3/4 cup brown sugar, firmly packed
1/3 cup oil
1 egg, slightly beaten
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup apple, peeled & chopped
1 cup buttermilk
1/4 cup brown sugar
1/4 cup chopped pecans
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 325°.
  • Grease a 9" sq. pan.
  • Blend 3/4 cup brown sugar, oil, egg & vanilla in large bowl.
  • Combine flour, baking soda & salt. Add to wet mixture. Add apple & buttermilk. Mix thoroughly just to moisten.
  • Spread mixture into greased pan.
  • Topping: Combine brown sugar, pecans, & cinnamon in small bowl. Sprinkle evenly over batter.
  • Bake cake at 325° for 30 to 35 mnutes.

1 cup whole wheat flour
1 tablespoon cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup butter
1/2 cup low-fat buttermilk
1/2 cup Splenda Sugar Blend for Baking
1/2 cup brown sugar
1 egg
1/2 cup egg white
6 medium apples, peeled, cored and sliced in 1/4 inch slices

Steps:

  • preheat oven to 350 and spray bundt or pound cake pan with Pam.
  • in a medium bowl whisk flour, cinnamon, salt, baking powder and baking soda together.
  • In a large bowl, melt butter in microwave, add in egg, egg whites, sugar, splenda and butter milk; whisk until smooth.
  • Add dry ingredient to wet and mixed until just combined.
  • Fold in apples.
  • spoon mixture into pan
  • bake 1 hour or until toothpick comes out clean.

This is a very simple tasting and versatile apple cake that I came up with while trying to use up some extra sour milk/buttermilk that l had.It doesn't contain any butter or oil ,so it might be good for someone watching their fat content.I would assume that you can use pears too with the same good results.This is our family's kind of cake because it's light and not too sweet.Enjoy!

2 medium apples (I used one Granny Smith & one Golden Delicious apple)
3 eggs
1 cup granulated sugar
2 tablespoons sour cream (heaping)
1/4 teaspoon salt
1 teaspoon baking soda
1 1/4 cups buttermilk or 1 1/4 cups sour milk
1/4 cup orange juice (or just use 1/4 cup buttermilk instead)
1 teaspoon cinnamon
2 1/4 cups all-purpose flour
raisins (optional)

Steps:

  • Preheat the oven to 350 degrees F and lightly grease a 9x13 inch pan.I also line it with parchment paper.
  • Now ,thinly slice the apples and soak them in cold water with some lemon juice squeezed in, to prevent discoloration. Set aside.
  • Next, whisk the eggs until frothy.Add the sugar and continue whisking until fairly creamy ( or until sugar dissolves and blends in).Add the salt ,cinnamon and baking soda.Then,mix in the sour cream,buttermilk,and orange juice (if using any).
  • Gradually, add the flour to the mixture and mix until incorporated (do not overmix).If there are any lumps,mush them with a fork against the sides of the bowl.Gently fold in the raisins at this point,if using any.
  • Finally, pour the batter into the greased pan and line the top with the apple slices in any pattern you prefer.
  • Bake for 40-45 minute or until tester comes out clean.
  • Allow to cool and cut into squares.Serve.
  • NOTE: This cake tastes better after it stands for a while.

This is a heavy Bundt® cake that is not too sweet, but sweet enough to hit the spot. This my husband's all-time favorite recipe straight from his mother. I like to use baking apples sliced very thin.

5 tablespoons white sugar
2 teaspoons ground cinnamon
4 medium baking apples - peeled, cored, and sliced
3 cups all-purpose flour
2 cups white sugar
1 cup vegetable oil
4 large eggs
1 orange, juiced
3 teaspoons baking powder
2 ½ teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Mix 5 tablespoons sugar and cinnamon together in a bowl. Add apples and toss to coat.
  • Mix flour, 2 cups sugar, vegetable oil, eggs, orange juice, baking powder, and vanilla extract together in a large bowl until moist and thick. Pour a little batter into the prepared pan to cover the bottom and layer with sugared apple slices. Repeat layers of batter and apples, finishing with batter on top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour 10 minutes.

  • Preheat oven to 350F/180C. Grease and flour an 8" or 9" round springform pan (8" pan will yield a taller cake).
  • In a large bowl, sift together flour, baking powder, baking soda, salt, cinnamon, and spices. Set aside.
  • In a mixer bowl fitted with the paddle attachment, beat butter and sugars on medium speed until light and fluffy, about 3 minutes. Beat in eggs, one at a time, until combined. Scrape down sides and bottom of the bowl as necessary. Beat in vanilla extract. On low speed, beat in flour mixture in 3 additions, alternating it with buttermilk in 2 additions, starting and ending with the flour. Do not over mix. Fold in apples.
  • Scrape batter into prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Place on a wire rack to cool completely.
