APPLE SLOW COOKED BEEF RIBS
This is a stove top cooking process for boneless ribs that I was forced to do when we had a propane shortage in our neighborhood one summer. This recipe is also great for slow cookers. Adjust water to fit into slow cooker.

SLOW-COOKED BEEF SHORT RIBS
When tart apple and sweet carrot cook down slowly with smoked paprika they make a savory jam for these fall-off-the-bone tender ribs.

Steps:
- Put the apples and carrots in a large slow cooker; top with the onion wedges and then the beef.
- Combine the applesauce, vinegar, garlic, Worcestershire sauce, paprika, mustard, and salt. Pour the mixture over the beef. Cover the slow cooker and cook on low for 8 to 10 hours, or high for 4 to 5 hours.
- Transfer the meat, apples, and vegetables to a serving platter. Pour the juices into a saucepan, bring to a boil over high heat, reduce the heat, and simmer for 5 minutes.
- Combine the cornstarch with the apple cider, stirring until the mixture is smooth. Pour into the simmering juices, bring to a boil, and cook for 1 minute or until the sauce becomes thick and clear. Pour the sauce over the meat and serve.
SLOW-COOKER SMOKY APPLE BUTTER RIBS

- Sprinkle ribs with salt and pepper. In 3 1/2- to 4-quart slow cooker, place ribs. Cover with onion slices. In small bowl, mix remaining ingredients; pour over ribs and onion.
- Cover; cook on Low heat setting 8 to 10 hours.
- Remove ribs from cooker; place on serving platter. Cover to keep warm.
- Pour juices from cooker through strainer into 1-quart saucepan. Heat to boiling over medium-high heat; reduce heat to medium. Cook about 5 minutes or until sauce has slightly thickened. Serve sauce with ribs.

- Combine bbq sauce, brown sugar, cider vinegar, oregano, Worcestershire sauce, cayenne pepper, and chili powder in a small bowl.
- Salt and pepper the ribs. Place ribs in slow cooker, and cover in sauce.
- Cook low and slow for eight hours or high for four hours.
- After the ribs are done, spoon the bbq sauce in the slow cooker over the ribs before removing.
- Cut the ribs, serve with bbq sauce.
- Enjoy!
