HEALTHIER APPLE CRISP FOR TWO
When it's just my husband and I--and we're craving a nice, warm, comforting dessert--this apple crisp fits the bill every time! It's relatively easy to make, is on the healthier side, and tastes great, too!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two 8-oz ramekins and place them on a baking sheet.
- Combine apples, maple syrup, lemon juice, vanilla extract, cinnamon, nutmeg, allspice, and salt for the filling in a bowl; toss until thoroughly mixed. Divide mixture between the prepared ramekins.
- Combine oats, flour, maple syrup, cinnamon, and salt for the topping in a bowl; mix until thoroughly combined. Cut in softened butter until mixture resembles coarse crumbs. Sprinkle crumb topping evenly on top of the filling in the ramekins.
- Place baking sheet with ramekins into the preheated oven and bake until apples are tender and the topping is slightly browned, 25 to 30 minutes. Cool for 10 to 15 minutes before serving.

- Preheat oven to 350°. Place cut apples in an ungreased 2-cup baking dish; sprinkle with lemon juice. APPLE COBBLER FOR TWO
You won't have days and days of leftover cobbler with this perfectly scaled-down recipe. It makes just enough for two!

- For the filling: Preheat the oven to 400 degrees F. Toss the apples with 2 heaping tablespoons of the sugar, the flour, cinnamon and nutmeg. Add the butter, and toss. Divide the filling between two 6-ounce, 3 1/2-inch ramekins, tent each loosely with foil and bake until the apples are tender and the juice is bubbling, about 35 minutes. Remove the ramekins from the oven, remove the foil, give the apples barely a stir with a fork and press the top into the juices.
- For the topping: Whisk together the flour, the baking powder, salt and 1 teaspoon of the sugar in a small bowl. Quickly stir in the heavy cream, then work the dough with your fingers as if you were working butter into pie dough, to make moist, slightly flattened chunks of dough.
- Top each ramekin with dough, dividing evenly. Sprinkle each with 1/2 teaspoon of the remaining sugar, and bake until the topping is browned and crisp, 12 to 15 minutes. Let cool slightly, top with ice cream and serve.
APPLE CRISP - PERFECT AND EASY
I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
