OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

- Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
- Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
- Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
- Serve, spooning some of the sweet sauces from the pan over the top.

- Heat the oven to 425°F. In a large bowl, mix the flour and salt. Cut in the butter, using a pastry blender or fork, until particles are the size of small peas. Sprinkle with the cold water, 1 tablespoon at a time, mixing well with fork until all flour is moistened. Gather the dough together, and press it into a 6x4-inch rectangle.
- Lightly sprinkle flour over a cutting board or countertop. Cut off 1/3 of the dough with a knife; set aside. On the floured surface, place 2/3 of the dough. Flatten dough evenly, using hands or a rolling pin, into a 14-inch square; cut into 4 squares. Flatten the remaining 1/3 of the dough into a 14x7-inch rectangle; cut into 2 squares. You will have 6 squares of dough.
- Remove the stem end from each apple. Place the apple on a cutting board. Using a paring knife, cut around the core by pushing the knife straight down to the bottom of the apple and pull up. Move the knife and make the next cut. Repeat until you have cut around the apple core. Push the core from the apple. (Or remove the cores with an apple corer.) Peel the apples with a paring knife.
- Place 1 apple on the center of each square of dough. In a small bowl, mix the raisins and nuts. Fill the center of each apple with raisin mixture. Moisten the corners of each square with small amount of water; bring 2 opposite corners of dough up over apple and press corners together. Fold in sides of remaining corners; bring corners up over apple and press together. Place dumplings in a 13x9-inch (3-quart) glass baking dish.
- In a 2-quart saucepan, heat the brown sugar and 1 1/3 cups water to boiling over high heat, stirring frequently. Carefully pour the sugar syrup around the dumplings.
- Bake about 40 minutes, spooning syrup over apples 2 or 3 times, until crust is browned and apples are tender when pierced with a fork.
- Serve warm or cooled with syrup from pan.

- Combine the sliced apples, water, riesling, sugar, cinnamon stick and lemon zest in a large soup pot.
- Bring to a boil over high heat, then reduce the heat to low and simmer, covered, till the apples are soft, about 15 minutes.
- Stir in the raspberry jam, bread crumbs and lemon juice and simmer till the apples are almost mushy, 10 minutes.
- Remove the soup from the heat and cool slightly.
- Place the soup in a food processor and pulse several times, but do not puree. Allow the soup to cool, then place in the refrigerator at least 2 hours.
- To make the dumplings, combine the grated apples, bread crumbs, calvados, sugar, cinnamon, lemon zest, and egg in a large bowl.

- Cut in butter until mixture resembles coarse crumbs.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
- Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.

- Unroll crescent rolls and separate at perforations.
- For each portion, fold and flatten the pastry with your fingers to form a 3 1/2 to 4 inch square.
- Sprinkle 1/2 tablespoon raisins in the center of the square. Cover with an apple quarter, cut side down.
- Bring edges of pastry up and seal seams together with your fingers.
- Place seam side down in a 7x11 inch (or 8 or 9 inch square) baking dish.
- Place water and butter in microwave in a 2-cup glass measuring cup. Microwave at maximum power for 1-2 minutes until butter melts and water is hot. (Microwaves vary; use your judgment about yours).
- Stir in sugar and vanilla and pour over and around dumplings in dish.
- Sprinkle cinnamon over top.

- Preheat oven to 400*F
- Spray a 9x13 casserole dish with oil. Set aside
- In a bowl, using a pastry blender, mix flour, salt, baking powder and butter until mixture is crumbly.
- Add milk ¼ cup at a time, mixing well with a rubber spatula to bind ingredients.
- Lightly / medium flour a work surface and place dough in the middle. Roll out dough into a 10 x 14 inch rectangle. Think cinnamon rolls.
- Grate apples and place on top of rolled out dough.
- Sprinkle apples with ½ teaspoon cinnamon and ½ cup white sugar.
- Gently roll up dough along the long end - like you would a cinnamon roll. Dough is more like a thick pie crust than a soft cinnamon roll dough. This makes it harder to roll, not to mention this bulky apple layer.
- Once dough is rolled up into a tight roll, cut like cinnamon rolls, cut in 1 ¼ inch slices, like cinnamon rolls.
- Place apple dumplings into a prepared casserole dish, filling the dish entirely. Don't overpack, allowing room for rolls to gently expand during cooking.
- In a small saucepan, bring 2 cups water, 2 cups brown sugar, ¼ cup butter and ¼ teaspoon cinnamon to a simmer.
- Pour over apple dumplings.
- Bake for 35 minutes.
- Remove and serve immediately by itself or with a scoop of vanilla ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.
- In medium saucepan, combine butter, sugar, and orange juice; bring to a boil. Remove from heat and stir in vanilla. Pour over rolls.
- Bake for 30 minutes, or until pastry is golden and apples are tender. Spoon sauce over rolls when serving.

These apple dumplings are a family favorite! Delicious individual desserts that are always pleasing. Serve with vanilla ice cream for an extra decadent treat.

- Whisk together flour, salt, and cinnamon for crust. Cut in shortening until very crumbly. Sprinkle enough water over the mixture to just hold the dry ingredients together; mix together and form into a ball. Wrap with waxed paper and chill in the refrigerator for 20 minutes.
- Roll dough on a lightly floured surface (1/2 batch at a time) to a 1/8-inch thickness. Cut into six 7-inch squares. Reserve any extra dough for decorative garnish, if desired.
- Place one apple in the center of each square of dough.
- Combine brown sugar, cinnamon, nutmeg, and cloves in a small bowl. Divide mixture evenly between the apple cores and dot the top of each apple with 1 teaspoon butter. Bring the opposite corners of each square together at the top of each apple, pressing gently to seal the seams. Transfer to a large baking dish, making sure the dumplings do not touch.
- Preheat the oven to 500 degrees F (260 degrees C).
- Combine water, sugar, corn syrup, butter, cinnamon, and nutmeg for syrup in a pan and bring to a boil. Allow to boil for 3 minutes. Pour syrup mixture over the top of all of the dumplings.
- Bake immediately in the preheated oven until the crust begins to turn light golden brown, 5 to 7 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake, occasionally spooning hot syrup from the bottom of the pan over the top of the dumplings, until apples are tender, 30 to 35 more minutes.
- Serve warm.
