APPLE STREUSEL MUFFINS

- Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

Steps:
- In medium bowl sift together flour, baking powder, apple pie spice, salt and 1/2 cup of brown sugar to ensure it is well blended.
- Using a stand (or hand) mixer whisk together eggs, milk and oil until fully mixed. Stir in grated apples using paddle attachment.
- Add dry ingredients to the wet mixture and stir until just combined - do not overmix your batter!
- In small bowl combine peanut butter with oats and remaining 1/2 cup of brown sugar until it becomes a coarse crumble.
- Spoon half of the muffin batter into 12 muffin cups lined with large paper liners until they are half full.
- Top each with about 1 tbsp of streusel and then cover with remaining batter.
- Cover the tops of the muffins with remainder of streusel and gently press to keep it from falling off while baking.
- Bake for 30 minutes, or until toothpick comes out clean. Allow to cool completely before enjoying!

My son had the idea for these one fall Saturday morning after we had gone apple picking. They are delicious! Great for school lunches, too.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix flours, baking powder, baking soda, and salt in a large bowl.
- Melt butter in a small saucepan. Stir in peanut butter and brown sugar. Remove from heat and add milk, egg, and vanilla extract. Add butter mixture to the flour mixture, mixing until just blended. Add more milk, 1 tablespoon at a time, if the batter seems dry.
- Add apple and peanut butter chips, stirring gently to distribute. Divide the batter evenly among the muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

- In a small bowl, combine the first eight ingredients. Combine egg, milk and oil; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups with a rounded tablespoon of batter. Top each with a rounded teaspoon of apple butter and remaining batter. - Preheat oven to 400 degrees.
- Line 30 mini-muffin pan cups or 12 medium muffin cups with paper liners, or spray bottoms only with cooking spray.
- In medium bowl, combine flour, wheat germ, brown sugar, baking powder and salt; mix well.
- In small bowl, combine apple butter, milk, margarine and egg whites until well blended.
- Add to flour mixture, stirring just until dry ingredients are moistened.
- Fill muffin cups almost full with batter.
- Prepare streusel topping (see below); sprinkle evenly over batter, patting gently.
- Bake mini-muffins 12 to 15 minutes, and larger muffins 20 to 22 minutes, or until wooden toothpick inserted in center comes out clean.
- Serve warm.
- STREUSEL TOPPING: in small bowl, combine all ingredients; mix until well blended.
- Notes: To freeze, wrap muffins securely in foil or place in freezer bag.
- Seal, label and freeze.
- To reheat muffins, unwrap; microwave on high (100% power) about 30 seconds per muffin.
