No-Bake Apple Cheesecakes image

Cheesecake and spiced apples are the perfect combination in these delicious, elegant desserts. Despite the long list of ingredients and lengthy directions, these are actually quite simple to make and assemble. They're a perfect dessert choice for an intimate gathering, but this recipe also easily scales for larger get-togethers.

1 tablespoon unsalted butter
1 medium apple, cut into small slices
1/4 cup firmly packed brown sugar
1/2 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
2 & 1/2 ounces (about 2/3 cup) graham cracker crumbs
2 tablespoons unsalted butter, melted
8 ounces cream cheese, at room temperature
3/4 cup granulated sugar
1 tablespoon heavy cream
1 teaspoon vanilla extract
1/4 cup heavy cream
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon

Steps:

  • _For the apples:Place butter in small skillet and melt over medium heat.Add apples, brown sugar, flour and cinnamon and stir to combine. Cook over medium-high heat, stirring frequently, until the mixture is bubbly. Then reduce heat to medium and continue cooking for about 5 minutes until mixture has thickened. Set aside to cool._For the graham cracker crust:Combine graham cracker crumbs and butter in a small bowl. Set aside._For the cheesecake:Using electric mixer on medium speed, beat cream cheese, sugar, cream and vanilla until thoroughly combined and smooth._For the cinnamon whipped cream:Place cream in cold mixing bowl. Using electric mixer with whisk attachment, beat at medium-high speed until cream begins to thicken.Sprinkle sugar and cinnamon over cream and continue beating until soft peaks form._To assemble the cheesecakes:Place 2 to 3 tablespoons of cheesecake in bottom of four 8-ounce glasses, spreading evenly. For tapered glasses like the ones pictured here, you may want to use a bit less cheesecake for bottom layer.Top each with about 2 tablespoons graham cracker mixture. You will have some of this mixture left over for garnish.Divide remaining cheesecake among glasses and spread gently on top of graham crackers.Place apples on top of cheesecake, dividing evenly among the glasses.Place dollop of whipped cream on top of each dessert and garnish with the remaining graham cracker mixture. Add whole graham crackers as an additional garnish, if you like.Serve immediately, or chill for at least 2 hours for a firmer cheesecake.

2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 Tbsp. sugar
1 tsp. ground cinnamon
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3 cups thawed COOL WHIP Whipped Topping
1-1/3 cups sugar
1/2 tsp. ground cinnamon
1/4 cup unsalted butter
4 Gala apples, peeled, cored and chopped
1/2 cup water
2 tsp. cornstarch
1/2 cup packed light brown sugar
2 tsp. ground cinnamon
1/2 tsp. vanilla

Steps:

  • Graham Cracker Crust:
  • Heat oven to 375°F.
  • In a medium mixing bowl, combine graham cracker crumbs, butter, sugar and cinnamon.
  • Pour crumb mixture into 9-inch springform pan; press onto bottom and up side of pan.
  • Bake 12 min. or until browned. Allow crust to cool.
  • Cheesecake Filling:
  • In a large mixing bowl, whip cream cheese and COOL WHIP in large bowl on medium speed of electric mixer.
  • Add sugar, 1/3 cup at a time, mixing well after each addition. Then, add cinnamon and continue to mix on medium speed until combined.
  • Pour filling into prepared crust in springform pan.
  • Refrigerate for at least 3-1/2 hours to set. (Cheesecake can also be refrigerated overnight to set.)
  • Apple Pie Topping:
  • In a large skillet, melt butter over medium heat.
  • Add chopped apples; cook for 6 to 8 min. or until tender, stirring often.
  • In a small bowl, combine water and cornstarch, then pour over apples.
  • Stir in brown sugar and cinnamon. Bring to a slight boil, stirring frequently.
  • Remove from heat. Stir in vanilla.
  • Allow to cool for 5 min. Pour over prepared cheesecake.
