pour in the milk and vinegar. Stir with a spoon until the dry ingredients are moistened.
  • Turn the dough out onto a well floured work surface, and knead gently 8 to 10 times. Divide the dough into two balls, and place onto the prepared baking sheets.
  • Bake in preheated oven for 15 minutes, then reduce heat to 375 degrees F (190 degrees C), and bake until the top of the bread is golden brown, about 15 minutes more.

Number Of Ingredients 11

1 1/3 cups whole milk
1/3 cup apple-cider vinegar
3 cups all-purpose flour, plus more for surface and dusting
2 1/2 teaspoons coarse salt
1 teaspoon baking powder
1 teaspoon baking soda
2 ounces (4 tablespoons) cold unsalted butter, cut into small pieces
1 cup unprocessed wheat bran
1/4 cup caraway seeds
1 cup (5 ounces) raisins
Salted butter, preferably Irish, for serving

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment. Mix milk and vinegar in a small bowl, and let stand until thickened, about 5 minutes.
  • Whisk together flour, salt, baking powder, and baking soda in a large bowl. Cut in unsalted butter with a pastry cutter or 2 knives until mixture resembles coarse meal. Add bran, caraway seeds, and raisins; stir to distribute.
  • Pour milk mixture into flour mixture; stir until dough just holds together but is still sticky. Turn dough onto a lightly floured surface. Pat and press the dough gently into a round, dome-shaped loaf, about 7 inches in diameter. Transfer to prepared sheet.
  • Lightly dust top of loaf with flour. With a sharp knife, cut an X into the top, 3/4 inch deep. Bake, rotating halfway through, until loaf is golden brown and a tester inserted in the center comes out clean, about 1 hour, 10 minutes. Let cool on a wire rack. Soda bread is best eaten the day it is made; serve with salted butter.

1/2 cup whole wheat flour
1/2 cup packed brown sugar
3 tablespoons toasted wheat germ

1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
2 large eggs, lightly beaten
1 large egg white
1/2 cup apple cider or unsweetened apple juice
1/4 cup plain yogurt
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup shredded peeled tart apple
1/3 cup golden raisins
1 teaspoon grated orange zest

Steps:

  • In a large bowl, combine the first nine ingredients. In a small bowl, combine the eggs, egg white, cider, yogurt, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the apple, raisins and orange zest. , Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

  • Sift together flour, baking powder, salt, and sugar a total of 3 times.
  • Add wet ingredients.

1 teaspoon salt
1 cup low-fat buttermilk
1/2 cup unsweetened applesauce
1 tablespoon butter, melted
1/2 cup raisins
2 tablespoons skim milk

Steps:

  • In large bowl, combine flour, sugar, baking soda and salt.
  • In small bowl, combine buttermilk, applesauce and butter.
  • Add applesauce mixture to flour mixture; stir until dough forms a ball.
  • Turn out onto floured surface and knead raisins into dough.
  • Pat dough into 7-inch round and place in sprayed 8-inch round baking pan; cut ¼-inch deep cross into top of dough and brush with milk.
  • Bake 35 minutes at 375 degrees, or until toothpick inserted in center comes out clean.
  • Cool in pan 10 minutes, invert onto wire rack, turn right side up, and cool completely.

This quick bread takes only a handful of ingredients to make. Just make sure you use sparkling apple cider, as regular apple cider will not work.

2 cups self-rising flour
1 ½ cups sparkling apple cider
1 cup oat flour
⅓ cup white sugar
1 teaspoon ground cinnamon
½ teaspoon baking powder
1 tablespoon white sugar
½ teaspoon ground cinnamon
2 tablespoons salted butter, melted

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a loaf pan with nonstick spray.
  • Combine self-rising flour, sparkling cider, oat flour, sugar, cinnamon, and baking powder in a large bowl; mix well. Pour batter into the prepared loaf pan. Mix sugar and cinnamon in a small bowl and sprinkle over the top.
  • Reduce the oven temperature to 375 degrees F (190 degrees C). Bake the loaf in the preheated oven for 35 minutes.
