1/2 pound bulk pork sausage
1 large egg, room temperature
2/3 cup whole milk
2 tablespoons canola oil
1 cup pancake mix
1/2 teaspoon ground cinnamon
1/2 cup shredded peeled apple
CIDER SYRUP:
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon pumpkin pie spice
1 cup apple cider
1 tablespoon lemon juice
2 tablespoons butter

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain and set aside. In a large bowl, beat the egg, milk and oil. Stir in pancake mix and cinnamon just until moistened. Fold in apple and sausage. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles from on top. Cook until second side is golden brown., For syrup, combine the sugar, cornstarch and pumpkin pie spice in a saucepan. Gradually stir in cider and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter until melted. Serve warm with the pancakes.

1/2 cup packed brown sugar
1/3 cup butter or margarine
1/2 cup maple-flavored syrup
1 lb bulk pork sausage
1 cup Original Bisquick™ mix
1/4 cup packed brown sugar
1/2 cup milk
1 egg
Additional maple-flavored syrup, if desired

Steps:

  • Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13x9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.
  • In 10-inch skillet, cook sausage over medium heat, stirring occasionally, until no longer pink; drain. Sprinkle sausage evenly over apple-syrup mixture.
  • In small bowl, stir remaining ingredients except additional syrup until blended. Carefully pour over sausage.
  • Bake 30 to 35 minutes or until top springs back when touched in center. Cut into 3-inch squares; turn each square upside down onto plate. Serve immediately with additional syrup.

1 teaspoon baking powder
1/2 teaspoon baking soda
Salt
1 1/3 cups low-fat buttermilk
1 large egg, lightly beaten
3 tablespoons maple syrup, plus more for serving, optional
1/2 cup diced apples
3/4 cup Jimmy Dean(R) Hearty Original Sausage Crumbles
2 tablespoons butter, for greasing griddle
Cinnamon Walnut Butter, recipe follows
1 stick unsalted butter, softened
2 tablespoons toasted walnuts, finely chopped
2 tablespoons maple syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
Pinch of salt

Steps:

  • In a small bowl, combine the flour, cornmeal, baking powder, baking soda, and 1/2 teaspoon salt.
  • In a large measuring cup combine the buttermilk, egg, and 3 tablespoons maple syrup and stir with a fork. Stir into the flour mixture with a spatula until just combined. Mix in the diced apple and sausage crumbles.
  • Heat a pancake griddle over medium-low heat and then grease with a small amount of butter. Drop ladles of batter to form 4-inch pancakes, cooking pancakes for 2 to 3 minutes before flipping, or until the batter puffs up and bubbles form. Flip pancakes and continue to cook for an additional 1 to 2 minutes, until cooked through and nicely browned. Top with Cinnamon Walnut Butter and additional maple syrup, if desired.
  • Combine the butter, maple syrup, cinnamon, vanilla, and salt in a bowl and mix until well blended. Serve with pancakes.

1 pound ground pork
1/4 cup Thai chili garlic sauce
1/4 cup dark brown sugar
2 cups self-rising flour
3 tablespoons dark brown sugar
1 1/2 cups milk
1/3 cup vegetable oil
3 eggs
2 tablespoons red food dye
2 tablespoons pure apple extract
1 teaspoon vanilla extract
4 small red apples
Maple syrup, for serving

Steps:

  • For the sausage: Begin by browning the sausage in a pan over medium heat. Stir in the Thai chili garlic sauce and brown sugar and cook for 10 to 15 more minutes. Remove from the pan and set on paper towels to drain. For the pancakes: Mix the flour and sugar together. Whisk in the milk, oil and eggs. Add the food dye and extracts and mix well.
  • Core the apples and remove any seeds, then slice in round slices.
  • Heat a griddle to 300 degrees F. Drop batter by spoonfuls onto the griddle. When bubbles begin to appear on top of the pancakes, add an apple slice to the top of each pancake, then flip. Cook until both the apple slice and the pancake have browned, an additional 1 to 2 minutes. Then remove, placing the pancakes apple-side up on wax paper to cool. Stack them this way (upside down!) to display the fresh apple. Repeat with remaining ingredients.
  • Place a stack of pancakes on a plate and spoon warm crumbled sausage over the top, then drizzle with maple syrup and serve.

Something different to do with sausage. Makes a very tasty sausage patty with very little effort and simple ingredients. This recipe is from my mother. She made them when I was growing up and I have no idea where the recipe came from.

1/2 cup apple, finely chopped
1 cup breadcrumbs
1/2 cup celery, finely chopped
2 tablespoons brown sugar
1 lb bulk pork sausage

Steps:

  • Mix all ingredients and form into patties.
  • Bake, covered, for 30 minutes at 350° F.
  • Uncover and bake for 10 minutes longer.
  • Note: If desired, you can slice some additional apples into 1/4 inch thick rings, sprinkle them with a little sugar and bake them at the same time as the patties, covered.
  • Serve each patty on an apple ring.

These pancakes are a novel way of using your surplus cooking apples. Get the best pork sausages you can find BUT don't be tempted to prick them while cooking or you will lose the lovely juices!

8 pork sausages
175 g plain flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
40 g unsalted butter
1 tablespoon caster sugar
2 eggs, beaten
1 large cooking apple, peeled, cored and finely chopped
300 ml milk
sunflower oil, for cooking

Steps:

  • Preheat a griddle pan over a medium heat until very hot.
  • Add the sausages and cook for 10-15 minutes until cooked through and lightly charred.
  • Meanwhile to make the pancakes heat a large pan.
  • Sift the flour, baking powder, and cinnamon into a bowl.
  • In a separate bowl, using a wooden spoon, cream together 15g / ½ oz of the butter and the sugar until light and fluffy.
  • Beat in the eggs, adding a little flour to stop the mixture from curdling, then fold in the rest of the flour mixture and stir in the chopped apple.
  • Gradually add the milk, stirring until smooth after each addition until you have a batter.
  • Add a little of the oil and remaining butter to the preheated pan, once melted ladle in spoonfuls of the pancake batter, allowing them to spread out max 3 inches diameter.
  • Reduce heat and cook for 2-3 minutes until small bubbles appear on the surface.
  • Turn pancakes and cook for another 1-2 minutes until golden, making 12 pancakes.
  • Arrange three pancakes on each plate and serve with the sausages.
