EASY APPLE PIE COOKIE CUPS
These adorable cookie cups are easy as pie-actually, they're easier! Betty Crocker™ sugar cookie mix and spiced pie filling provide a shortcut start to these irresistible apple treats that are perfect for fall.

- Heat oven to 375°F. Grease 24 regular-size muffin cups with shortening; lightly flour.
- In large bowl, mix cookie mix, flour, butter and egg with spoon until soft dough forms. Measure 2 cups of the dough, and set aside remaining dough. Using the 2 cups of dough, firmly press a heaping tablespoon of dough into bottom of each muffin cup.
- Chop apple pie filling into small pieces; place a generous 2 teaspoons pie filling in center of each cookie cup. On floured surface, roll remaining dough 1/8 inch thick. Using small 1 to 1 1/2-inch cookie cutter, cut small shapes of your choice. If necessary, press any leftover scraps together, and reroll on floured surface to make total of 24 cutouts. Place one cutout on top of apple pie filling in each cookie cup.
- In small bowl, mix sugar and cinnamon; sprinkle on tops of cutouts. Bake 14 to 17 minutes or until edges of cookies are deep golden brown. Cool 10 minutes in pan on cooling rack. Run metal spatula around edge of each cookie cup to loosen; cool in pan 20 minutes. Remove cookies from muffin cups to cooling rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, cream cheese, and vanilla extract together in a large bowl until smooth. Add flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon; mix until dough comes together.
- Roll dough into a 1/4-inch thick round on a floured work surface. Cut out 48 circles with a cookie cutter.
- Top 24 dough circles with a teaspoon of apple pie filling. Cover with remaining 24 dough circles. Crimp edges with a fork to seal. Arrange cookies on lined baking sheets.
- Bake in the preheated oven until cookies are golden brown, 23 to 29 minutes. Cool for 5 minutes.
- Mix 2 tablespoons sugar and 1 teaspoon cinnamon together in a shallow bowl. Roll warm cookies in sugar and cinnamon mixture until coated. Transfer to a wire rack to cool, about 10 minutes.

Combing two classics, these apple pie sugar cookie cups are the perfect little fall treat! A sugar cookie base, filled with applesauce or pie filling, baked and topped with whipped cream.

- Preheat oven to 350.
- Cut cookie dough into even slices. Roll each slice into a ball.
- Place each ball into the muffin tin and lightly press down forming a "well".
- Prebake for 5 minutes.
- Remove muffin tin from oven and fill each cup with apple filling or sauce.
- Continue baking until sugar cookie is golden and set up, about 10 minutes.
- Allow to cool for a 5-10 minutes.
- Top with whipped cream, serve!
APPLE PIE COOKIE CUPS
Apple pie cookie cups are the most adorable way to enjoy apple pie. They have a soft & chewy oatmeal cookie crust that's filled with baked cinnamon apples for the perfect apple treat!

- Preheat the oven to 325F degrees. Grease 2 muffin trays with non-stick cookie spray.
- In a large bowl beat the butter and sugars together until fluffy (about 2 minutes).
- Beat in the eggs and vanilla extract.
- With the mixer on low, beat in the flour, cinnamon, baking powder and salt. Then mix in the oats.
- Spoon about 3 tablespoons of batter into the bottom of each muffin cavity. Press the dough down into the bottom and up along the sides to form a little bowl shape. If the dough is too sticky to work with, place it in the fridge for 15-20 minutes.
- Bake the cookie cups in the oven for 15-18 minutes or until they're just starting to get golden around the edges. If they puff up in the middle that's ok.
- Remove the pan from the oven. Lightly grease a spoon or the bottom of a shot glass. Press it down into the middle of each cookie cup to form a little bowl shape again. Trace around the edges of each cup with a thin sharp knife.
- Cool the cookie cups for about 20 minutes, then pry them out of the muffin tin using a thin knife.
- In a large bowl toss the chopped apples with the sugars, cinnamon, nutmeg and cornstarch.
- Melt the butter in large saucepan or skillet over medium heat.
- Add in the apple mixture and gently stir. As the apples begin to bake, pour in the water. Cook for 5-10 minutes or until the apples are starting to soften and the mixture caramelizes.
- Spoon the apple pie filling into each cookie cup.
- Serve warm or at room temperature. Cookie cups can be warmed up int he microwave for about 20 seconds before enjoying.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves; cook and stir until apples have softened and sugars have melted, about 5 minutes. I really enjoy making a homemade apple pie, but it takes some time and I wanted to come up with a version that was a bit less labor intensive. My thought was to deconstruct the traditional apple pie and make something whimsical and less formal than what we're used to eating.

- Preheat the oven to 375 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
- Place the butter in a large saute pan over medium heat until fully melted. Add the apples, brown sugar, cinnamon, vanilla and salt and stir occasionally until the apples are fork tender, 10 to 12 minutes. Serve the apple pie filling warm or remove from the heat and allow to cool for about 15 minutes.
- Meanwhile, roll out the pie dough to about 1/4-inch thick. Using a cookie cutter (preferably an apple shape, but any shape will work), cut out the pastry and place onto the prepared baking sheet. Brush the pastry with the beaten egg.
- Bake the pastry until golden brown, 10 to 12 minutes. Remove and let cool for 5 minutes.
- Divide the apple mixture into 8 bowls or glasses, top with a scoop of vanilla ice cream and place 1 pastry apple on top.

- Cool 1 minute before removing to cooling rack.

- Heat oven to 425°F.
- Unroll 1 pie crust on work surface. With 3 1/2-inch round cutter, cut 6 rounds from crust. Repeat with second pie crust. Press circles into 12 ungreased regular-size muffin cups. Use small (1 1/2- to 2-inch) cookie cutter to cut 12 cutouts from remaining dough, rerolling scraps as needed.
- In small bowl, mix apple pie filling and 1/2 teaspoon cinnamon until well blended. Divide mixture evenly among crust-lined cups.
- Top each muffin cup with 1 cutout. In small bowl, mix sugar and 1/8 teaspoon cinnamon until blended. Sprinkle on tops of cutouts.
- Bake 21 to 24 minutes or until golden brown and mixture is bubbly. Cool completely in pan, about 1 hour. With small knife, loosen edges; remove from pan to cooling rack. Store in airtight container at room temperature.
