- In a large microwave-safe bowl, combine cereals and walnuts. In a small microwave-safe bowl, combine the brown sugar, butter, cinnamon, ginger and nutmeg. Microwave, uncovered, on high for 2 minutes, stirring after each minute. Pour over cereal mixture and toss to coat., Cook, uncovered, on high for 4 minutes, stirring every 2 minutes. Spread onto waxed paper to cool. Add apples. In a small microwave-safe bowl, melt baking chips and shortening; stir until smooth. Pour over mixture. Cool. Break into pieces; store in an airtight container.

- Preheat the oven to 300 degrees F. Line 2 baking sheets with parchment paper.
- Mix together the cinnamon and rice cereal squares, dried apples, mini vanilla cookie wafers and almonds in a large bowl.
- Put the butter in a medium saucepan over medium-high heat and bring to a simmer. Stir in the brown sugar. Bring to a boil and cook for 1 minute. Remove from the heat and stir in the apple pie spice, salt and vanilla. Pour this over the cereal mixture and stir to coat completely. Spread in an even layer on the prepared baking sheets.
- Bake, stirring with a spatula after 15 minutes, until slightly golden, about 30 minutes total. Let cool, then transfer to a serving bowl.

- In a large greased roasting pan, combine popcorn, cereals and peanuts: set aside. In a large saucepan, combine brown sugar, butter and corn syrup: bring to a rolling boil over medium-low heat, stirring constantly, Cook, without stirring, until mixture turns a medium amber color, about 8 minutes.
- Remove from the heat; quickly stir in vanilla and baking soda until mixture is light and foamy. Immediately pour over cereal mixture; stir until evenly coated.
- Bake at 250 for about 45 minutes, stirring every 15 minutes. Spread mixture onto waxed paper-lined baking sheets. Cool completely. Store in airtight containers.
