8 ounces day-old cinnamon rolls, cubed
1/2 cup pecans, chopped
1 cup apple, peeled and sliced
2 eggs
2 cups milk
1/2 teaspoon vanilla
1/2 cup sugar (optional)
maple syrup

Steps:

  • Coat an 8 or 9-inch cake pan with nonstick spray. Place the bread cubes in the pan and toss in the pecans and apples.
  • Blend the eggs, milk and sugar (optional) in a medium bowl. Add vanilla.
  • Pour the mixture over the bread and let stand for about 20 minutes.
  • Bake in a 350°F oven for about 45 minutes, until golden brown. Cut into squares to serve.
  • Serve with warm maple syrup.

3 eggs
8 slices raisin bread, diced
2 cups half-and-half or 2 cups milk
2 medium apples, green
1/4 cup Bourbon or 1/4 cup brandy
1 cup sugar
1/4 cup butter or 1/4 cup margarine, melted
1 teaspoon cinnamon
to taste vanilla ice cream (optional)
1/2 teaspoon nutmeg

Steps:

  • Preheat oven to 350.
  • Spread pecans in a shallow baking pan and bake until golden, about 8-10 minutes, stirring occasionally.
  • Meanwhile, place bread cubes in a greased 3 qt. or larger slow cooker.
  • Peel, core and thinly slice the apples.
  • Mix lightly together the sugar, cinnamon and nutmeg, add eggs and mix well.
  • Blend in half and half or milk and then stir in bourbon or brandy.
  • Lightly mix pecans with bread and apples.
  • Pour egg mixture over bread. Drizzle with butter.
  • Cover and cook on low until apples are tender when pierced and custard is set; about 3 1/2 to 4 1/2 hours.
  • Let pudding stand, covered, for about 15 minutes. Serve warm with ice cream, if desired.

85g xylitol (we used Total Sweet)
125g self-raising flour
25g oats
1 tsp ground cinnamon
1 heaped tsp baking powder
2 large eggs
3 tbsp milk
1 Bramley apple (about 280g), peeled, cored, a quarter grated, the rest diced
25g pecans , roughly chopped or broken
Greek yogurt or cream, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4 and lightly grease a 1-litre (20 x 16cm) pie or oven dish. Tip the butter and xylitol into a bowl with the flour, oats, cinnamon and baking powder. Break in the eggs, add the milk, then beat with an electric hand whisk until evenly mixed and smooth. Stir in all the apple, then scrape into the dish, level the top and scatter with the pecans.
  • Bake for 35-45 mins until risen and golden and a skewer inserted into the centre comes out clean. Serve with Greek yogurt or cream.

1 loaf day-old French baguette
5 eggs
3 ½ cups whole milk
1 cup sugar
1 tablespoon vanilla extract
½ cup butter
1 ½ cups brown sugar
1 ½ cups shelled pecan halves

Steps:

  • Cut the bread into cubes and let sit out about an hour to dry out a bit. Using day-old bread is perfect; the drier the bread cubes, the more yumminess they soak up!
  • Preheat oven to 350 degrees F.
  • In a medium bowl, mix the eggs until they are combined. Add the milk, sugar, and vanilla and stir until combined.
  • Place the bread cubes in a baking pan and pour the milk and egg mixture over them.
  • Melt butter in a small microwave-proof bowl. Stir in the brown sugar until dissolved. Stir in the pecans.
  • Pour this mixture over the bread and egg mixture, and gently fold. Don't mix it in thoroughly, just fold so the yummy pecan mixture forms into clumps throughout the bread pudding.
  • Bake for 45 to 55 minutes, or until the top is slightly brown. The center will still be a little jiggly.
  • Allow to cool at least 20 minutes before serving. The egg mixture will continue to cook, and the bread will soak up more yumminess.
