APPLE MUFFINS W/ MAPLE GLAZE
Apple Muffins with Maple Glaze is a copycat of the old Costco muffins. Moist, fluffy, apple and spice filled muffins topped with streusel and drizzled with a maple glaze. This tasty apple muffin recipe is perfect for your brunch table!

- Preheat oven to 400F/205C and heavily grease a 12 cup standard muffin pan.
- In a medium bowl mix together flour, quick oats, sugars, baking powder, cinnamon, cloves, allspice, nutmeg, and salt. Set aside.
- In a large bowl mix together eggs, sour cream, milk, oil, and vanilla. Slowly mix in dry ingredients, just until no flour streaks remain. Fold in apple chunks.
- To make streusel topping in a medium bowl mix flour, brown sugar, butter, oats, a pinch of cinnamon, nutmeg and cloves. Use clean fingers to rub the butter in to the dry streusel ingredients. You want clumps of streusel.
- Fill muffin pans all the way to the top with batter. Sprinkle streusel on top. Bake for 5 minutes then reduce the temperature to 350F/180C and bake for an addition 13- 15 minutes. Until a toothpick inserted in comes out clean. Place on wire rack to cool.
- In a small bowl mix together powdered sugar, maple syrup, maple extract and hot water. If too thick add a teaspoon of water at a time to reach desired consistency. Drizzle on top of muffins. Best eaten on the day they are made, but leftovers can be stored in an air-tight container for up to 3 days.
MAPLE GLAZED APPLE CRISP COOKIES
A scratch-made cookie filled with fresh apple chunks and topped with brown sugar cinnamon streusel, drizzle with maple glaze. All the flavors of apple crisp in a chewy cookie!

- In the bowl of a stand mixer (or you can use a handheld), cream together butter and sugar until light and fluffy. Add the eggs and vanilla and beat until smooth.
- Add the flour, salt, and baking soda and beat just until combined.
- Dry chopped apples on a paper towel to remove excess moisture. Add apples and mix until just combined.
- Cover with plastic wrap and refrigerate 1 hour (I find the juices from the apples makes the dough a bit stickier than normal - the chilling helps with this).

APPLE COOKIES RECIPE
Soft cookies with bits of apple and loads of fall flavor. Topped with a vanilla maple glaze.

- Preheat oven to 350 degrees F.
- In a large bowl, cream the butter and brown sugar together at medium-high speed with an electric mixer until light and fluffy.
- Add vanilla and egg and mix until combined.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and nutmeg.
- Add a third of the dry mixture to the batter. Mix until just combined at medium-low speed. Then add half the maple syrup followed by another third of flour. Finally, add the remaining maple syrup and then the last third of flour until combined. Do not over mix!
- Fold in the grated apples until they are evenly distributed.
- Prepare 2 cookie sheets lined with parchment paper (or bake one batch at a time).
- Use a medium cookie scoop to drop batter onto the pan 2 inches apart on the cookie sheet. 12 cookies per sheet.
- Bake for 12-14 minutes until lightly golden. Leave on the cookie sheet for 5 minutes to set and then transfer to a cooling rack to cool completely.
- While the cookies are cooling, prepare the cookie glaze. In a small deep bowl, whisk together the confectioners sugar, whipping cream, melted butter, and vanilla until smooth. The glaze will be slightly thick. Transfer to a ziplock bag and cut out a small corner to pipe on the cookies.
- Pipe cookies with glaze or spread with a butter knife and enjoy!

Steps:
- Preheat your oven to 375F and spray 8 cups in a muffin pan with nonstick spray. Taking each crescent roll, press into the cup shape of the muffin cups and make sure that you get the dough up the sides as well. It's important to get all of the edges sealed in there!
- Peel and chop the apples into small pieces and mix with the brown sugar, cinnamon, maple syrup, flour and sea salt.
- Spoon equal amounts into the cups.
- Bake for 15 minutes until the edges are browned.
- Serve hot with a little more maple syrup drizzled on top.
