1 cup apple juice
1/2 cup canola oil
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
3 tablespoons lemon juice
2 tablespoons minced fresh parsley
3 garlic cloves, minced
6 boneless skinless chicken breast halves (6 ounces each)
4 large carrots
2 medium zucchini
2 medium yellow summer squash

Steps:

  • In a small bowl, whisk the first seven ingredients until blended. Place 1 cup marinade and chicken in a large resealable plastic bag; seal bag and turn to coat. Refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Cut carrots, zucchini and squash lengthwise into quarters; cut crosswise into 2-in. pieces. Toss with 1/2 cup reserved marinade., Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until a thermometer reads 165°, basting frequently with remaining marinade during the last 5 minutes. Keep warm., Transfer vegetables to a grill wok or basket; place on grill rack. Grill, covered, over medium heat 10-12 minutes or until crisp-tender, stirring frequently. Serve with chicken.

½ cup apple jelly
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon ground cinnamon
½ teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
  • Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

2 cups white flour
4 chicken breasts, cubed
2 onions, thinly sliced
1 1/2 cups apple juice
3 teaspoons orange rind
10 cloves garlic, peeled
salt, pepper and mustard powder,to taste
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried ginger
oil (for frying)

Steps:

  • Place the salt, pepper and mustard powder in a plastic bag with the flour.
  • Shake the chicken in the bag until it is well coated with the seasoned flour.
  • Heat the oil in a heavy saucepan and saute the chicken on all sides.
  • Remove and drain.
  • Saute the onion.
  • Add the apple juice and garlic.
  • Add the rest of the seasonings, orange peel and chicken.
  • Pour into an ovenproof dish and cook in a medium oven (180 degrees Celsius) for about 45 minutes.

2 tablespoons butter
1 large onion, sliced
salt, plus more to taste
4 teaspoons white sugar
5 medium apples - peeled, cored, and cut into 1/4-inch slices
1 pound Yukon Gold potatoes, cut into 1/4-inch slices
2 tablespoons olive oil
6 bone-in, skin on chicken thighs
2 tablespoons chopped fresh rosemary
ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.
  • Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.
  • Layer apples, potatoes, and sauteed onion slices in the bottom part of the broiler pan. Cover with the part top of the broiler pan.
  • Drizzle olive oil over chicken thighs. Sprinkle with fresh rosemary, salt, and pepper. Rub olive oil and spices thoroughly all over each thigh and place on the top part of the broiler pan.
  • Roast in the preheated oven until juices run clear and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 1 hour. Serve apples, potatoes, and onion alongside chicken thighs.

1 teaspoon salt
3/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1 roasting chicken (6 to 7 pounds)
1 can (11-1/2 ounces) unsweetened apple juice
1/2 cup apple butter
1/4 cup barbecue sauce

Steps:

  • Combine the salt, garlic powder, pepper and cayenne; sprinkle over chicken., Prepare grill for indirect heat, using a drip pan. Pour half of the apple juice into another container and save for another use. With a can opener, poke additional holes in the top of the can. Holding the chicken with legs pointed down, lower chicken over the can so it fills the body cavity. Place chicken on grill rack over drip pan. , Grill, covered, over indirect medium heat for 1-1/2-2 hours or until a thermometer reads 180°. Combine apple butter and barbecue sauce; baste chicken occasionally during the last 30 minutes. Remove chicken from grill; cover and let stand for 10 minutes. Remove chicken from can before carving.

1/4 cup white wine vinegar
1/4 cup olive oil

12 ounces harvest pumpkin ale (Harvest Moon)
1/2 cup honey or 1/2 cup maple syrup
2 tablespoons vegetable oil
2 tablespoons soy sauce or 2 tablespoons tamari soy sauce
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ginger
1 teaspoon cumin
1 teaspoon curry powder
1/2 teaspoon mango powder (optional) or 1/2 teaspoon amchur (optional)
1 small onion, minced
6 garlic cloves, minced
1/4 cup sriracha sauce
4 boneless chicken breasts (breasts scored) or 2 -3 lbs chicken wings
14 ounces pumpkin puree
3/4 cup apple cider
3/4 cup sugar
1/2 teaspoon ground curry powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon cardamom
1 pinch chili pepper flakes (optional)
1 tablespoon apple liqueur (Korn)

Steps:

  • Marinade:.
  • Mix all the marinade ingredients together.
  • Pour half of the marinade over the chicken. Place the chicken in the refrigerator overnight turning often to ensure all sides get coated and penetrates the meat.
  • Heat the other half of the marinade and reduce to 1 cup. If more heat is desired add 1 tablespoon sriracha sauce. To be used to glaze the chicken. Can be prepped the day.
  • Remove from marinade and let drip away removing excess marinade.
  • Whisk together pumpkin puree, apple juice, sugar, cloves, ginger, cinnamon, cardamom and optional pepper flakes in a saucepan until smooth. Bring to a boil, then reduce heat to medium-low, and simmer until the mixture has reached the consistency of applesauce. About 30-60 minutes. Depending if you use fresh or canned pumpkin. Add liquor off the fire stir, cover and set aside. Can be prepared the day before good chilled or warm.
  • Heat grill and oil grates.
  • Grill chicken legs until well browned on all sides, turning once, 30 to 40 minutes. Glaze the chicken the last 5 minutes with the reduced marinade.
  • Test:.meat near thigh bones should no longer be pink when tested with the tip of a knife.
  • Boneless chicken breasts will cook quicker so turn after 5-7 minutes glazes the flip after 5-7 minutes and glaze.
  • Wings over medium flame. You don't want too high of a temperature. You will also need to turn the wings frequently to avoid burning. It will mean standing by the grill, but you can cook a lot of chicken wings in about 15 to 20 minutes. Just before removing brush glaze over wings.
  • Serve with warmed Autumn Pumpkin Sauce for dipping.
  • FYI.
  • All grills are different temperatures.
  • Take advantage of indirect heat!
  • If the chicken browns quickly finish over Brown over direct then move to indirect heat.indirect heat.
  • All grills have hot spots so watch and be sure to move the chicken to spots on the grill so not to burn and completely cook the chicken.

2 cups sugar
1 cup water
1/3 cup red cinnamon candies (i.e., Red Hots, etc.)

Steps:

  • Leaving peel on, cut core out of each apple, then slice into 1/2-inch rings horizontally.
  • Combine sugar, water, and candies in medium saucepan. Heat to boil, melting candies, then reduce to simmer. Add enough food coloring to make the liquid a nice red color.
  • Add apples to syrup, and cook until tender but not mushy. You should be able to pick them out with a fork when they're done.
